They are so delicious - you wouldn't believe that something with prunes would be so good, but they are! And they are low in fat - 1 muffin is less than 5grams of fat. They are so moist and not rubbery or chewy! A definite must try. I had the whole lot devoured in a day.

½ cup white sugar
¼ cup vegetable oil
1 egg
1 cup mashed banana
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ teaspoon ground cinnamon
1 cup chopped pitted prunes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a muffin pan, or use paper liners.
  • In a large bowl, combine sugar, oil and eggs. Beat until smooth. Blend in banana and vanilla. Mix together flour, baking powder, baking soda, salt and cinnamon, then stir into egg mixture until just moistened. Mix in the prunes. Spoon into muffin cups.
  • Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

This my own concoction, It contains more bran than flour and prunes as well. This should get you "going" and it's so good for you.Nothing has to be exact in the measurements. For extra nutrition I added ground flax seed and ground Salba, also Kretchmer wheat germ. This is not a sweet muffin, if you want more sugar just increase the brown sugar. If you don't know what Salba is I found this explanation very informative. The zaar computer will not accept Salba as an ingredient so I'm adding here. 1/8 cup Salba (optional Salba® is packed with more energizing nutrition than any other vegetable source, even Flax. 1 1/2 cups natural bran
1 cup flour (I use whole wheat)
1/2 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
2 eggs
4 bananas, to make about 1 3/4 cups when mashed
3/4 cup milk
1/2 cup oil, like canola is good
1 1/2 cups prunes, chopped
1/2 cup nuts, chopped (optional)
1/8 cup flax seed, ground (optional)
1/8 cup wheat germ (optional)

Steps:

  • Turn oven on to 375°.
  • Combine all dry ingredients in large bowl.
  • Mix cut up prunes into flour mixture using your hands so you can separate the pieces and each piece gets coated with flour mixture.
  • You can mash all bananas or you can do what I do and slice one of them.
  • In smaller bowl mix all wet ingredients including bananas until well mixed.
  • Add wet ingredients to dry and fold to mix gently.
  • Don't over mix.
  • Spoon into paper lined or greased muffin tins.
  • I make 6 giant muffins or you can make 12 ordinary size muffins.
  • Baking time will vary from about 20 minutes for regular size to 30 minutes for giant size.

2/3 cup packed dark brown sugar
1/2 cup vegetable oil
1/2 cup sour cream
2 ripe medium bananas, mashed
2 large eggs
1 teaspoon pure vanilla extract
Turbinado sugar, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with paper liners. Whisk together the flour, bran flakes, baking powder, cinnamon, salt and baking soda in a large bowl. Whisk together the brown sugar, oil, sour cream, bananas, eggs and vanilla in a medium bowl. Add the wet mixture to the flour mixture and gently fold until just incorporated (a few lumps are OK). Evenly divide the batter among the muffin cups; sprinkle with turbinado sugar. Bake until the muffins are golden brown, bounce back when pressed and a toothpick inserted in the center comes out clean, 20 to 22 minutes. Let the muffins cool in the pan for a few minutes, then remove and cool completely on a rack. Store in an airtight container at room temperature for up to 3 days. 1 cup oat bran
1/2 cup whole wheat flour
1 tablespoon ground cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon ground nutmeg
1/4 teaspoon allspice
2 eggs
1 cup orange juice
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup vegetable oil
1 cup mashed ripe bananas (2 to 3 medium)
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the first eight ingredients. In another bowl, beat the eggs, juice, sugars and oil. Stir into dry ingredients just until moistened. Fold in bananas and nuts. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Steps:

  • Grease muffin pans or line with paper bake cups; set aside.
  • In medium mixing bowl combine oil, molasses, brown sugar and egg; beat well.

3 medium bananas
1 cup all-bran cereal
2/3 cup 2% low-fat milk
1/4 cup light brown sugar, packed
1/4 cup canola oil
1 large egg
1/3 cup pecans, chopped
1/3 cup raisins
1 1/2 cups unbleached flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Put bananas in large bowl and blend with an electric mixer until well mashed. Add bran cereal and milk, and let stand for 5 minutes.
  • Add brown sugar, oil, and egg to mixer bowl and blend well. Add pecans and raisins, and blend inches.
  • In another bowl, combine flour, baking powder, salt and spices. Stir into the bran mixture until just combined.
  • Spoon batter into greased muffin tins until 2/3 full. Bake at 375 for 20-25 minutes.
