PATTI'S MUSSELS A LA MARINIERE
This dish is reminiscent of dining in an outdoor cafe in the south of France. Serve with crusty bread, and a nice chilled glass of white wine. This exact recipe can also be used for clams.

Steps:
- Place mussels in a large bowl with cold water to cover. Let them soak for about 20 minutes to remove any dirt or sand.
- Heat olive oil in a large stockpot over medium-low heat. Add garlic, and saute for one minute, but do not brown. Add the chopped green onion and tomatoes, and cook until almost tender. Pour in the white wine, and stir in the parsley and butter. Bring to a boil, and allow to boil until the liquid has reduced by half, about 15 minutes. Season with salt and pepper to taste.
- Add the mussels to the pot, cover and allow to cook until the shells are opened, about 10 minutes. Transfer the mussels and sauce to a large serving bowl, discarding any unopened shells. Bon appetit!

Steps:
- Wash mussels to eliminate sand. Remove beards with sharp knife.
- In a 10-quart pot (large enough to hold mussels) put 1 1/2 cups of water. Add mussels and steam until fully opened, about 15 minutes.
- Meanwhile, mix all remaining ingredients in a medium saucepan and bring to boil.
- When mussels open fully, add mixture and let stand for 10 minutes. Serve with crusty French or Italian bread.
SUPER MUSSELS WITH CHORIZO

- Preheat broiler to high.
- Heat a deep skillet with a tight fitting lid over medium-high heat. Add extra-virgin olive oil, 1 turn of the pan, add chorizo and brown a bit, 2 minutes. Add onions and chopped garlic and cook 2 minutes more. Arrange mussels in a single layer then add wine, cook off 30 seconds then cover pot and cook until mussels open. While the mussels work, toast the split bread until evenly golden. Remove toasted bread, drizzle with oil and rub with remaining crushed garlic. Season the bread with thyme and black pepper. Cut bread on an angle into several cuts.
MUSHROOM SUPREME
Delicious side dish that I especially like to make with beef on special occasions. If you prefer, sauté mushrooms in olive oil instead of butter.

- Heat oven to 350°F.
- Sauté mushrooms in 1 to 2 tablespoons of butter.
- Dissolve beef cubes in hot water.
- Melt 4 tablespoons butter and blend with flour.
- Add cream, salt and pepper, and beef broth.
- Top with mixture of bread crumbs and cheese.
- Bake in buttered casserole for 30 minutes at 350°F.
GARLICKY MUSHROOMS SUPREME
