Strawberry Banana Chocolate Hazelnut Toaster

Here's what you need: large flour tortilla, chocolate hazelnut spread, banana, strawberries

1 large flour tortilla
2 tablespoons chocolate hazelnut spread
½ banana, thinly sliced
2 strawberries, thinly sliced

Steps:

  • Spread the chocolate hazelnut spread evenly over the tortilla.
  • Place the banana and strawberry slices on the top half of the tortilla.
  • Fold the tortilla in half from the bottom, then fold in the sides, being careful not to tear the tortilla.
  • Toast on medium-high, until golden brown. Watch to make sure it doesn't burn. Let cool for 1-2 minutes before removing from the toaster.
  • Enjoy!

Rustle up a moreish chocolate chip banana bread - it's a great way to use up ripe bananas that are lingering in the fruit bowl

140g unsalted butter, softened, plus extra for the tin
140g golden caster sugar
2 eggs, beaten
1 tsp vanilla extract
140g self-raising flour
1 tsp baking powder
3 ripe bananas, peeled and mashed
100g chocolate chips

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 900g loaf tin and line the base and sides with baking parchment. Beat the softened butter and sugar together using an electric whisk until light and fluffy. Combine the egg and vanilla extract and pour this in, a little at at time, mixing between each addition. Fold in the flour, a pinch of salt, the baking powder, mashed banana and all but a handful of the chocolate chips.
  • Scrape the mixture into the prepared tin and scatter over the rest of the chocolate chips. Bake for about 50 mins, or until puffed up and cooked through - a skewer inserted into the middle of the loaf should come out clean. Leave to cool in the tin for 10 mins, then remove to a wire rack and leave to cool completely. Slice before serving. Will keep in an airtight container for up to five days.

1/2 tsp. cinnamon sugar
1 flour tortilla (8 inch)
1 oz. BAKER'S Semi-Sweet Chocolate, coarsely chopped
2 Tbsp. chopped PLANTERS Dry Roasted Peanuts
1/2 banana, sliced

Steps:

  • Heat grill to medium heat.
  • Fold up sides of 16-inch-long sheet of heavy-duty foil to resemble shallow pan; spray with cooking spray. Sprinkle with cinnamon sugar. Place on grill grate.
  • Place tortilla on foil; heat 30 to 40 sec. or until softened.
  • Sprinkle chocolate and nuts onto half the tortilla; top with bananas. Fold tortilla in half to enclose filling.
  • Grill 3 to 4 min. or until chocolate is melted. Turn quesadilla; grill 1 min. Cut into 4 wedges to serve.

2 (8 inch) flour tortillas
1 banana, sliced
cooking spray

Steps:

  • Spread half the peanut butter onto one side of 1 flour tortilla; top with sliced banana. Spread the remaining peanut butter on one side of the other flour tortilla; place tortilla, peanut butter-side down, on top of banana slices.
  • Spray cooking spray into a skillet and place skillet over medium heat. Place quesadilla into the heated skillet; cook until lightly browned, about 3 minutes per side. Cut quesadillas in half to serve.

These are delicious dessert quesadillas! An Emeril recipe from his episode on tortillas. My young nephew loves these, but we did too! I serve drizzled with store-bought caramel sauce or chocolate sauce. This makes 10 servings, so you may want to scale down the recipe.

1 lb cream cheese, at room temperature
1/2 cup confectioners' sugar
2 medium ripe bananas, peeled
10 flour tortillas (7 inches in diameter)
4 tablespoons butter
2 1/2 cups caramel sauce, warm,recipe follows
4 medium bananas
whipped cream (optional, for serving)

Steps:

  • In the bowl of an electric mixer, beat the cream cheese until smooth.
  • Add the sugar and bananas, continue to beat until smooth.
  • Spread 1/4 cup of the filling over half of each tortilla.
  • Fold the other half over the filling and press slightly.
  • Place on a large plate and cover with plastic wrap.
  • Refrigerate until the filling sets, about 30 minutes.
  • In a large saute pan, over medium heat, melt 1 tablespoon of the butter.
  • Pan-fry the tortillas in batches, 3 at a time, until golden on each side, about 2 minutes per side.
  • Repeat the above process with the remaining butter and filled tortillas.
  • To serve, slice each filled tortilla into thirds.
  • Arrange the slices in the center of each serving plate.
  • Spoon a 1/4 cup of the warm caramel sauce over each plate.
  • Peel the bananas and slice 1/4-inch thick.
  • Garnish each plate with the sliced bananas and whipped cream, if desired.
