EASY-MADE GERMAN QUARK
This is a German product that can be thought of as a cross between cream cheese and yogurt. It's a primary ingredient for German cheesecake.

- Preheat oven to 200 degrees F (95 degrees C). Line a colander with cheese cloth and place over a large pot in the sink.
- Gently mix buttermilk and cream together in a 2-quart ceramic casserole dish.
- Cook in the preheated oven for 2 hours and 15 minutes.
- Pour buttermilk mixture into the prepared colander; drain for 45 to 60 minutes. Transfer drained cheese to a bowl and beat with an electric hand mixer until smooth and creamy. Store in the refrigerator.

QUARK (SOUR FRESH CHEESE)
I like spreading Quark on my morning slice of bread and topping it with jam, but you can also mix it with salt and herbs and dollop it next to boiled potatoes for a light meal. Using buttermilk will result in skim Quark, which is best for baking recipes. If you want a creamier Quark to eat as is, simply stir a little heavy cream into the Quark to loosen and enrich it. (Mixed with high-quality fruit preserves, this makes for a luxurious little snack.)

- Preheat the oven to 150°F/65°C. Pour the buttermilk into a baking dish and cover tightly with aluminum foil or a lid.
- Place the baking dish in the oven and bake for 8 to 12 hours. When the buttermilk is ready to drain, the solids will have separated from the whey, either in soft clumps or in one lightly set uniform mass.

I discovered Quark at a farmers market and instantly fell in love, but it's been difficult to find in stores. This recipe is a fine replacement for more expensive creme fraiche and pairs well with fresh fruit for dessert.

- Bring milk to a simmer in a saucepan; remove from heat and cool to room temperature.
- Whisk buttermilk into milk; let sit at room temperature, 8 hours to overnight. Strain mixture through cheesecloth over a bowl in the refrigerator, 8 hours to overnight.

QUARK CHEESE
I have been unable to find Quark at our local supermarket so decide to look for a recipe on the internet. Voila, it was there on a blog by Peanut Butter Boy. Sounds easy enough and I can't wait to try it. Hopefully I'll be able to use it instead of Ricotta which it ridiculously expensive in NZ as it is imported from Australia. Have now made this recipe and can confirm that it was extremely easy to make and totally delicious. No more store bought cheeses for me.

- Set oven to 150F (65 degrees C). Pour buttermilk into the baking dish and cover with a lid or tinfoil. Place the dish in the oven and let it sit overnight, or about 8-12 hours.
- In the morning, remove the dish from the oven. Place the strainer in the sink or a large pot and line it with the linen or cheese cloth. Spoon or pour the contents of the baking dish into the strainer. You'll notice that the curd (solid) has partially separated from the whey (liquid). Cover the cheese with the ends of the cloth and let it drain in the sink for 30-60 minutes. To speed up the process, fill a bowl or sealed container with water and place on top to weigh it down. 30 min seemed sufficient.
- Place the contents into a bowl and refrigerate. Once chilled, add milk, 2Tbsp at a time until it is smooth and easy to spread with a texture similar to creamy ricotta cheese.
- Add salt to taste.
- Makes 8oz or about 1 to 1-1/2 cups.

QUARKTORTE - SWISS QUARKCHEESE TORTE

The author of the recipe posts this, " In Switzerland as well as in Germany or Austria (Käsekuchen), we like to eat a kind of lighter version of cheesecake called "Quarktorte". It is made with "quark cheese" (see infos), a kind of fresh cheese of central European origin that is also known as "curd cheese". This tart is sometimes prepared without any kind of pastry base. In some ways, it is a little similar to the Polish "Sernik", the "Brocciù Tart (Fiadone)" of the Corsicans or the Italian "Ricotta Tart"... This "Quarktorte" is really delicious. I highly recommend it to all those who love cheesecakes and tarts. Although, it is extremely light and fluffy textured and doesn't contain as much fat as it's American cousin, this tart is a real stomach filler! But on the other hand, it is particularly enjoyable with it's tangy and fresh cheese taste, lemony aroma and it's honeyed little raisins. Delicate, sweet without exaggeration and ever so scrummy! - Make the pastry as directed in the recipes given above.
- Place the pastry in the prepared tart pan and prick with a fork.
- Refrigerate while you are preparing the filling.
- Method for the filling:.
- Preheat the oven to 200° C (400°F).
- With the help of a whisk, mix together the Magerquark, 3 egg yolks, 1 (entire) egg, baking powder, cornstarch, sugar (40g), vanilla extract, milk and lemon rind until well blended.
- In another bowl, beat the 3 egg whites and slowly incorporate the leftover sugar (90g) until fluffy and stiff.
- Gently fold the beaten egg white into the Magerquark mixture so that the filling is homogenous.
- Sprinkle the raisins evenly over the base of the tart.
- Pour the filling into the prepared pastry case.
- Bake for 15 minutes at 200° C (400° F), then reduce the heat to 180° C (350° F) and continue baking for 30-45 minutes until the filling is set.
- Cool in the oven with the door slightly cracked open.
- After an hour remove from the oven and let cool completely before serving.

- Put the milk in a large sterilized pot over medium heat. Slowly heat it to 77 F. Don't try and speed up this process or the milk will not set properly. Stir the milk gently with a sterilized stainless steel spoon to prevent scorching. Remove the pot from the heat.
- Sprinkle the mesophilic culture evenly over the surface of the milk and let it sit for 5 minutes to rehydrate. Use a sterilized stainless steel skimmer, moving it in a gentle up-and-down motion to draw down and mix in the culture, avoiding breaking the surface of the milk. Dilute the rennet in 1/4 cup of cool, non-chlorinated water. Give the milk a gentle stir and while it's swirling, add the diluted rennet to the milk. Immediately stir the milk with the skimmer using the same up-and-down motion. Do this for about 2 minutes, making sure the rennet is thoroughly mixed throughout the milk, otherwise the milk will not set properly.Cover the pot and let it sit in a draft-free location at room temperature for 24 hours (wrap the pot in a large towel if needed).After 24 hours check the milk. Tip the pot carefully to drain off the whey on the surface.
- If the milk is properly set it will have pulled away from the sides. Use a long, sterilized knife to check for a clean break in the thickened milk (see pics in blog post). If you can cut through it and get a clean break the milk is properly set. If it isn't, let it continue to sit and check again after 30 minutes. Repeat if needed. Use a long, sterilized knife to cut 2-inch-wide strips from top to bottom through the curd. Then follow the same process to cut 2-inch strips horizontally from side to side. Now that you've used a long knife to cut the curd vertically, next use the skimmer to cut the curd horizontally into cubes.
- Place the curds in a colander lined with cheesecloth. Depending on the size of your colander you may need to work in batches. Let the curds drain for about 4 hours (it may be less depending on the mesh size of your cheesecloth). Let the curds drain until you get a thick, spreadable consistency. Transfer the finished quark to a bowl, give it several good stirs to break up any lumps, cover and refrigerate until ready to use. It will keep in the fridge for up to 2 weeks.
