BAKED PARMESAN FISH

- In a shallow bowl, combine the cheese, flour, paprika, salt and pepper. In another shallow bowl, beat egg and milk. Dip fish fillets into egg mixture, then coat with the cheese mixture. , Arrange in a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 350° for 25-30 minutes or until fish flakes easily with a fork.

Delicious white fish baked with Parmesan topping which is as my daughter says "yummy, yummy in my tummy." We have used this with Tilapia, whiting and pollock.

- 1. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder, and garlic salt. Mix well and set aside.
- 2. Arrange fillets in a single layer on a cookie sheet. Bake for 30 minutes or until fish flakes.

- Preheat oven to 450°F
- Combine sour cream and soup mix in a bowl.
- Combine next 4 ingredients in a shallow dish.
- Dip fish into sour cream mixture, then lightly coat with breadcrumb mixture.
- Arrange fish in a lightly oiled baking dish
- Drizzle oil over top.
- Bake about 8 minutes, until fish is lightly browned.
- Turn and bake another 5 minutes or until golden.

- Preheat oven to 425°. Place fish in a greased 13-in. x 9-in. baking dish; sprinkle with pepper. Beat egg white with salt if desired until stiff peaks form. Fold in mayonnaise, dill and onion; spoon over fish. Bake, uncovered, until topping is puffed and fish flakes easily with a fork, 15-20 minutes. Garnish with dill and lemon if desired.

- Wash the (defrosted) Cream Dory fillets and pat dry with paper towels. Lay the fillets in a small shallow, baking dish – preferably oval shaped. Pour the olive oil and spread it on the fish. Bake it for 15-20 mins or until fish is flaky. Be careful not to overcook the fish.
- While fish is baking, prepare the parmesan mixture. In a bowl, combine mayonnaise, parmesan cheese, thyme, and half of the rosemary. Mix them together.
- When fish is cooked, take out the fish from the oven. If the fish has become watery, scoop out the excess water but try to leave the oil olive. Evenly spread the parmesan mixture on top then sprinkle the remaining half teaspoon of thyme on top. Return to oven and bake for another 10 mins.
