8 Tablespoons Unsalted Butter ((softened))
2 Eggs ((lightly beaten))
1 Teaspoon Vanilla Extract
3 Bananas ((ripe & medium-sized bananas) - 3 medium bananas equal roughly 1 cup of mashed bananas.)
1 Cup Light Brown Sugar ((packed cup))
2 Cups Flour ((all-purpose))
1/2 Teaspoon Salt
1 Teaspoon Baking Powder ((aluminum free))
1 Teaspoon Baking Soda
1/2 Cup Chopped Walnuts or MINI Chocolate Chips ((optional))

Steps:

  • Prep Time - 10 minutes
  • Baking Time - 1:40 hours
  • Bread Machine Settings - Sweet Quick Bread, Light Color, 2 lb
  • Beat the eggs.
  • Mash bananas with a fork.
  • Soften the butter in microwave.
  • Add the eggs, butter & bananas into the bread pan and then add the other ingredients. Try to follow order of the ingredients listed above so that liquid ingredients are placed in the bread pan first and the dry ingredients second. Be aware that the bread pan should be removed from the bread machine before you start to add any ingredients. This helps to avoid spilling any material inside the bread machine. The bread machine should always be unplugged when removing the bread pan.
  • Put the bread pan (with all of the ingredients) back into the bread machine, close the bread machine lid and then plug in the bread machine.
  • Enter the bread machine settings (Sweet Quick Bread, Light Color) and press the start button. FYI - Before making this recipe, please read the tips section below for more information regarding the sweet quick bread setting used to make banana breads. The setting may be called "quick bread", "quick bread/cake", "cake", etc. However, some manufacturers use the "quick bread" setting are for rapid sandwich-type breads that use yeast (and not for quick breads such as banana bread that use baking powder/soda). Therefore, this setting can be very confusing... but the tips section below will help you to find the right setting to use on your machine. You need to enter the correct banana bread setting used by your SPECIFIC bread machine model or the banana bread could be under or overcooked.
  • Optional - If you want to add chopped walnuts or mini chocolate chips to enhance this basic banana bread recipe, please add them after the first bread machine mixing cycle and before the second mixing (final mixing).
  • When the bread machine has finished baking the bread, unplug the bread machine, remove the bread pan and place it on a wooden cutting board. Use oven mitts when removing the bread pan because it will be very hot!
  • Optional - Use a long wooden skewer to test if the banana bread is completely cooked. Wear oven mitts as the bread pan will be hot. See the tips section for more details on this classic "toothpick" test.
  • After removing the bread pan from the bread machine, you should let the banana bread stay within the warm bread pan on a wooden cutting board for 10 minutes (as this finishes the baking process) before you remove the banana bread from the bread pan. Wear oven mitts.
  • After 10 the minute "cooldown", you should remove the banana bread from the bread pan and place the banana bread on a wire cooling rack to finish cooling. Use oven mitts when removing the bread.
  • Don't forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle could be hot.
  • You should allow the banana bread to completely cool before cutting. This can take up to 2 hours. Otherwise, the banana bread will break (crumble) more easily when cut.

1 teaspoon baking powder
½ teaspoon baking soda
¾ cup white sugar
3 tablespoons vegetable oil
2 eggs
2 bananas, peeled and halved lengthwise

Steps:

  • Place ingredients in the pan of the bread machine.
  • Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing. Smooth out the top of the loaf with the rubber spatula.
  • Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is batter on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to ensure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. Remove the bread to cool completely on a wire rack.

1 cup Pecans/Walnuts/Chocolate Chips (whichever you prefer, optional)

Steps:

  • Setup your bread machine and add ingredients into the bread pan starting with liquids, then fats, then dry ingredients.
  • Add your fruits/nuts/chocolate chips to the fruit dispenser on your machine if desired. If your bread machine does not have a fruit/nut dispenser, check your manual for the appropriate time to add to the mix. This is typically ~10 minutes into the kneading cycle when the machine beeps.
  • Bake the bread using the "No Yeast" setting. Since there is no yeast in the recipe there is no need to wait for the yeast to rise, and the entire baking process should only take about 90 minutes.
  • Once finished, remove the loaf from the bread pan and allow to cool for ~20 minutes. Enjoy with butter, honey, peanut butter, or just on its own!

Steps:

  • Combine bananas and sour cream or buttermilk into a small bowl and mash together with a fork until well blended and creamy. The mixture can be used immediately or stored in a refrigerator overnight.
  • Place the banana mixture and the rest of the ingredients in the bread pan in the order listed.
  • Set the program to the Quick Bread/Cake cycle.
  • Set the crust setting to medium if offered.
  • Press Start.
