1/2 tsp. baking soda
1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate
6 Tbsp. butter or margarine
3/4 cup granulated sugar
1 tsp. vanilla
2 eggs
3/4 cup water
1-1/2 cups thawed COOL WHIP Whipped Topping
few drops food coloring
12 JET-PUFFED Marshmallows
1/4 cup colored sugar (assorted colors)
12 small round candies

Steps:

  • Heat oven to 350°F.
  • Combine flour and baking soda. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Add granulated sugar and vanilla; beat with mixer until blended. Beat in eggs, 1 at a time. Add flour mixture alternately with water, mixing well after each addition.
  • Spoon into 12 paper-lined muffin cups.
  • Bake 19 to 21 min. or until toothpick inserted in centers comes out clean. Cool in pan 10 min.; remove to wire rack. Cool completely.
  • Tint COOL WHIP with food coloring; spread onto cupcakes. Cut each marshmallow crosswise into 5 pieces with kitchen shears to resemble flower petals; press cut sides in colored sugar. Arrange 5 petals, sugar sides up, on top of each cupcake to resemble flower; fill center with candy.

18 tablespoons (2 1/4 sticks) unsalted butter, at room temperature
3 cups sugar
6 extra-large eggs, at room temperature
1 cup sour cream, at room temperature
1 1/2 teaspoons pure vanilla extract
3 cups all-purpose flour
1/3 cup cornstarch
1 teaspoon kosher salt
1 teaspoon baking soda
3/4 pound (3 sticks) unsalted butter, at room temperature
1 pound cream cheese, at room temperature
3/4 pound confectioners' sugar, sifted
1 1/4 teaspoons pure vanilla extract

Steps:

  • Heat the oven to 350 degrees F. Line muffin pans with paper liners.
  • Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on high speed, until light and fluffy. On medium speed, add the eggs, 2 at a time, then add the sour cream and vanilla. Scrape down the sides and stir until smooth.
  • Sift together the flour, cornstarch, salt, and baking soda in a bowl. With the mixer on low speed, add the flour mixture to the butter mixture until just combined. Fill the cupcake liners to the top with batter. Bake in the center of the oven for 20 to 30 minutes, until a toothpick comes out clean. Cool to room temperature.
  • For the icing, mix the butter, cream cheese, sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment, on low speed, mixing just until smooth. Spread the frosting generously on top of each cupcake.

My sister's favorite brownie recipe off the back of a Bakers Unsweetened Baking Chocolate Squares package.

4 squares unsweetened baking chocolate
3/4 cup butter
2 cups sugar
3 eggs
1 teaspoon vanilla
1 cup flour
1 cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees. Line a 13x9 inch baking pan with foil, with ends of foil extending over sides of pan. Grease foil.
  • Microwave chocolate and butter in large microwavable bowl on high 2 minutes or until butter is melted. Stir until chocolate is melted. Stir in sugar. Blend in eggs and vanilla. Add flour and nuts, mix well. Spread into prepared pan.
  • Bake 30-35 minutes or until a toothpick inserted in center comes out with fudgy crumbs. Do no overbake. Cool in pan. Remove brownies from pan using foil as handles. Cut into 24 squares.
  • CAKE-LIKE Brownies: Prepare as directed, stirring in 1/2 cup milk along with eggs and vanilla and increase flour to 1-1/2 cups.

2-1/2 teaspoons baking powder

1 tablespoon grated lemon zest
TOPPING:
1 can (16 ounces) ready-to-spread classic white frosting
1 cup confectioners' sugar
1/2 teaspoon lemon extract
Food coloring, optional
1 package (1.1 pounds) rolled fondant pastel colors multi-pack

Steps:

  • In a bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk. Stir in lemon zest., Fill paper-lined muffin cups two-thirds full. Bake at 350° for 20-24 minutes or until a toothpick comes out clean. Cool cupcakes for 10 minutes before removing from pans to wire racks to cool completely., In a small bowl, combine frosting, sugar, lemon extract and 2-3 drops food coloring if desired. Beat until smooth, scraping bowl frequently. Frost cupcakes, setting aside some frosting for decorations., Unroll fondant according to package directions.
