Categories     Cake

Time 1h30m

Number Of Ingredients 12

210 grams (1 and 1/2 cups) plain flour or all purpose flour
2 teaspoons baking powder
150 grams (3/4 cup) caster sugar or granulated sugar
1/4 teaspoon salt
120 ml (1/2 cup) vegetable oil
2 teaspoons vanilla extract
1 large egg
240 ml (1 cup) full fat sour cream
115 grams (1/2 cup or 1 stick) butter, room temperature
1 teaspoon vanilla extract
375 grams (3 cups) icing sugar or powdered sugar, sifted
60 ml (1/4 cup) full fat sour cream

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
  • In a large mixing bowl, add flour, baking powder, sugar and salt. In a separate bowl, add oil, vanilla and egg. Beat briefly with fork just to break up the egg yolk.
  • Add to dry ingredients along with the sour cream and stir to combine. The cake batter will be very thick (see photo below) - this is ok.
  • Transfer cake batter to your cake pan and gently smooth the top. Bake cake for approximately 35-40 minutes or until a skewer inserted in the middle comes out clean.
  • Leave cake to cool slightly before carefully removing from cake pan and leaving on a wire rack to cool completely.
  • To make the frosting, add butter to a large mixing bowl. Beat with an electric mixer on medium speed for 2 minutes or until smooth and creamy. Add vanilla and sugar and beat slowly until it starts to come together. Add sour cream and continue to beat until smooth.
  • Cover top of cake with sour cream frosting and serve.

SOUR CREAM POUND CAKE RECIPE

Sour Cream Pound Cake Recipe image

With sour cream as a secret ingredient, my Sour Cream Pound Cake recipe comes out moist and tender, every time.

Provided by Gemma Stafford

Categories     Dessert

Number Of Ingredients 11

1 cup (8oz/225g) butter (at room temperature)
3 cups (24oz/675g) granulated sugar
1 teaspoon vanilla extract
1 teaspoon almond extract
1 teaspoon lemon extract*
6 large eggs (room temperature)
1 cup (8oz/225g) sour cream (room temperature)
3 cups (15oz/426g) all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
Powdered sugar (for dusting)

Steps:

  • Preheat the oven to 325°F (165°C) and butter and flour a large 12-cup bundt pan. Set aside.
  • With an electric mixer, blend the butter and sugar on medium speed for 5 minutes, until pale and fluffy.
  • Add the vanilla, almond, and lemon extracts, then the eggs, one at a time, until blended. Then stir in the sour cream.
  • In a small bowl, combine the flour, baking soda, and salt, and then gradually add to the wet ingredients until thoroughly combined but taking care not to over mix.
  • Pour into the prepared pan and then firmly tap the pan onto the counter to remove any air bubbles.
  • Bake on a center rack for 65-75 minutes, or until a skewer inserted into the center comes out clean. This is a very big cake so it does take some time.
  • Let cool in the pan for 15 minutes before inverting onto a wire rack to cool completely.
  • Just before serving, dust with powdered sugar. Store in an airtight container at room temperature for up to 3 days. For longer storage, freeze for up to two months.

  • Preheat oven to 350°F (177°C). Grease and lightly flour a round or square 8-inch pan. Or simply line with parchment paper.
  • Combine the brown sugar, flour, and cinnamon together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles pea sized crumbs. Set aside.
  • Whisk the flour, baking powder, baking soda, and salt together in a large bowl. Set aside. Using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy – about 1 minute. Add the sugar and beat on high speed for 2 minutes until creamed together fairly well. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. On medium-high speed, add 1 egg at a time, beating well after each addition. Beat in the vanilla extract and sour cream. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed.
  • With the mixer on low speed, beat in the dry ingredients until just combined. Do not overmix this batter. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. The batter will be smooth and thick. Carefully spread half of the batter into the pan. Sprinkle with half of the streusel. Carefully spread the remaining half of the batter on top, then the remaining streusel. You need every last drop of batter to fill this pan. Do your best spreading it out into even layers. I use the back of a spoon to spread the batter around neatly.

For one, the acid content helps to tenderize gluten strands (the structural protein architecture in your baked goods), resulting in a more tender final product. Additionally, you'll notice that baking recipes containing sour cream often rely on baking soda as a leavener, as the acid content of sour cream allows it ...
