1 1/3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 cup banana, mased (about 2 large ripe bananas)
3/4 cup granulated sugar
3 tablespoons vegetable oil
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1 large egg
1/4 cup dark brown sugar, packed
1 tablespoon water
2 teaspoons butter
2 tablespoons macadamia nuts, chopped and toasted
2 tablespoons sweetened flaked coconut

Steps:

  • Preheat oven to 350°.
  • Coat a 9-inch round cake pan with cooking spray; line bottom of pan with wax paper. Coat wax paper with cooking spray.
  • Lightly spoon flour into dry measuring cups; level with a knife.
  • Combine flour, salt, baking powder, and baking soda in a bowl, stirring with a whisk.
  • Combine banana and next 5 ingredients (banana through egg) in a bowl; beat with a mixer at medium speed for 1 minute or until well blended.
  • Add flour mixture to banana mixture, and beat until blended. Pour batter into prepared pan.
  • Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean.
  • Cool in pan 10 minutes on a wire rack; remove from pan.
  • Carefully peel off wax paper.
  • Combine brown sugar, water, and butter in a small saucepan; bring to a boil.
  • Cook 1 minute, stirring constantly.
  • Remove from heat; stir in nuts and coconut.
  • Spread over cake.
  • Serve cake warm.

½ cup butter or margarine
1 cup white sugar
2 eggs
2 ripe bananas, mashed
1 ¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
  • Beat butter and sugar with an electric mixer in a large bowl until light and fluffy; beat in eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Stir bananas into butter mixture.
  • Sift flour, baking soda, and salt together in another bowl. Stir flour mixture into banana mixture until batter is evenly blended. Pour batter into prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.

1 1/4 cups dark chocolate, chopped
1/3 cup dark brown sugar, packed
1/2 cup walnuts, chopped
1 tablespoon cinnamon
1 1/2 cups flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup brown sugar
2 large eggs
1 1/3 cups bananas, ripe and mashed
2 tablespoons instant coffee granules, mixed with
1 tablespoon hot water
3 tablespoons buttermilk

Steps:

  • Pre-heat oven to 350.
  • Grease and flour 9 1/2 x 4 inch tube pan.
  • Stir chopped chocolate, brown sugar, walnuts and cinnamon in small bowl.
  • Stir till blended, set aside.
  • Sift flour, baking soda, baking powder and salt in a medium bowl.
  • Set aside.
  • Cream butter in a large bowl using an electric mixer till light and creamy.
  • Add sugar gradually.
  • When mixture is fluffy, add egg 1 at a time.
  • Beat in mashed bananas, coffee and buttermilk.
  • Add in dry ingredients and blend well.
  • Pour half of batter in prepared tube pan.
  • Sprinkle half of the streusel topping.
  • Repeat with remaining batter ending with streusel topping.
  • Bake banana coffeecake about 45 minutes.
  • Till tester comes out clean when dipped in the center.
  • Cool in pan on wire rack.
  • Slice and Serve warm.
  • Deeeelicious!

1 cup half-and-half cream or 1 cup milk
4 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
4 1/2 cups sliced bananas
2/3 cup packed brown sugar
2/3 cup flour
1 1/2 teaspoons cinnamon
1/2 cup cold butter

Steps:

  • Set oven to 350 degrees.
  • Grease a 13" x 9" baking pan.
  • Cream 3/4 cup butter and sugar until light and fluffy.
  • Add eggs and vanilla, beating well.
  • Stir in cream; mix well.
  • Sift together dry ingredients; add to creamed batter; mixing well.
  • Then fold in sliced bananas.
  • Spread mixture into prepared baking pan.
  • FOR STREUSEL: Mix together brown sugar, flour and cinnamon; cut in butter, until mixture is crumbly.
