GRILLED LAMB AND FETA BURGERS

Grilled Lamb and Feta Burgers image

Provided by Claire Robinson

Time 43m

Yield 4 to 6 servings

Number Of Ingredients 14

1 1/2 pounds ground lamb
2 cloves garlic, finely minced
1/2 pound feta cheese, crumbled
1/2 teaspoon ground allspice
1/3 cup fresh parsley leaves, coarsely chopped
Kosher salt and freshly cracked black pepper
4 to 6 rolls or buns
Easy Tzatziki, recipe follows
1 cup Greek whole milk yogurt
1 English cucumber, seeded, finely grated and drained
2 cloves garlic, finely minced
1 teaspoon lemon zest plus 1 tablespoon fresh lemon juice
2 tablespoons chopped fresh dill
Kosher salt and freshly cracked black pepper

Steps:

  • In a medium bowl, combine the lamb, garlic, feta, allspice, parsley, salt and pepper, making sure not to overwork the mixture. Form the lamb mixture into 4 to 6 patties.
  • Heat a grill pan over moderately-high heat and cook the lamb burgers until a nice crust forms, about 4 minutes. Turn the burgers over and let cook another 4 minutes. Let the burgers rest 10 minutes. Serve topped with Easy Tzatziki on a roll or bun.
  • In a medium bowl, whisk together the yogurt, cucumber, garlic, lemon zest, lemon juice and dill. Season with salt and pepper. Chill.
  • What Really Makes This Recipe Sing: Allspice is one of those secret weapons in savory foods. You can't put your finger on it, but you know it is there. It was named by the English, because they thought it contained cinnamon, nutmeg and cloves. Shh, it is also the secret ingredient in Cincinnati-style chili.
  • What to toss in if you have it: Feel free to add some chopped fresh mint to this as well. Having a cocktail party? BYOC and makes these into mini's. Grab one before you serve because they will disappear fast.

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 15

Handful walnut halves, about 3 to 4 tablespoons
3 tablespoons extra-virgin olive oil
1/2 small red onion, finely chopped
1/3 cup whole milk
2/3 cup feta crumbles
1 tablespoon freshly chopped marjoram or oregano, or 1 teaspoon dried
Few sprigs mint, leaves chopped
Salt and freshly ground black pepper
1 1/2 pounds ground lamb
1 teaspoon paprika or smoked paprika
A couple pinches ground cinnamon
1 clove garlic, crushed
2 bunches farm spinach leaves, stemmed, washed and dried
Nutmeg, freshly grated
Ciabatta rolls or sliced crusty bread, toasted

Steps:

  • Toast the walnuts in a dry skillet over medium heat. Remove to a plate and set aside.
  • Add 1/2 tablespoon extra-virgin olive oil, half a turn of the pan, and the onions. Cook for 5 minutes to soften, then put them in mixing bowl to cool.
  • While onions cool, put the milk, feta, half of the marjoram or oregano, mint, salt and pepper, to taste, and the nuts in a food processor and process to a thick, smooth sauce.
  • Add lamb to the bowl with the onions and season with salt and pepper, to taste. Stir in the remaining marjoram or oregano, paprika and cinnamon. Form the mixture into 4 patties, thinner at the center and thicker at the edges. Heat 1/2 tablespoon extra-virgin olive oil, in nonstick skillet over medium-high heat and cook the patties 3 to 4 minutes on each side for pink centers.
  • Meanwhile, heat 2 tablespoons extra-virgin olive oil in another skillet over medium-low heat. Add the garlic clove and let it infuse the oil for 1 to 2 minutes. Add the spinach and let it wilt, then remove the pan from the heat, and season with salt, pepper and nutmeg, to taste.
  • Add the lamb patties to the bun bottoms or charred bread. Shake off excess liquid as you remove the spinach and pile it on top of the burgers. Slather the bun tops with the feta sauce. Cover the burgers with the bun tops and serve.

Yield 6 burgers

Number Of Ingredients 14

FOR SPINACH FETA BURGERS
2 pkgs. frozen chopped spinach, thawed.
1 cup crumbled feta cheese (I use feta with sundried tomatoes.)
2 eggs
1 large carrot, shredded
1/2 to 3/4 cup Italian seasoned bread crumbs.
1/3 cup vegetable oil
Fresh baby salad greens
Sliced Ripe tomato
FOR HERBED MAYONNAISE:
1 cup of mayonnaise
1 tbsp. dried oregano
1 tbsp. dried basil
If using fresh herbs, use less - approximately 1 tsp of each.

Steps:

  • PREPARATION: Place frozen spinach in a screened colander and press the spinach into the colander to thoroughly remove as much liquid as possible. Discard liquid. In a medium size bowl combine the thoroughly drained spinach the following ingredients: crumbled feta, eggs, shredded carrot, bread crumbs. Mix well. Form into bun size patties - 1/2 inch thick. COOKING INSTRUCTIONS: (NOTE: preferable to have patties at room temperature before frying.) Heat 1/3 cup oil in large skillet over medium/high heat. Cook spinach feta burgers in skillet, approximately 5-7 minutes on each side, or until completely cooked through, and burgers are nicely browned and lightly crisped on the outside. Lightly toast buns. Serve burgers on buns, topped with herbed mayonnaise, ripe tomato and fresh baby salad greens. FOR HERBED MAYONNAISE Combine mayo and dried or fresh herbs.
