Baked Caprese Chicken image

This One-Pan Balsamic Glazed Caprese Chicken is baked in a flavorful balsamic glaze. It's done in only 35 minutes!

4 skinless bone-in free range organic chicken thighs
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and fresh ground black pepper (to taste)
1 tablespoon olive oil
8 oz. fresh mozzarella cheese (sliced)
2 cups grape or cherry tomatoes (cut in half)
fresh basil leaves (chopped)
Balsamic glaze

Steps:

  • Preheat oven to 400°F. In a large bowl, add chicken and season with the oregano, basil, salt, and pepper.
  • Heat a large and oven safe skillet over medium-high heat. Add the olive oil and butter. Sear the chicken for 3 to 5 minutes each side and until the chicken is golden brown on top.
  • Add 1 cup of the tomatoes in the skillet and place the skillet in the oven. Bake for about 20 minutes or until the chicken is cooked through. The chicken has to reach an internal temperature of 165 degrees F.
  • Remove the skillet from the oven. Top each chicken with mozzarella cheese. Then broil for 2-3 minutes, or until the cheese has melted completely.
  • Serve immediately, drizzled with the balsamic glaze and garnished with basil and more fresh cherry tomato if desired.

1 pound skinless, boneless chicken breasts, cut into pieces
salt and ground black pepper to taste
¼ cup balsamic vinegar
¼ cup soy sauce
¼ cup water
2 tablespoons brown sugar
1 tablespoon olive oil, or more as needed

Steps:

  • Season chicken with salt and pepper. Mix balsamic vinegar, soy sauce, water, and brown sugar together in a small bowl until sugar is dissolved.
  • Heat oil in a large skillet over medium heat. Brown chicken in the hot oil until no longer pink in the center, 3 to 4 minutes per side. Remove from the skillet and set aside.
  • Add mushrooms and onion to the skillet, adding more oil as needed. Cook over medium heat until soft, about 5 minutes. Return chicken to the skillet and pour balsamic glaze on top. Reduce heat to low and let simmer gently until sauce thickens slightly and chicken is warmed through, 3 to 4 minutes.

¼ cup olive oil
1 tablespoon minced garlic
1 teaspoon onion powder
1 teaspoon ground black pepper
½ teaspoon sea salt
4 chicken breasts, pounded flat
½ cup balsamic vinegar
1 cup fresh basil leaves
1 (8 ounce) package mozzarella cheese, sliced
2 large Roma tomatoes, sliced
16 toothpicks, or as needed
2 tablespoons olive oil

Steps:

  • Mix olive oil, garlic, onion powder, black pepper, and sea salt together in a bowl. Place chicken breasts in a shallow dish and pour marinade on top. Refrigerate at least 4 hours.
  • Heat balsamic vinegar in a small saucepan to a slow boil. Allow to boil for 15 minutes, watching carefully to prevent burning. Cook until vinegar has reduced to half the original volume. Allow balsamic reduction to cool completely.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place 1/4 cup basil leaves, 2 ounces mozzarella cheese, and 1/2 a tomato on each piece of chicken. Roll chicken up and secure with toothpicks.
  • Heat olive oil in an oven-safe skillet over medium heat. Add stuffed chicken breasts to skillet and sear on all sides, 3 to 4 minutes per side.
  • Transfer skillet to the oven and bake until chicken is no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Allow stuffed chicken breasts to rest 5 minutes. Drizzle with balsamic reduction before serving.
