BROOKSTERS

Brooksters image

This recipe comes from KitchenKonfedence web site and is by Brandon Matzek. This is a copycat recipe from the Brooklyn bakery Baked. This is the marriage of a brownie and a chocolate chip cookie and is fantastic. This was featured on the Food Network Channel.

Time 38m

Yield 12 Brooksters, 12 serving(s)

Number Of Ingredients 19

1 cup all-purpose flour
2 tablespoons all-purpose flour
1/2 teaspoon fine grain sea salt
1/2 teaspoon baking soda
1/2 cup unsalted butter, softened
1/2 cup packed dark brown sugar
1/4 cup white sugar
1 large egg
1 teaspoon pure vanilla extract
6 ounces semi-sweet chocolate chips
1/2 cup unsalted butter, cut into 1-inch cubes, plus more for muffin tin
3/4 cup all-purpose flour
1 tablespoon dark cocoa
1/2 teaspoon fine grain sea salt
5 ounces dark chocolate, coarsely chopped (top quality, 60 to 72 percent cacao)
3/4 cup white sugar
1/4 cup light brown sugar
3 large eggs, room temperature
1 teaspoon pure vanilla extract, extrac

Steps:

  • To make the chocolate chip cookie dough:.
  • Add flour, fine grain sea salt and baking soda to a large bowl, whisking to combine. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix together butter, white sugar and dark brown sugar on medium speed until smooth and creamy. Using a spatula, scrape down the sides of the bowl. Add the egg and beat until light and fluffy. Add vanilla and mix until just incorporated. Add half of the flour mixture to bowl. Mix for a few seconds on low then increase the speed to medium. Beat until just combined (15 - 20 seconds). Add the remaining flour mixture and repeat the process above. Do not over mix here. Gently fold in the chocolate chips.
  • Cover bowl, transfer to the refrigerator and chill for at least 3 hours before using.
  • To make the Brooksters:.
  • Using butter or nonstick spray, grease the bottom and sides of a 12 cup muffin tin. Set aside.
  • Add flour, fine grain sea salt and cocoa powder to a medium bowl, whisking to combine. Set aside.
  • Bring a large pot filled with 2 inches of water to a simmer. Set a heatproof bowl on top of the pot, but make sure the bottom of the bowl is not touching the simmering water. Add butter and chocolate to the bowl, stirring until melted and combined. Turn off the heat, but keep the bowl on the pot. Whisk white sugar and light brown sugar into the chocolate mixture. Remove the bowl from the pot and let cool to room temperature.
  • Add eggs to the chocolate mixture, whisking until just combined. At this point, switch from a whisk to a spatula. You want avoid adding extra air to the batter. Add vanilla and stir until just combined. Gently fold flour mixture into the chocolate mixture until just incorporated. Do not over mix here.
  • Fill each well of the muffin tin halfway with batter. Transfer muffin tin to the refrigerator and let chill for at least 1 hour. Both the cookie dough and brownie batter must be well chilled before baking to ensure even cooking.
  • Preheat your oven to 375°F and place a rack in the center of the oven (please see notes above regarding cooking times and temperatures).
  • Once thoroughly chilled, take the muffin tin from the refrigerator. Using a small spoon, scoop out a small amount of chilled cookie dough. Using your hands, shape dough into ball then slightly flatten it into a disk. The disk should be a bit smaller than the top of the muffin tin wells. Gently press the disk into one of the wells of batter. Repeat this process with remaining 11 wells.*.
  • Place the muffin tin in the oven and bake until the cookies are golden brown ( 17 - 19 minutes), rotating the muffin tin halfway through.
  • Notes.
  • *You will have extra chocolate chip cookie dough leftover. Don't throw this out. Make cookies. Roll remaining dough into balls. Slightly flatten the balls into disks and place on a cookie sheet lined with a silpat or parchment paper. Bake in a 375 oven until golden brown (9 - 11 minutes depending on the size of your disks). Let cool for a minute on the baking sheet then transfer to a wire rack to cool completely. Or enjoy warm.

BAKED'S BROOKSTERS

Baked's Brooksters image

Let me get this right: It's a brownie and a chocolate chip cookie, so basically two of my favorite sweets in one? That was my reaction when I first met the Brookster and, as I later learned from the co-creators, pretty much everyone's say what? response.Matt Lewis and Renato Poliafito came up with it back in 2008, long before hybrid desserts were in, and the inspired creation has been a fixture at their perennially popular Brooklyn bakery, Baked, ever since. They kindly shared this recipe with me from Baked Elements: Our 10 Favorite Ingredients (Stewart, Tabori & Chang), one of their best-selling cookbooks and a personal favorite, plus an extra note for you:"This recipe is fairly straightforward, but requires time. Don't rush the specified times as it's important for the dough and batter to cool and thicken slightly for a perfect bake."I've also tried this warmed slightly in a sundae and it's the best foundation you can imagine. - Yasmin Newman, author of The Desserts of New York (And How to Eat Them All)

Yield 6

Number Of Ingredients 19

10 ounce plain all-purpose flour
1 teaspoon baking soda
1 teaspoon fine salt
8 ounce unsalted butter, chopped and softened
7 ounce dark brown sugar
3 1/2 ounce caster (superfine) sugar
2 eggs
2 teaspoon natural vanilla extract
12 ounce dark chocolate chips
ice cream, to serve (optional)
3 1/2 ounce plain (all-purpose) flour
3 tablespoon unsweetened (dutch) cocoa powder
1/2 teaspoon fine salt
15 ounce dark chocolate (60-72 percent cocoa solids), roughly chopped
4 ounce unsalted butter, chopped
5 1/2 ounce caster (superfine) sugar
1 3/4 ounce light brown sugar
3 eggs
1 teaspoon natural vanilla extract

Steps:

  • Whisk the flour, bicarbonate of soda, and salt in a large bowl and set aside. Using an electric mixer, beat the butter and sugars on medium speed until smooth and creamy. Scrape down the sides and bottom of the bowl. Add the eggs, one at a time, beating well after each addition (the mixture will look light and fluffy). Add the vanilla and beat for 5 seconds. Add half the flour mixture and beat for 15 seconds, then add the remaining flour mixture and beat until just combined. Fold in the chocolate chips until evenly combined. Cover the bowl tightly with plastic wrap and refrigerate for 3 hours.
  • Preheat oven to 375 degrees F. Grease 6 individual 10-centimeter (4-inch) pie dishes and place on a baking tray. Whisk the flour, cocoa, and salt in a bowl and set aside. Place the chocolate and butter in a heatproof bowl set over a saucepan of gently simmering water (don't let the bowl touch the water) and stir occasionally until melted and combined. Remove from the heat, but keep the bowl over the water in the saucepan. Add both sugars and whisk until well combined. Remove the bowl from the water and cool to room temperature.
  • Add the eggs to the chocolate mixture, one at a time, whisking after each addition until just combined, then stir in the vanilla (do not overbeat the batter at this stage or the brownies will be cakey). Sprinkle the flour mixture over the chocolate mixture, then using a spatula (do not use a whisk), fold in until there is just a trace amount of flour mixture visible. Fill the pie dishes with the brownie batter until just under halfway full. Refrigerate for 3 hours.
