HONEY-BALSAMIC CHICKEN
Short on ingredients, this marinated chicken bakes up tender and flavorful. It's good enough for company. Serve with rice and salad to complete the meal.

Steps:
- Beat balsamic vinegar, olive oil, honey, thyme, and rosemary together in a bowl until smooth; pour marinade into a resealable plastic bag.
- Season chicken thighs with salt and black pepper; add to marinade in plastic bag. Squeeze bag to remove air and seal. Marinate chicken in refrigerator for 2 to 8 hours.
- Preheat oven to 375 degrees F (190 degrees C).
- Pour chicken and marinade into a baking dish.
- Bake chicken in preheated oven until no longer pink at the bone and the juices run clear, 35 to 40 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

BALSAMIC CHICKEN WITH THYME
This recipe came from Woman's Day magazine several years ago. It is easy to make and I have served it to guests with to great reviews.

Steps:
- Mix flour and 1/2 tsp each salt and pepper on a plate.
- Add chicken; turn to coat.
- Shake off excess.
- In a large heavy skillet, heat oil over medium heat.
- Add chicken and cook, turning once, 15 minutes or until browned and cooked through.
- Remove to a plate; cover to keep warm.
- Add onion to skillet and saute 1 to 2 minutes until lightly browned.
- Add broth, vinegar, thyme and remaining 1/4 tsp each salt and pepper.
- Bring to a boil and cook, stirring often, 7 minutes or until onions are soft and sauce is syrupy.
- If the onion isn't soft after cooking 7 minutes, add a little more broth and continue cooking until it is.
- To serve: Place chicken on serving plates and spoon on onions and sauce.

- Whisk together all ingredients except chicken. In a bowl, toss chicken with 1/3 cup vinegar mixture; let stand 10 minutes., Grill chicken, covered, over medium heat or broil 4 in. from heat until a thermometer reads 170°, 6-8 minutes per side. Drizzle with remaining vinegar mixture before serving.

- Position a rack in the center of the oven and preheat the oven to 350ºF. Heat the butter and olive oil on medium-high heat in a skillet. Add the chicken breasts season each side with salt and pepper and cook 3 minutes per side. Transfer the chicken to an oven-safe baking dish and bake uncovered for 20-25 minutes or until the juice run clear.
- When 10 minutes of baking time remain, prepare the balsamic mushrooms. Heat the same skillet used to brown the chicken over medium-high heat. Add the onions and mushrooms. Saute for 1 minute before adding in the roasted garlic; cook for an additional minute. Add the balsamic vinegar, red pepper flakes, and chopped thyme. Heat the balsamic vinegar through for 1 minute then add in 1/2 cup of water. Continue to cook until the liquid reduces to about half. Adjust the seasonings to taste. Serve warm with chopped chives or parsley.
