BALSAMIC-GLAZED TURKEY MEATBALL SUBS WITH PROVOLONE
Instead of being simmered in a tomato sauce, the meatballs for these tasty sub sandwiches get tons of flavor from a tangy-sweet glaze made with balsamic vinegar and chicken broth. A splash of soy sauce gives the glaze a touch of umami while the melted provolone cheese and peppery arugula in the subs round out all the flavors.

- Combine the turkey, breadcrumbs, parsley, scallions, garlic, salt and pepper in a large bowl and mix well. Using a 2-tablespoon scoop, scoop lightly packed mounds of the mixture onto a plate or baking sheet, then roll them into neat balls.
- Heat the olive oil in a large nonstick skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned but not cooked through, 6 to 8 minutes.
- Whisk the broth, vinegar and soy sauce together in a small bowl. Pour the mixture into the skillet with the meatballs and bring to a boil over high heat. Reduce the heat to medium and simmer, basting occasionally, until the meatballs are cooked through and the sauce has thickened, 8 to 10 minutes.
- Meanwhile, preheat the broiler with a rack about 8 inches from the heat source. Arrange the split hoagie rolls on a large rimmed baking sheet and top each with 3 slices of provolone. Broil until the cheese is melted and the buns are lightly toasted on the edges, 1 to 2 minutes. Fill the rolls evenly with the arugula, if using, and the meatballs, spooning some of the sauce on the subs. Top with Parmesan or pecorino, sprinkle with parsley and serve.

I found this recipe on the back of a package of ground turkey from Butterball. This has several unique combination of food and seasonings. Try it you will enjoy it!

- Combine turkey, apple, salt and garlic powder in a medium bowl.
- Shape into 16 meatballs, about 1 1/2 inches in diameter.
- Heat oil in a large skillet over medium heat.
- Add meatballs; cook and turn until browned, about 8 minutes.
- Stir together jelly and mustard in a small bowl; spoon over meatballs.
- Simmer an additional 8-10 minutes or until glazed, turning meatballs several times.
- Sauce will thicken as it cooks.

- In a large bowl, combine the onion, green pepper, garlic, parsley and seasonings. Stir in 1/2 cup spaghetti sauce. Crumble turkey over mixture and mix well., Shape into 1-in. balls. Place on a greased broiler pan. Broil 4-6 in. from the heat for 8 minutes. Turn and broil 3-5 minutes longer or until meat is no longer pink., Transfer the meatballs to a large saucepan; add remaining spaghetti sauce. Bring to a boil. Reduce heat; cover and simmer for 5 minutes or until heated through. Serve meatballs and sauce on buns. Sprinkle with cheese.

HOMEMADE TURKEY MEATBALL SUBS RECIPE

- Preheat oven to 425 degrees. In a large bowl, mix together turkey, bread crumbs, basil, oregano, parsley, garlic salt, Parmesan cheese, egg, olive oil, and steak spice. Form meat mixture into 1-1/2" meatballs and place on a greased cookie sheet. Bake for 15 minutes, or until cooked through.
- Slice buns in half and place on a baking tray. Place two slices of provolone cheese on the top half of each bun. Preheat oven to broil and lightly toast buns until golden brown and cheese has melted.
- Warm marinara sauce in a large saucepan over low-medium heat or in the microwave until heated through.
- Top the bottom half of each toasted bun with 3-4 meatballs, cover in marinara sauce and replace the top half of each bun.

- Make Tomato Sauce:
- Purée tomatoes with their purée in a blender.
- Heat oil in a large heavy pot over medium-high heat until it shimmers, then sauté onion until golden, 5 to 6 minutes. Add garlic and sauté 1 minute. Add tomato purée, sugar, and salt and simmer, uncovered, stirring occasionally, until thickened, 30 to 35 minutes.
- Make Meatballs While Sauce Simmers:
- Stir together bread crumbs and milk in a large bowl and let stand for 10 minutes.
- Stir in eggs, cheese, garlic, parsley, oregano, and salt, then add turkey and blend with your hands until just combined well (do not overmix).
- Form 1 1/2-tablespoon portions into meatballs and arrange on 2 well-oiled large, heavy, rimmed baking sheets.
- Make Garlic Bread:
- Stir together butter, oil, garlic, salt, cheese, parsley, and pepper in a bowl. Spread about 2 rounded teaspoons garlic butter onto both split sides of each bun. Arrange buns, buttered sides up, on a large baking sheet.
- Broil Meatballs and Garlic Bread:
- Preheat broiler.
- Broil meatballs 3 to 4 inches from heat, turning over once, until golden and just cooked through (165°F on instant-read thermometer), 5 to 8 minutes.
- Broil buns, buttered sides only, until golden, 30 seconds to 1 minute, watching closely (buns brown fast).
- Assemble Heroes:
- Spoon some sauce on each bun, then top with 4 meatballs (depending on size of buns), and drizzle with more sauce.

- Preheat oven to 425 degrees. Line a large baking sheet with foil and spray with cooking spray. Combine all meatball ingredients in a large bowl and, using clean hands, mix until combined. Using about 1/3 cup or a ice cream scoop measure out the meatball mixture and flatten into a disk shape. Add a piece of provolone to the center and fold the meat around it rolling into a ball shape. Add to pan and repeat until all the balls are made, approximately 24 total. Bake for 15-20 minutes until cooked through.
- For the marinara sauce, heat the olive oil in a large dutch oven or skillet over medium-high heat. Add the onions and cook for 5 minutes, then add the garlic and salt and cook for an additional minute. Add the remainder of the ingredients (through tomatoes) and bring to a simmer. Cook over medium heat for about 15 minutes. Adjust seasoning as needed.
- Add the cooked meatballs to the sauce and simmer on medium-low heat for 30 minutes. If making ahead, cool slightly, cover, and refrigerate. Reheat over medium heat until warmed through. Serve with spaghetti, if desired.
