BAKED CHEESE GRITS
This recipe comes from Southern Living Magazine, January 2006. As you can see from the picture I posted with this recipe, I added some chopped green chilis to my grits. This is not in the original recipe and the grits are wonderful without them.

Steps:
- Bring chicken broth to a boil in a medium saucepan over medium-high heat.
- Gradually whisk in grits; bring to a boil.
- Reduce heat to medium-low, and simmer, stirring occasionally, 10 minutes or until thickened.
- Stir in Cheddar cheese, next 5 ingredients, and, if desired, Worcestershire sauce, stirring until cheese melts.
- Remove from heat, and stir in eggs.
- Pour grits into a lightly greased 2-quart or 11- x 8-inch baking dish.
- Bake, uncovered, at 350º for 40 to 45 minutes or until golden and set.

- Preheat oven to 400 degrees F.
- Butter, or spray with cooking oil, a 1 quart oval gratin dish. Whisk eggs; add milk, melted butter and fold into grits with cheese and spices. Bake 40 minutes until browned.
BAKED COUNTRY CHEESE GRITS
This savory grits dish is not only great for brunch, but really any time of day. Top with freshly ground black pepper and your favorite hot sauce.

Steps:
- Boil the salted water, add grits, lower heat, cover, and simmer for 6 to 7 minutes.
- Fold in 1/2 cup cheddar, parmesan, garlic, and sour cream.
- Pour into lightly greased 8" casserole dish.
- Toss the remaining cheddar with the scallions and tomato.
- Sprinkle over the grits.
- Bake in 375F pre-heated oven for 15 minutes.

BAKED CHEESE GRITS
Get golden brown grits with the addition of pepper jack and sharp Cheddar.

Steps:
- Preheat the oven to 350 degrees F. Butter a deep casserole dish.
- Bring the chicken broth, milk, 1 1/2 teaspoons salt and cayenne to a boil in a medium saucepan. Slowly whisk in the grits and lower the heat to a simmer. Cover and cook, stirring occasionally, until thick, about 30 minutes.
- Remove from the heat and stir in the Cheddar and pepper-jack cheeses and butter until melted and smooth; cool slightly. Stir in the eggs and transfer the mixture to the prepared casserole dish. Smooth the top of the grits and then bake until just set and lightly brown, about 1 hour. Let rest for at least 5 minutes. Scatter with the scallions, if using, and cut into squares.
CHEESY BAKED GRITS
I had this at a party at a colleague's house. I've loved cheese grits for years, but these are by far the best I've ever had.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- Bring the milk to a boil in a pot over medium heat. Melt 1/2 cup butter in the boiling milk. Gradually mix in the grits, and cook 5 minutes, stirring constantly. Remove from heat, and season with salt and pepper. Beat with a whisk or electric mixer until smooth. Mix in the Cheddar cheese and 1/3 cup butter. Transfer to the prepared baking dish, and sprinkle with Parmesan cheese.
- Bake 1 hour in the preheated oven, until firm.

BAKED CHEESE GRITS

- Preheat oven to 350 degrees F. Grease a 2-quart casserole with 2 tablespoons of butter.
- Combine remaining 1/4 cup butter, water, and salt in a heavy medium saucepan over medium heat. When mixture comes to a simmer, add the grits, stirring until thoroughly combined. Continue to cook the grits at a simmer, stirring frequently, until thickened, about 15 minutes.
- Meanwhile whisk together egg, cream and pepper. Stir into cooked grits along with cheese. Pour mixture into prepared casserole. Bake until set, about 45 minutes. Remove from the oven and let stand about 5 minutes before serving.
DELICIOUS BAKED CHEESE GRITS
This is a delicious side dish, I make this recipe quite often, and my family just loves it! (note: prep time includes the first cooking of the grits)

Steps:
- Adjust an oven rack to the lower-middle position and preheat oven to 350°.
- Grease a 9 x 9 inch baking dish with 1 teaspoon butter.
- Heat the remaining 2 tbs butter in a large saucepan over medium heat until the foam begins to subside.
- Add the onion and cook until softened but not browned, about 4 minutes.
- Add 3 cups water, the cream, hot sauce, and salt and bring to a boil.
- Whisk in the grits and decrease heat to low.
- Cook, stirring frequently, until the grits are thick and creamy, about 15 minutes.
- Off the heat, thoroughly stir in 1 1/2 cup cheese, the eggs, and pepper to taste.
- Pour the mixture into the prepared baking dish, smooth the top with a rubber spatula, and place the grits in the oven.
- Bake for 30 minutes.
- Remove the dish from the oven, sprinkle the remaining 1/2 cup cheese evenly over the top, and return to the oven.
- Continue baking until the top is browned, about 15 minutes.
- Let rest for 5 minutes and serve.
