1 spaghetti squash, halved and seeded
1 pound ground beef
½ cup diced green bell pepper
½ cup diced red bell pepper
¼ cup diced red onion
1 clove garlic, chopped
1 (14.5 ounce) can Italian-style diced tomatoes, drained
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon salt
¼ teaspoon ground black pepper
2 ¼ cups shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place squash on a baking sheet, and bake 40 minutes, or until tender. Remove from heat, cool, and shred pulp with a fork.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
  • In a skillet over medium heat, cook the ground beef until evenly brown. Drain, and mix in the green pepper, red pepper, red onion, and garlic. Continue to cook and stir until vegetables are tender.
  • Mix the shredded squash and tomatoes into the skillet, and season with oregano, basil, salt, and pepper. Cook and stir until heated through. Remove skillet from heat, and mix in 2 cups cheese until melted. Transfer to the prepared casserole dish.
  • Bake 25 minutes in the preheated oven. Sprinkle with remaining cheese, and continue baking 5 minutes, until cheese is melted.

2 pounds ground beef
¼ cup chopped onion
2 (26.5 ounce) cans meatless spaghetti sauce
1 (16 ounce) container fat-free sour cream
2 cups shredded mozzarella cheese, divided
½ cup Parmesan cheese
salt and black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a deep 9x13 inch baking dish.
  • Bring a large pot of salted water to a boil over high heat. Stir in the spaghetti. Boil the pasta until cooked through but still firm to the bite, 8 to 10 minutes. Drain well.
  • Brown ground beef and onion in a large skillet over high heat; drain fat. Stir in the spaghetti sauce, sour cream, and 1 cup of the mozzarella. Mix in the cooked pasta. Transfer pasta mixture to prepared baking dish. Top with remaining 1 cup of mozzarella and the Parmesan cheese. Cover pan with aluminum foil.
  • Bake in preheated oven until hot and bubbly, about 30 minutes.

1-1/2 pounds uncooked spaghetti
3 pounds ground beef
1 cup chopped onion
2/3 cup chopped green pepper

2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
1-1/3 cups water

  • Cook spaghetti according to package directions. Meanwhile, in two large skillets, cook the beef, onion and green pepper over medium heat until meat is no longer pink. 1 pound pasta, such as spaghetti or linguini
1 tablespoon olive oil
1 medium onion, chopped
1 pound lean ground beef
6 cups marinara sauce, see our homemade marinara sauce recipe (or substitute with two 26-ounce jars store-bought sauce)
3/4 cup sour cream
1/4 cup basil pesto, see our homemade basil pesto recipe
4 ounces mozzarella cheese, coarsely grated (about 1 cup)
Salt and fresh ground black pepper

Steps:

  • Heat oven to 350 degrees F. Butter a 3-quart baking dish or spray with non-stick cooking spray.
  • Bring a large pot of salted water to the boil, add the pasta then follow package directions, but cook 1 to 2 minutes less than the package calls for. Drain.
  • Meanwhile, heat the olive oil in a large skillet with sides. Add onions and cook until translucent, about 5 minutes. Add the ground beef and cook until browned, about 10 minutes. As the beef cooks, use a wooden spoon to break the beef up into small pieces in the pan. Season with 1/4 teaspoon of salt and a few grinds of black pepper. Drain excess fat from the beef.

1 small to medium onion - chopped
1 24 oz jar Marinara sauce - I use Rao's
1 cup cottage cheese
1 cup Parmesan cheese - grated
1 egg
1 pound spaghetti
1 8 oz cream cheese
2 cups Mozzarella cheese - grated

Steps:

  • Heat oven to 350 degrees.
  • In a medium size skillet, cook ground beef and onion until done. Drain off fat. Pour Mariana sauce over meat and mix well.
  • In a large pot, cook spaghetti according to package directions. When done, drain. Add cream cheese and mix well, coating all spaghetti.
  • Mix together, in a medium size bowl, cottage cheese, 1/2 cup Parmesan cheese and egg.
  • To build baked spaghetti, place approximately 1/2 cup of meat sauce in the bottom of a 9x13 casserole dish. Place half of spaghetti on top of meat mixture smoothing to the edges of casserole dish. Layer on cottage cheese mixture, covering all of spaghetti. Layer remaining spaghetti over cheese. Spoon remaining meat mixture over all layers. Top with Mozzarella cheese. Cover with foil and bake for 20 minutes. Remove foil, sprinkle on 1/2 cup of Parmesan cheese and bake for additional 15 minutes until cheese is golden brown. Remove from and allow to reset 10 minutes. Cut into squares and serve.

1/2 teaspoon black pepper
1 1/2 cups onion, (chopped)

1 (28 ounce) can crushed tomatoes
1 (16 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 tablespoon Italian seasoning
1/2 teaspoon granulated sugar
16 ounces spaghetti
2 tablespoons parsley, (finely chopped)
grated parmesan

Steps:

  • Heat a large pot over medium-high heat. Add beef to the pot, sprinkle with salt and pepper, crumble into small chunks with a wooden spoon and cook until lightly browned. Use a slotted spoon to transfer to a plate.
  • Drain all but 2 tablespoons of the fat from the pan and set over medium-low heat (if you don't have enough fat in the pan, add a tablespoon of olive oil). Add the onion, bell pepper, and garlic and cook, until the onion is translucent, about 7 minutes.
  • Return beef to pot then stir in crushed tomatoes, tomato sauce, tomato paste, Italian seasoning, and sugar. Bring sauce to a boil, then immediately reduce heat and simmer, uncovered for 1 hour. Adjust seasoning as needed.
  • Meanwhile cook spaghetti in well-salted water, according to package instructions. Drain well and toss with sauce. Sprinkle with parsley and serve. Pass grated Parmesan.

¾ lb. spaghetti
1 pound ground beef (can also use ground sausage or turkey)
1 medium onion (diced)
1 green bell pepper (diced)
2 cloves garlic (minced)
1/2 teaspoon seasoned salt
1 teaspoon Italian seasonings
32 oz. marinara sauce
8 oz. Ricotta cheese (equal to 1 cup.)
2 Tablespoons cream cheese (at room temperature)
1/3 cup Parmesan cheese (shredded)
4 cups mozzarella cheese (shredded)
Parsley (to garnish)

Steps:

  • Preheat oven to 375 degrees.
  • Cook the spaghetti according to package instructions, while waiting for the water to reach a boil, proceed with the below.
  • Cook the ground beef in a large nonstick skillet over medium heat until browned and cooked through. Drain excess grease.
  • Add the seasonings, diced onions, and peppers. Sauté until softened, about 5 minutes. Add the garlic and heat for 1 minute.
  • Add the marinara, ricotta, Parmesan, and cream cheese. Reduce heat to low and allow it to heat through.
  • Add the drained spaghetti, use kitchen tongs to gently toss until well-combined. Note: It will be very saucy but the pasta is going to continue to absorb it as it bakes.
  • Add half of the spaghetti to a lightly greased 9 x 13 inch baking dish and top with half (2 cups), of the mozzarella.
  • Top with remaining spaghetti, then with the rest of the mozzarella.

  • Place onions in a food processor; pulse until finely chopped. Add carrots; pulse until finely chopped.
