BANANA AND CHOCOLATE MUFFINS



Banana and chocolate muffins image

Banana and chocolate is an ever-popular combination, and these muffins can be ready in just 20 minutes to satisfy your sweet cravings.

Number Of Ingredients 14

75g/2¾oz unsalted butter
275g/9¾oz plain flour
1 tsp bicarbonate of soda
2 tsp baking powder
¼ tsp ground cinnamon
120g/4¼oz golden caster sugar
100g/3½oz dark or milk chocolate chips (or a mixture)
¼ tsp fine salt
2 tbsp flavourless oil, such as sunflower or light rapeseed, plus extra for greasing
100ml/3½fl oz milk
1 large free-range egg
1 tsp vanilla extract
250g/9oz ripe banana (about 3 large bananas), mashed
seeds or chopped nuts, for decorating (optional)

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7 and grease a 12-hole muffin tin using a little of the oil (or line the holes with paper cases).
  • Melt the butter in a microwave or small saucepan then leave to cool for a couple of minutes.
  • Combine the flour, bicarbonate of soda, baking powder, cinnamon, sugar, chocolate chips and salt in a large bowl.
  • Place the melted butter, oil, milk, egg and vanilla in a separate large bowl and whisk until well mixed. Stir in the mashed banana and then tip into the bowl of dry ingredients. Fold together gently with a big metal spoon or spatula until all the flour is just wet but before the mixture becomes smooth - do not over mix.
  • Divide the mixture between the holes in the muffin tin. Top with the seeds or nuts, if using. Bake for 13-15 minutes until golden on top and a skewer poked into the centre of a muffin comes out clean. Leave to cool on a wire rack and eat slightly warm or at room temperature. They can also be stored in an airtight container for up to two days or in the freezer for up to two months.

1-1/2 cups all-purpose flour
2/3 cup sugar
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 large egg, room temperature
1-1/3 cups mashed ripe bananas (about 3 medium)
1/3 cup butter, melted
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips

Steps:

  • Preheat oven to 375°. In a large bowl, whisk flour, sugar, baking soda, cinnamon and salt. In another bowl, whisk egg, bananas, melted butter and vanilla until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups three-fourths full. Bake 17-20 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

2 bananas
1 large egg, room temperature
⅓ cup vegetable oil
½ cup sugar
¼ cup whole milk
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon kosher salt
¼ cup chocolate sprinkles
nonstick cooking spray, for greasing pan
½ cup semisweet chocolate chip
½ cup heavy whipping cream, hot

Steps:

  • Preheat the oven to 300°F (150°C).
  • If your bananas aren't already very ripe, place them on a baking sheet lined with parchment paper. Bake for 15-20 minutes, until they are nearly black. Be careful to not overcook or the bananas will leak.
  • Let the bananas cool to room temperature. Increase the oven temperature to 350°F (180°C).
  • Peel the bananas, then place them in a large bowl. Mash bananas using a hand mixer or fork.
  • Add the egg, vegetable oil, sugar, milk, and vanilla. Beat until combined.
  • Sift the flour, baking powder, baking soda, and salt into the banana mixture. Beat until just combined, being careful to not overmix.
  • Use a rubber spatula to gently fold the chocolate sprinkles into the batter.
  • Grease a 12-cup muffin tin with nonstick spray. Divide the batter among the cups.
  • Bake for 20-25 minutes, until the tops are lightly browned and a toothpick inserted in the center of a muffin comes out clean.
  • Place the chocolate chips in a heatproof liquid measuring cup. Pour over the hot heavy cream. Let sit for 1 minute, then stir until the chocolate is melted and smooth.
  • While the muffins are still warm, use the back of a wooden spoon to push down a hole into the center of each muffin. Allow to cool to room temperature.
  • Fill the muffins with the chocolate ganache.
  • Chill the muffins in the fridge for at least 1 hour, until the center has set.
  • Enjoy!

1 teaspoon coarse salt

1 stick unsalted butter, melted
1 large egg
1/4 cup milk
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, egg, butter, and milk. Stir wet ingredients into dry ingredients then stir in chocolate chips.
  • Divide batter evenly between prepared cups, adding a scant 1/4 cup to each. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

¾ cup white sugar
6 tablespoons butter, softened
6 tablespoons ground flax seed
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3 ripe bananas, mashed
¾ cup chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray muffin cups with cooking spray or line with paper liners.
  • Beat sugar, butter, flax seed, vanilla, and eggs together in a bowl with an electric mixer until smooth and creamy.
  • Sift flour, salt, and baking soda together in a separate bowl. Mix creamed sugar mixture, 1/2 cup at a time, into the flour mixture until fully incorporated and batter is stiff. Beat bananas into batter with an electric mixer on low. Fold chocolate chips and walnuts into batter; spoon into the prepared muffin cups, filling each cup 3/4 full.
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 25 minutes. Cool in the tins for 10 minutes before removing to cool completely on a wire rack.

This recipe is from one of those little free booklets that they give out at the supermarket. I had some ripe bananas that I wanted to use up and these sounded perfect. They combine the appeal of chocolate with the goodness of bananas and whole wheat flour.

1 1/4 cups bananas, mashed (about 3)
1 cup milk
1 egg, beaten
3/4 cup granulated sugar
1/4 cup butter, melted
2 teaspoons vanilla
2 teaspoons lemon juice
1 cup whole wheat flour
3/4 cup all-purpose flour
1/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
12 banana chips

Steps:

  • Preheat the oven to 375 degrees F.
  • Prepare muffin tin by lining with paper muffin cups or greasing well.
  • Mash the bananas well and combine with the milk, egg, sugar, butter, vanilla and lemon juice.
  • Stir the whole wheat flour together with the all-purpose flour, cocoa, baking soda and salt in a separate bowl.
