Baked Salmon with Guajillo Sauce image

If you've never made (or tried) guajillo sauce, today's your lucky day! Try it tonight in this easy and delicious baked salmon dish.

2 cloves garlic, unpeeled
10 large dried guajillo chiles (3 oz.), stemmed, seeded
1 qt. (4 cups) water
3/4 cup KRAFT Zesty Italian Dressing
2/3 cup slivered almonds, toasted, divided
2 lb. salmon fillets, cut into 8 pieces
8 dried avocado leaves
1/4 cup cilantro, chopped

Steps:

  • Cook garlic in small skillet on medium-high heat 10 min. or until roasted, turning occasionally. Peel; reserve. Heat oven to 350ºF. Soak chiles in hot water 10 min. or until softened; drain, reserving 1/4 cup liquid. Place chiles and reserved liquid in blender. Add dressing, 1/4 cup nuts and reserved garlic; blend until smooth. Pour over fish in large bowl; toss to coat with sauce.
  • Place 1 avocado leaf on each of 8 (12-inch-square) sheets of foil; top with fish. Gather up sides at top and twist tightly to form pouch. Place on baking sheet.
  • Bake 20 min. or until fish flakes easily with fork. Meanwhile, coarsely chop remaining nuts; mix with cilantro. Open pouches; sprinkle fish with nut mixture.

A delightful "company's coming" baked salmon dish served with a very tasty cream sauce. Quick preparation and baking time.

1/4 cup butter
1 tablespoon lemon juice
2 cups breadcrumbs
2 cloves minced garlic
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
4 (8 ounce) salmon fillets
1/3 cup heavy cream
1/3 cup sour cream
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh parsley
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 400 degrees and butter a baking dish.
  • In large skillet, melt butter and stir in lemon juice, bread crumbs and garlic.
  • Stir mixture frequently until crumbs are golden.
  • Remove skillet from heat and stir in parsley and basil.
  • Season salmon with salt and pepper and coat all sides with crumb mixture.
  • Place on baking dish and bake in middle of oven for 15 to 20 minutes or until done.
  • Serve with cream sauce.

1 tablespoon cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon prepared mustard
1/8 teaspoon black pepper
1/2 cup unsalted butter, melted
1/4 teaspoon paprika (optional)
1/2 teaspoon dried parsley (optional)

Steps:

  • Preheat oven to 450 degrees F.
  • Arrange filets in a shallow baking dish.
  • Mix together the remaining ingredients, & pour half of this mixture over the fish.
  • Bake 20 minutes, basting with the remaining sauce.
  • When done, sprinkle with paprika & chopped parsley, if desired.

4 salmon steaks, about 1 1/2 inches thick
1/3 cup fresh lemon juice
1/2 cup butter, melted
salt and pepper
1/4 cup of chopped parsley
1/4 cup chopped capers

Steps:

  • Rub the salmon steaks with lemon juice and brush them with melted butter.
  • Season with salt and pepper to taste.
  • Arrange in a baking dish and bake in preheated hot oven (425°F) for about 20 minutes, basting with a combination of melted butter and lemon juice every 5 minutes.
  • Do not turn.
  • Arrange the cooked salmon steaks on a hot platter.
  • Mix the pan juices with the chopped parsley and capers, and pour over the steaks.
  • If additional liquid is needed, add a little dry vermouth or white wine.
  • Good with new potatoes, dressed with butter and parsley, and a cucumber salad.
  • Makes 4 servings.

1 tablespoon sesame oil
2 cloves garlic, minced
⅔ cup light soy sauce
3 tablespoons rice wine
3 tablespoons rice vinegar
1 ½ teaspoons ground ginger
½ teaspoon wasabi paste
2 (5 ounce) salmon fillets

Steps:

  • Heat sesame oil in a skillet over medium heat; stir in garlic. Cook and stir until fragrant, about 1 minute. Transfer to a large glass or ceramic bowl.
  • Add soy sauce, rice wine, rice vinegar, ginger, and wasabi paste to the garlic-sesame oil mixture; whisk to combine. Add salmon fillets and turn to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 20 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with parchment paper.
  • Remove fillets from the marinade, shake off excess, and place on the prepared baking sheet. Discard the remaining marinade.
