SASSY SPICY FOIL-BAKED FISH FOR ONE



Sassy Spicy Foil-Baked Fish for One image

Super easy, light but super satisfying way to incorporate a nice whitefish fillet, some colorful veggies, and lots and lots of flavor. Feel free to substitute, add, or subtract any of your favorite veggies!

1/3 lb white fish fillet (cod, halibut, rockfish, snapper, etc)
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped zucchini
1/4 cup chopped yellow squash
1 roma tomato, quartered
2 tablespoons olive oil
1 garlic clove, minced
1 tablespoon red pepper flakes
1/2 lemon
cajun seasoning, to taste

Steps:

  • Preheat oven to 450 degrees.
  • Rinse and dry your fish, and rub each side with some olive oil. Season each side with cajun seasoning.
  • Place fish in the center of a very long piece of foil on a cookie sheet.
  • Toss veggies, garlic, pepper flakes, cajun seasoning and remaining olive oil in a bowl until everything is sufficiently coated.
  • Spread veggie mixture over fish fillet.
  • Squeeze juice of lemon over veggies and fish. I put the rest of the lemon on top of the mixture while it bakes for extra lemon flavor, but you don't have to.
  • Fold foil around fish and vegetables so that a packet is formed.
  • Bake at 450 for 15 minutes.
  • Open foil, place on plate, and dig in!

Spicy Fish Fillets image

This fish is seasoned with Ethiopian chili powder, berbere. You can bake the fillets or fry them in a skillet.

1 pound(s) tilapia fillets (may use another white fish)
2 teaspoon(s) berbere
3 tablespoon(s) olive oil
1/2 cup(s) breadcrumbs, finely crushed
1/2 cup(s) buttermilk
1 - lemon
1/4 teaspoon(s) ground allspice
- salt, to taste

Steps:

  • Cut the fish fillet into 4 pieces. Roll the lemon to release the juice, and rinse the fillets with fresh lemon juice. Pat dry.
  • Mix the berbere, allspice and breadcrumbs.
  • Rub the fillets with 2 tablespoons of the oil.
  • Dip the fillets in the buttermilk and then into the breadcrumbs, covering all sides.
  • On a baking rack, lay the fish fillets side by side; lightly coat the fillets with one tablespoon of oil;
  • In a preheated 400° oven, bake the fillets for 15 minutes or until golden brown; or in a greased, medium heat skillet, fry the fillets, turning once, until golden brown.

1 pinch mustard powder
1 tablespoon lemon juice
2 teaspoons soy sauce
fresh ground black pepper
4 -5 ounces firm white fish fillets
15 g butter

Steps:

  • Preheat oven to 325 degrees.
  • Place curry and mustard powders, lemon juice, soy sauce and black pepper to taste in a bowl and mix to combine.
  • Brush fish with lemon juice mixture and place in a greased baking dish.
  • Dot with butter and bake for 15 minutes or until fish flakes when tested with a fork.
  • Serve with tossed salad and new boiled potatoes.
