1-1/2 pounds boneless beef chuck roast, cut into 1-inch cubes
3 medium potatoes, peeled and cubed
3 cups water
1-1/2 cups fresh baby carrots
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 medium onion, chopped
1 celery rib, chopped
2 tablespoons Worcestershire sauce
1 tablespoon browning sauce, optional
2 teaspoons beef bouillon granules
1 garlic clove, minced
1 teaspoon sugar
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup cornstarch
3/4 cup cold water
2 cups frozen peas, thawed

Steps:

  • Place the beef, potatoes, water, carrots, soup, onion, celery, Worcestershire sauce, browning sauce if desired, bouillon granules, garlic, sugar, salt and pepper in a 5- or 6-qt. slow cooker. Cover and cook on low until meat is tender, 6-8 hours., Combine cornstarch and cold water in a small bowl until smooth; gradually stir into stew. Cover and cook on high until thickened, 30 minutes. This is by far the best vegetable beef stew that I have ever made. My grandmother gave me the recipe. My husband, who is a very picky eater, loves this recipe more than anything else I make.

3 pounds beef stew meat, cut into 1-inch pieces
⅓ cup Italian salad dressing
2 cups water
2 teaspoons beef bouillon granules
1 (14.5 ounce) can diced tomatoes, undrained
1 (10.5 ounce) can condensed beef broth
1 (8 ounce) can tomato sauce
1 clove garlic, minced
1 bay leaf
1 teaspoon salt
1 teaspoon dried oregano
½ teaspoon ground black pepper
6 small potatoes, quartered
6 carrots, cut into 1-inch pieces
1 green bell pepper, cut into 1/2-inch dice
1 onion, chopped
3 tablespoons all-purpose flour
3 tablespoons cold water

Steps:

  • Heat a large skillet or Dutch oven over medium heat; cook and stir beef stew meat and Italian dressing until meat is evenly browned, about 5 minutes. Add 2 cups water, beef bouillon, diced tomatoes, beef broth, tomato sauce, garlic, bay leaf, salt, oregano, and pepper to skillet; bring to a boil. Reduce heat to medium-low, cover, and simmer until meat is tender, about 1 1/2 hours.
  • Place potatoes, carrots, bell pepper, and onion in stew; cover and simmer over medium-low heat until vegetables are tender, about 45 minutes.
  • Combine flour and cold water in a small bowl; mix until smooth. Stir flour mixture into stew, bring to a boil; cook and stir until stew is thickened, about 2 minutes. Discard bay leaf before serving.

This variation of beef stew is hearty, easy to make and low in fat. You can substitute venison for the beef. If you want to stretch out the recipe, try serving over cooked noodles.

1 pound cubed beef stew meat
1 tablespoon vegetable oil
1 onion, thinly sliced
1 (6 ounce) can tomato paste
1 (14.5 ounce) can low fat, low sodium beef broth
1 cup chopped carrots
3 potatoes, cubed
1 sprig fresh rosemary
1 teaspoon dried thyme
1 bay leaf
¼ teaspoon crushed red pepper flakes
10 ounces button mushrooms, quartered
1 (10 ounce) package frozen green peas, thawed

Steps:

  • Remove any bits of fat from the meat. Heat the oil in a large pot over medium high heat. Saute the meat in the oil for 10 minutes, or until browned on all sides. Remove meat and set aside.
  • Add the onion and tomato paste to the pot and saute over medium heat for 5 minutes, or until onion is tender, stirring often. Return the meat to the skillet along with the beef broth, combining with the onion and tomato paste mixture. Reduce heat to low, cover and simmer for 1 to 1 1/2 hours, or until meat is tender.
  • Add the carrots, potatoes, rosemary, thyme, bay leaf and crushed red pepper flakes and simmer, covered, for another 45 minutes. (Note: It may be necessary to add some water if the stew seems too thick.)
  • Finally, add the mushrooms and the peas and allow stew to heat through, about another 10 to 15 minutes. Remove bay leaf and rosemary sprig before serving.

1 tbsp olive or rapeseed oil
2 large onions, (325g), halved and sliced
600g diced lean stewing beef
2 garlic cloves, chopped
10g dried porcini mushrooms
2 tbsp balsamic vinegar
2 tbsp tomato purée
2 tsp vegetable bouillon powder
1 tsp English mustard powder
320g carrots, finely chopped
200g large chestnut mushrooms, quartered
few fresh thyme sprigs
4 x 80g portions broccoli, cut into florets
750g swede, cut into chunks
500g potatoes, cut into small chunks

Steps:

  • Heat the oven to 170C/150C fan/ gas 3. Heat the oil in a heavy-based ovenproof casserole, then fry the onions for about 8 mins, stirring, until golden. Add the beef and garlic, and stir-fry over a high heat until browned all over.
  • Pour 500ml boiling water over the dried mushrooms in a bowl to briefly hydrate, then pour into the casserole with the liquid, and stir in the balsamic vinegar, tomato purée, bouillon and mustard. Pile in the carrots, chestnut mushrooms, thyme and some seasoning. Cover, then put in the oven for 3 hrs until the meat is tender. Towards the end of cooking, add a splash of water if the stew is looking dry.
  • When the stew is nearly ready, make the mash. Boil the swede and potatoes together for 12-15 mins in a pan over a medium heat. Drain well, then mash with a grating of black pepper. Steam or boil half the broccoli for 5 mins until tender. 4 Serve half the stew with the cooked broccoli. The remaining stew will keep chilled for up to three days and frozen for up a month. Defrost thoroughly before reheating. Reheat the stew and mash in the microwave and steam or boil the remaining broccoli on the night to help preserve the vitamins.

1 tablespoon all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 pound beef stew meat, cut into 3/4 inch cubes
1 tablespoon vegetable oil
1/3 cup chopped onion
1 garlic clove, minced
1-1/4 cups beef broth
1/3 cup white wine or additional beef broth
1 medium potato, cut into large chunks
2 medium carrots, cut into chunks
1/4 pound fresh mushrooms, halved
1 bay leaf
4-1/2 teaspoons quick-cooking tapioca
1/2 teaspoon dried thyme

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper; add beef and shake to coat. In a large saucepan, brown beef in oil. Add onion and garlic; cook and stir 2 minutes longer. Stir in broth and wine or additional broth, scraping brown bits from pan. Transfer to a greased 5-cup baking dish. Stir in potato, carrots, mushrooms, bay leaf, tapioca and thyme. Let stand for 15 minutes. Cover and bake at 350° for 1 hour. Uncover; bake 1 to 1-1/2 hours longer until meat and vegetables are tender, stirring every 30 minutes. Discard bay leaf.

1 1/3 lbs stewing beef, diced, excess fat removed
2 tablespoons all-purpose flour, seasoned with salt and pepper
3 tablespoons olive oil
2 red onions, finely chopped
2 garlic cloves, finely chopped
2 tablespoons tomato paste
2/3 cup red wine
9 ounces butternut squash, diced
2 red peppers, deseeded and sliced
2 tablespoons fresh thyme leaves
1 tablespoon balsamic vinegar
2 teaspoons Worcestershire sauce
2 cups beef broth

Steps:

  • Toss the beef in the flour. Heat 2 tbsp of the oil in a dutch oven / casserole dish over a medium-high heat. Add the beef, in batches, and cook to brown all over. Spoon into a bowl and set aside.
  • Add the remaining oil, onion and garlic to the casserole and soften for 5 minutes. Add the tomato paste and cook for 2 minutes, then add the wine and bubble for a few minutes more.
  • Return the beef to the casserole, then add the diced squash, sliced red pepper, thyme leaves, vinegar, Worcestershire sauce and beef broth. Bring to the boil, then simmer for 20 minutes until the beef is tender. Check the seasoning and serve.

4 cups unpeeled cubed red potatoes
2 cups whole baby carrots
1 cup chopped red onion
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 clove garlic, minced
1 1/2 teaspoons dried thyme
1 1/2 teaspoons dried rosemary
1 teaspoon dried tarragon
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup sliced green beans
1/2 cup dry white wine
6 boneless skinless chicken breast halves, cut into 1 inch cubes
3 cups low-fat chicken broth
3 tablespoons flour

Steps:

  • Lightly grease a large roasting pan.
  • Add potatoes, carrots, onions, vinegar, oil, garlic, 1 tsp thyme, 1 tsp rosemary, tarragon, salt, and pepper.
  • Mix well.
  • Roast, uncovered, at 425 degrees F for 30 minutes minimum, stirring after 15 minutes.
  • Add green beans and roast 10 minutes longer.
  • Meanwhile, put wine and balsamic vinegar with remaining thyme and rosemary into a large saucepan.
  • Bring to a boil.
  • Add chicken cubes.
  • Reduce heat to medium-high.
  • Cook, uncovered, for about 12 minutes, or until chicken is cooked.
  • Add roasted vegetables to saucepan.
  • Stir in 2 1/2 cups broth.
  • In a small bowl, stir together flour and remaining broth until no lumps remain.
  • Add to saucepan.
  • Cook for about 3 minutes, until stew is bubbly and thickened.
  • Serve hot.

1 tablespoon olive oil
1 small onion, chopped coarse
10 baby carrots, cut in half

1 1/2 lbs steak, good quality, cut in 3/4 inch squares
1 (14 ounce) can fire-roasted tomatoes, diced, not drained
1 (4 1/2 ounce) jar mushrooms, sliced
1 (14 ounce) can potatoes, diced drained
1/4 cup balsamic vinegar

Steps:

  • In a large fry pan or dutch oven cook the onion and carrots in the olive oil until the onion starts to brown. Add the Steak, salt and pepper cook meat until done on all sides.
  • Add Potatoes, Tomatoes and Mushrooms.
  • Add the Balsamic Vinegar
  • Bring to a boil and cook stirring often until most of the water is boiled off.
  • If the Carrots are not done you can add some more water and cook longer.
  • Serve on noodles or rice.

2 onions, roughly chopped, divided
