- Preheat the oven to 450 degrees F. Fit a rimmed roasting pan with a roasting rack and spray the rack with avocado oil spray.
- Pat the turkey legs dry with paper towels. Brush them all over with melted butter and rub with the seasoning mix. Place on the roasting rack and lightly spray with avocado oil.
- Roast, uncovered, for 20 minutes, until the skin is browned.
- Loosely cover with foil, to avoid scorching the top, and continue roasting until the juices run clear when pierced with a fork and an instant-read thermometer registers 165 degrees F (make sure it isn't touching the bone), about 30 more minutes.
- Remove the turkey legs from the oven and allow them to rest, still covered in foil, for 10 minutes before serving. Do not skip this step - it allows the internal temperature to climb a bit more, and the juices to redistribute and settle.

EASY ROASTED TURKEY LEGS

- In a large bowl pour in all of the Turkey Broth/Stock (Could also be Chicken Stock) and marinate the uncooked Turkey Legs overnight, or at least 3 hours, in the refrigerator.
- After 3-8 hours in the refrigerator, take a large roasting pan with a wire rack, remove the refrigerated legs from the bowl of broth---use tongs and place directly on the roasting rack/pan. Sprinkle generous amount of salt, black pepper, and onion powder on each leg. Spread foil across the top of the roasting pan to keep the legs covered while roasting in a pre-heated 350F oven.
- Meanwhile, melt a stick of butter in a saucepan---until it's liquified.
- 8 legs usually take about 1hour and 45 minutes to fully cook. The legs need to be turned/flipped with tongs, basted (brushed with the melted butter) and then re-seasoned with just the onion powder and black pepper--- every 20 minutes during roasting.
- Turkey legs are usually done after insterting a meat thermometer that registers 175F in the thickest part of the leg, however, they do keep cooking even after they're removed from the oven.
- The cooked turkey pan juices and drippings are usually used to flavor gravy and stuffing.

- 1. Rinse turkey legs and pat dry. Slip the skin of the turkey back over the leg. This is done by slipping your fingers between the skin and meat of the leg.
- 2. Smear butter onto meat on both sides of the leg.
- 3. Sprinkle meat with poultry seasoning, salt, and pepper.
- 4. Secure skin back over the leg.
- 5. Cover legs on both side with lemon or orange zest.
- 6. Place foil in the bottom of a long rectangular pan. If you wish, dice carrots and celery and add to pan.
- 7. Add chicken broth to pan.
- 8. Place turkey legs in pan.
- 9. Roast legs at 350 degrees for one hour and twenty minutes.
- 10. CAUTION: Do not over bake and since ovens are different, start checking on the turkey leg temperature after one hour. Turkey temperature should be 175 degrees when you take it from the oven.
- 11. When ready, take turkey legs from oven and let rest 15 minutes to redistribute the juices.
- 12. Taste your broth. If it's to your liking, spoon on turkey legs. If not, add salt, pepper, and a little butter and warm. Then spoon over turkey legs.
HERB ROASTED TURKEY LEGS

- In a large bowl, combine the water and salt together and stir until the salt has dissolved
- Add in the the bay leaves, crushed garlic cloves and black cardamoms (optional)
- Add in the turkey legs and brine it for 24 hours in the fridge.
- In a food processor, blitz half an onion with 2 tablespoons of oil until it becomes a paste. (If you don't have a food processor, you can grate the onion instead)
- Melt the butter and combine the onion paste, 1/4 cup of oil, soy sauces, and herbs into 1 bowl and mix well. Set aside for later to glaze the turkey. (Note: the glaze may thicken, as the butter cools - not to worry, it will melt back into a oil once you brush it on the hot turkey!)
- Pre-heat the oven to 350F (177C)
- Use a roasting pan and put a rack in it to suspend the turkey, so there is air flow between the pan and the bottom of the turkey. If you don't have a rack, you can take tin foil and roughly press it together to create a rough and bumpy texture and place the turkey legs on top so it is not sitting completely flat against the roasting pan.
- Once the oven is up to temperature, place the turkey legs in the oven and set the timer for 30 minutes
- Once 30 minutes is up, we can start to glaze the turkey with the herb glaze every 15-20 minutes
- The turkey legs should take between 1 hour and 30 minutes to 1 hour and 45 minutes but use a meat thermometer to be sure. The internal temperature should be 165F (74C). When you cut into the turkey, the juices should be clear and not bloody.

- Preheat the oven to 350 degrees F (175 degrees C). Rinse the turkey legs and pat dry.
- Stand the turkey legs upright (as if the turkey were standing). Press a knife downward into the deep tissue, creating 2 or 3 long pockets. Press a piece of celery into each opening. - Prepare turkey: Dry the turkey legs with kitchen paper. Sprinkle them generously with salt, pepper, and sweet paprika powder.
- Brown: Heat the oil in a large Dutch oven or another large, heavy-bottomed ovenproof dish. Brown the turkey drumsticks on all sides, about 3 minutes on each side.
- Simmer: Add 1 cup (250 ml) of the stock, cover the pan and simmer for 15 minutes.
- Preheat oven: In the meantime, preheat the oven to 400 degrees Fahrenheit/ 200 degrees Celsius.
- Prepare vegetables: Clean and chop the vegetables. Whisk the tomato paste into the remaining chicken stock. Add the vegetables and tomato paste to the pot.

- Preheat the oven to 350 °F (177 °C). Before you do anything else, switch on your oven. Let it warm up to 350 °F (177 °C) while you prepare your drumsticks.
- Peel back the skin. Grip the skin near the bone and gently peel it toward the top of the drumstick. Don't pull it off entirely; just peel it back, so you can tuck butter and seasonings underneath.
- Rub 1 tablespoon (14 g) of butter over the meat of each drumstick. This will keep the meat moist while the drumsticks bake. For larger drumsticks, you can use up to 3 tablespoons (42 g) of butter.
- Season the turkey. With the skin still pulled down, sprinkle salt and pepper all over the turkey legs. For more flavor, try rubbing a tablespoon (about 2-4 g) of chopped herbs onto the buttered turkey meat while the skins are still pulled back.
- Pull the skin over the meat and rub it with butter. Stretch the skin back over the meat and rub another 1-3 tablespoons (14-42 g) of butter over the skin of the turkey.
- Sprinkle the skin with salt and pepper. Use a liberal amount of both salt and pepper to bring out the best in the turkey's flavor.
- Lay the turkey legs in a roasting pan. Use a pan large enough to easily hold all of the legs with no overlap. If you want to catch the drippings, use a metal roasting rack over a drip pan.
- Bake the turkey drumsticks for 90 minutes. Place them in the preheated oven for 45 minutes. Turn them over and cook them for another 45 minutes. Insert a meat thermometer into the thickest part of the meat.
- Let the meat rest for 15 minutes before serving. This gives the juices time to reabsorb into the flesh, making the meat juicy. Serve whole or remove the meat from the bone.
