Banana Cream Cookie Sandwiches Recipes
BANANA CREAM COOKIES
From "The Ultimate Cookie Book" by Catherine Atkinson. You can substitute vegetable oil for the sunflower oil and sour cream for the creme fraiche.

Steps:
- Preheat the oven to 350 and line two or three baking sheets with baking parchment.
- Put the eggs and brown sugar in a large bowl and whisk together until well blended. Stir in the vanilla extract. Add the oil and creme fraice and stir in well. Add the flour and mix well. (The mixture will be quite runny at this stage.) Cover with plastic wrap and chill in the refrigerator for about 30 minutes.
- Put the frosted cornflakes in a large bowl. Remove the cookie dough from the refrigerator and stir in the bananas. Using a tablespoon, drop heaps into the flakes. Lightly toss so each cookie is well coated, then remove and place on the prepared baking sheets. Flatten very slightly with your fingertips.
- Bake for 15-20 minutes, or until risen and golden brown and crispy. Transfer the cookies to a wire rack and dredge with sifted confectioners' sugar. Serve while still warm.

This is really easy. I came up with it last minute for a party. It was a huge hit! If you let the finished product sit overnight the wafers will become soft and taste homemade themselfs!!

Steps:
- Combine cream cheese, powerderd sugar, and flavorings.
- Spread on each Vanilla Wafer and top with another Wafer to make a sandwich type cookie.
- You may serve right away as crunchy or let sit a few hours or even overnight to soften. I prefer the soft way.

- In a medium bowl, whisk together the softened butter and sugar. When the sugar is dissolved, add the vanilla and heavy cream. Whisk together very well. Add the flour and fold together with a spatula. Chill the batter for about 20 minutes before proceeding.
- Scoop the chilled batter out onto a baking sheet using 2-teaspoon scoops--you should get 10 cookies. Chill the dough balls another 10 minutes.
- Press the tops slightly down to encourage a flat not domed cookie. Bake for 14-16 minutes, or until edges of cookies are browned.
