Steps:
- Blend yogurt, water, oil, egg, and extract together in a large bowl.
- Add the dry ingredients into the bowl and mix together with a spatula.
- Add the wet ingredients to the dry, stirring just until blended.
- Spoon batter into a sprayed 6 donut shaped baking sheet. Place onto a larger cookie baking sheet for stability.
- Bake for 10-12 min in a preheated 375ºF oven.
- Cool for 5 min. Loosen the sides with a sharp knife or toothpick. The bottom will be nicely browned.
- Optional Glaze: If desired, make this Coffee Glaze while the donuts cool. Allow the glaze to drip over a rack lined with wax paper for easy clean up or re-drizzling.

- Preheat the oven to 350F degrees. Spray a 6 cavity doughnut pan with non-stick cooking spray.
- In a second medium-sized bowl whisk together the egg, melted butter, milk, yogurt/sour cream, instant coffee powder, vanilla & packed brown sugar. Make sure the coffee powder has dissolved and there are no sugar clumps.
- Fold the wet ingredients into the flour mixture using a large wooden spoon or rubber spatula, then give the batter a quick whisk to ensure everything is well mixed. Spoon the batter into the prepared doughnut pan. Or pour/spoon the batter into a large ziplock bag, cut off the bottom corner of the ziplock bag, then pipe the batter into the doughnut pan. Fill each cavity to about 2/3 full - you should get about 6 to 8 doughnuts total.

- Preheat oven to 350 degrees F. Spray donut pan with non-stick cooking spray. Combine flour, baking powder and salt in a medium bowl, set aside.
- Cream butter and sugar in the bowl of an electric mixer on medium-high speed until well blended. Scrape bowl and add in eggs, one at a time, scraping bowl between and after additions. Beat in vanilla extract.
- Reduce mixer speed to low and add flour mixture. Mix until just blended. Transfer batter to donut pan by teaspoonfuls until the batter is evenly divided. Smooth out the dough using the back of the spoon. Bake for 12 to 14 minutes or until a toothpick inserted into the thickest part of a donut comes out clean. Let cool in plan for 5 minutes before removing to a wire rack.
- Place chocolate, butter, corn syrup and water in a microwave safe bowl and heat on high for 30 to 45 seconds or until chocolate is melted, stirring after 30 seconds. Stir in coffee and vanilla extracts. Dip the tops of the donuts into the glaze and cover with sprinkles, if desired.
