1 1/2 cups plain bread crumbs
1 handful fresh flat-leaf parsley
2 large cloves garlic
1 lemon, zested
Coarse salt
4 (6 to 8-ounce) cod fillets
Extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Place bread crumbs in a shallow dish. Pile parsley, garlic, lemon zest, and a little coarse salt on the cutting board. Finely chop the lemon-garlic mixture, then combine with plain bread crumbs.
  • Brush the top of each fillet with olive oil and dip in to the bread crumb herb mixture. Brush a little bit of olive oil in the bottom of a baking pan then place fillet in the pan, crust side up. Roast fillets in oven until firm to the touch, about 12 to 15 minutes.

1 large cod or haddock filet, approx 1-1 1/2 pounds, cut into 2-3 filets
15 Triscuit crackers, crushed (I used cracked pepper and olive oil flavored)
1/2 cup grated Parmesan cheese
1/2 lemon, zested
1/4 cup light mayonnaise, sour cream, or plain greek yogurt
1-2 teaspoons garlic powder
1 tablespoon finely chopped fresh parsley
Salt and pepper to taste

Steps:

  • Preheat oven to 425° F.
  • Season each piece of fish with salt and pepper to taste.
  • Place Triscuit crackers into a plastic bag and mash with a rolling pin until finely crushed (use a food processor or blender if available). Pour onto a plate and combine with lemon zest, Parmesan cheese, and garlic powder. Set aside.
  • Using a basting brush, coat both sides of each filet in mayonnaise and then dredge in Triscuit breading, covering completely. Lay breaded filets onto a baking sheet with parchment paper or greased aluminum foil. Cut 3 lemon wedges and place on top of each filet.
  • Bake for 20-25 minutes on middle rack. When done, sprinkle with parsley if desired. Tastes delicious with tartar sauce.

½ fish bouillon cube
¾ cup dry bread crumbs

2 teaspoons dried tarragon

2 x 180g/6oz pieces of cod loin
2 tbsp fresh white breadcrumbs
2 tbsp chopped fresh herbs (such as a mixture of chervil, chives, parsley, coriander) - optional
1 clove garlic, crushed finely
2 tbsp olive oil
salt and freshly ground black pepper
140g/5oz new potatoes, any large ones cut in half
160g/6oz fresh or frozen peas

Steps:

  • Heat the oven to 200C/180C Fan/Gas 6.
  • Mix together the herbs (if using), garlic and oil. Stir in the breadcrumbs and season with salt and pepper. Put the fish on a baking sheet and spread the breadcrumb mixture over the fish. Bake in the oven for 10-15 minutes until the flesh becomes opaque and flakes easily.
  • Boil the potatoes in a large pan of water for 12-15 minutes, until cooked through. Boil the peas in a separate pan of water for a few minutes until just cooked. Take the cod out of the oven and serve with the potatoes and peas.

1 pound cod fillets
2 tablespoons butter (melted or olive oil)
2 tablespoons chopped parsley
25 round butter crackers
1-2 cloves garlic (minced for Italian Style crumb mixture (or 1/4 teaspoon garlic powder) *Optional)
salt and pepper (*optional to season fillets)

Steps:

  • Preheat your oven to 375 degrees and coat baking dish or oven safe non-stick skillet with cooking spray or olive oil.
  • Mix parsley into the softened butter (along with garlic, if you are using it), then crush the crackers in plastic a bag or food processor and mix together well with the butter.
  • Pat the cod fillets dry if necessary and arrange the fish in the baking dish by placing snugly together. Fold under any thin edges (this keeps fish moist). Season each cod fillet with salt and black pepper if you like.
  • Spread the crumb mixture evenly over the fish. Make sure to cover the fish well. Gently pat to adhere the topping.
  • Put the cod in the oven and bake for 15-17 minutes, until the cod is cooked through (until translucency of fish is gone) and cracker topping is nicely browned and crisp.
  • Serve with fresh lemon wedges.

4 - 6 skinless boneless chicken breasts
1 1/4 cup of buttermilk
2 tablespoons of Dijon mustard
1/2 teaspoon of salt
Non-stick cooking spray (or a spray oil mister)

Steps:

  • Preheat the oven to 375 degrees F.
  • Lightly spray a cooking sheet with non-stick cooking spray or oil and set aside.
  • In a food processor or Vitamix, grind the Triscuit crackers to a fine crumb.
  • In a shallow baking dish, mix the Triscuit cracker crumbs with the cayenne pepper, the garlic powder and smoked paprika.
  • In another shallow baking dish or bowl, mix the buttermilk, Dijon mustard, salt and pepper and add the chicken.
  • Let soak for a few minutes.
  • Make sure the chicken is coated thoroughly with the buttermilk mixture, remove and dip into the cracker coating.
  • Coat the chicken breasts thoroughly, packing the crumbs onto the chicken.
  • Place on the baking sheet and proceed to do the same with the remaining chicken.
  • If you have a spray oil mister, lightly spray the chicken with a bit of oil or lightly drizzle with a bit of olive oil.
  • Bake for 45 - 50 minutes until the chicken is done and the juices run clear.
  • Enjoy!
