This Blondie-like cake is full of apples and drizzled with a sweet peanut butter glaze-perfect for a special afternoon snack.

¾ cup all-purpose flour
¼ cup whole wheat flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
⅛ teaspoon ground allspice
¾ cup packed brown sugar
2 tablespoons butter, softened
1 egg
¼ cup applesauce
½ teaspoon vanilla
¾ cup tart apple, such as Granny Smith, peeled and diced
¼ cup peanut butter chips
3 tablespoons creamy peanut butter
2 tablespoons milk, or more as needed

Steps:

  • Preheat oven to 350 degrees F. Line an 8x8x2-inch square baking pan with Reynolds® Parchment Paper*.
  • Whisk together all-purpose flour, whole wheat flour, baking powder, cinnamon, salt, and allspice in a medium bowl. Set aside.
  • Cream the sugar and butter with an electric mixer on medium speed in a medium bowl about 2 minutes or until light and fluffy. Add egg; beat to combine. Beat in applesauce and vanilla. Reduce speed to low and gradually add in the flour mixture. Stir in apple and the peanut butter pieces. Spread into prepared pan.
  • Bake 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from oven and cool 5 minutes in the pan. Lift the cake out of the pan using the parchment paper. Place on a wire rack to cool completely. Using the parchment paper, transfer the cake to a cutting board.
  • Drizzle with Peanut Butter Glaze. Allow cake to stand until glaze is set before slicing.
  • Peanut Butter Glaze: In a small bowl, stir together 2/3 cups powdered sugar, 3 tablespoons creamy peanut butter, and 2 to 3 tablespoons milk to make a thick glaze of drizzling consistency.

1/2 cup (125 mL) dry yellow split peas, rinsed & drained
1 1/4 cups (300 mL) water
1/2 cup (125 mL) peanut butter, either crunchy or creamy
1/2 cup (125 mL) honey
3/4 cup (175 mL) firmly packed brown sugar
2 eggs
1 egg white
1 tsp (5 mL) vanilla
2 tsp (10 mL) ground cinnamon
1/2 tsp (2 mL) baking soda
3/4 tsp (3 mL) salt
1/2 cup (125 mL) all-purpose flour
1/2 cup (125 mL) whole wheat flour
1/2 cup (125 mL) chopped dry-roasted peanuts
1/2 cup (125 mL) currants or raisins
1 cup (250 mL) Golden Delicious apple, peeled & chopped

Steps:

  • Place rinsed peas and water in a small saucepan. Bring to a gentle boil, reduce heat, cover and simmer for 45 minutes. Stir frequently. Cool slightly and do not drain. In small batches, mash or purée cooked split peas with a sieve, blender, food processor or potato masher to the consistency of canned pumpkin. Add additional water 1 Tbsp (15 mL) at a time to thin if needed. Preheat oven to 350°F (180°C). In a large mixing bowl, beat purée, peanut butter, honey and brown sugar until blended. Beat in eggs and egg white. Stir in vanilla. In a separate bowl, stir together cinnamon, baking soda, salt and flours. Add flour mixture to peanut butter mixture along with peanuts, currants and apple. Mix well. Turn into a greased 9 x 13-inch (23 x 33 cm) baking pan. 1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup chopped pecans
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda

½ cup butter, room temperature
1 cup white sugar
¾ cup apple butter
1 teaspoon vanilla extract
½ cup whole bran cereal or wheat germ
1 cup sour cream
2 eggs, room temperature

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Prepare the topping by mixing together the brown sugar, cinnamon, nutmeg, and chopped pecans.
  • Sift together the flour, baking powder, baking soda, and salt.
  • Beat butter and sugar together in a large bowl with an electric mixer until light and fluffy; add eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next. Add apple butter, vanilla, and wheat germ or bran cereal. Add sifted dry ingredients alternately with sour cream; mix well after each addition.
  • Pour half the batter into the prepared pan; sprinkle with half of the topping. Pour remaining batter into pan and top with the rest of the topping.
  • Bake in the preheated oven until a tester inserted in the center comes out clean, about 40 minutes.

1/2 cup packed brown sugar
1/2 cups plus 1/3 cup peanut butter, divided
1/4 cup butter, melted
1 package (8 ounces) cream cheese, softened
3/4 cup sugar
1 carton (16 ounces) frozen whipped topping, thawed
2 cans (21 ounces each) apple pie filling
3/4 cup confectioners' sugar
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the graham cracker crumbs, brown sugar, 1/2 cup peanut butter and butter; spoon half into a 3-qt. bowl. , In a large bowl, beat the cream cheese and sugar until smooth; fold in whipped topping. Spread half over crumb mixture in the bowl. Top with one can of apple pie filling. , Combine the confectioners' sugar, cinnamon and remaining peanut butter until crumbly; sprinkle half over pie filling. Repeat layers.
