This is a quick and delicious side-dish to serve with your Asian themed meal. Or, add chicken, pork, shrimp, etc. to make it a meal in itself.

2 garlic cloves, minced
1 tablespoon fresh gingerroot, minced
1/4 cup low sodium soy sauce
3 tablespoons rice vinegar
1/4 cup peanut oil
3 tablespoons sesame oil
1 dash hot pepper sauce
1/2 green bell pepper, julienned
1/2 red bell pepper, julienned
1/2 yellow bell pepper, julienned
4 green onions, sliced diagonally
2 cups snap peas, sliced diagonally
2 tablespoons sesame seeds, lightly toasted
2 (8 ounce) packages fresh udon noodles

Steps:

  • In a jar with a tight fitting lid, combine the garlic, ginger, soy sauce, rice vinegar, peanut oil, sesame oil and hot pepper sauce. Close the lid, and shake vigoroulsy to blend. Set aside to let the flavors blend.
  • Bring a large pot of water to a boil. Add udon noodles, and cook until tender, about 3 minutes. Drain, and place in a serving bowl.
  • In a microwave-safe bowl, combine the peppers with green onions and peas. Heat in the microwave until warm, but still crisp.
  • Add to the noodles in the bowl, and pour dressing over all.
  • Toss to coat, then sprinkle with sesame seeds.
  • Toasting sesame seeds: Toast sesame seeds in a dry skillet over medium heat. Shake pan or stir occasionally until lightly browned and fragrant, about 3 minutes.

1 pound udon noodles
3 tablespoons toasted sesame oil
1/2 cup unhulled sesame seeds
1/4 cup soy sauce
6 tablespoons mirin (Japanese cooking wine)
2 teaspoons rice-wine vinegar
1 teaspoon black sesame seeds (optional)
2 scallions, white and light-green parts only, thinly sliced

Steps:

  • Bring a stockpot of water to a boil. Stir in noodles, and cook until al dente, about 6 minutes, or according to package instructions. Remove from heat, and drain. Transfer noodles to a serving bowl, and toss with 1 tablespoon sesame oil. Set aside.
  • Gently toast unhulled sesame seeds in a small skillet set over low heat until just fragrant, about 2 minutes. Transfer seeds to a bowl to cool.
  • Place toasted sesame seeds, soy sauce, mirin, the remaining 2 tablespoons sesame oil, and the rice-wine vinegar in the jar of a blender; process until smooth and creamy. Pour dressing over reserved noodles, and toss to combine. Sprinkle with black sesame seeds, if using, and scallions. Serve immediately.

200g straight-to-wok udon noodles
1½ tbsp sesame oil
1 onion, halved and finely sliced
thumb-sized piece of ginger, grated
200g long-stemmed broccoli, stalks sliced
75g kimchi, finely chopped
100g radishes, finely sliced
4 spring onions, sliced
½ tbsp low-salt soy sauce
2 large eggs
2 tsp black sesame seeds
1 tsp chilli flakes (optional)

Steps:

  • Put the noodles in a sieve over the sink and pour over a kettle of boiling water. Toss to separate, then leave to drain.
  • Heat 1 tbsp of the sesame oil in a large frying pan over a medium heat. Add the onion and ginger, and fry for 5 mins until softened slightly. Add the broccoli, kimchi and radish, and continue to fry for 5 mins. Stir in the drained noodles, spring onions and soy sauce.
  • Meanwhile, put the remaining ½ tbsp oil in a small frying pan and fry the eggs for 3 mins, or until cooked to your liking. Serve the noodles in bowls with an egg on top, and sprinkle with the sesame seeds and some chilli flakes, if you like.
