MAUI BANANA CREAM TUBE CAKE
This cake was created for Reds Espresso Gallery of San Diego, in the Maui test kitchen on Puunoa! It was first made with bananas from the back yard...yummy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour a 10-inch fluted tube pan.
- Beat butter and sugar with an electric mixer in a large bowl until smooth. Beat first egg into butter until completely blended, then beat in vanilla extract with last egg; fold in bananas. Combine flour, baking powder, baking soda, and salt in a bowl. Stir flour mixture into creamed mixture alternately with yogurt, stirring until just combined. Fold in pecans and pour batter into prepared tube pan.
- Bake in preheated oven until a toothpick inserted into cake comes out clean, about 50 minutes. Cool 10 minutes in pan before removing to a wire rack to cool completely. Dust with confectioner's sugar before serving.

BANANA CREAM PIE I
Banana Cream Pie is one of the yummiest things on earth and this is a great one.

- In a saucepan, combine the sugar, flour, and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from the burner.
- Stir a small quantity of the hot mixture into the beaten egg yolks, and immediately add egg yolk mixture to the rest of the hot mixture. Cook for 2 more minutes; remember to keep stirring. Remove the mixture from the stove, and add butter and vanilla. Stir until the whole thing has a smooth consistency.
- Slice bananas into the cooled baked pastry shell. Top with pudding mixture.
- Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes. Chill for an hour.

BANANA CREAM FLAUTAS (MAYA STYLE!)
Everyone calls me the Magyver of the Kitchen, lol! This recipe was a result of one of those nights that I want something sweet and am determined to find the perfect something. These come out to be crispy sweet and delectible! Perfectly accompanies any mexican dish.

Steps:
- Heat butter and enough oil to fill a shallow skillet on the stove top on medium high heat.
- Place orange peels and place in heated oil until the oil becomes arromatic.
- While oil is heating mix Cream Cheese, Bananas ( I only use one but if you like a stronger banana flavor use two), and sugar ( to taste) together and whip until the texture becomes light and fluffly.
- Place corn tortilla in oil for a second to make them pliable and easy to work with.
- Dust with cinnamon on both sides.
- Place a tablespoon of filling in middle and roll tightly ( I also make small pouches).
- Place in oil seam side down until lightly brown.
- Note: You should work in an assembly line. Once one is brown on one side flip and place another down. The oil will eventually start to smoke so try and work quickly. Trust me it's well worth the effort.

CARAMEL BANANA TAQUITOS

- Wrap the tortillas in a damp paper towel and microwave on high for 45 seconds.
- Cut the banana in half crosswise. Slice each half lengthwise into quarters, forming about 3-inch sticks. Lay the flour tortillas on a flat surface. Spread a thin layer (about 1 tablespoon) dulce de leche over the tortillas, leaving 1/2-inch border around the edge. Sprinkle with 1 tablespoon coconut. Place a banana stick at the edge, roll up the tortilla and secure closed with a toothpick. Repeat with the remaining bananas and tortillas.
- In a large skillet, add enough canola oil to come 1/2 inch up the side of the pan and heat over medium-high heat (the oil should be at 350 degrees F). Working in batches, place the tortilla rolls seam-side down in the oil and fry until golden brown, 1 to 2 minutes per side. Remove from the oil and drain on a paper towel-lined plate or sheet pan.
- Stir together the hot coffee with the chocolate sauce. Remove the toothpicks from the taquitos, drizzle with some of the chocolate sauce and serve with remaining chocolate sauce on the side.

- Preheat oven to 350°F. In a large saucepan, combine 1/3 cup sugar, cornstarch and salt; stir until blended. Mix in milk. Cook over medium heat, stirring constantly until thickened and boiling. Boil 1 minute, then remove from heat. In a small bowl, whisk egg yolks, then whisk in about 1/2 cup of hot custard until blended. Pour yolk mixture back into saucepan of custard; cook over medium heat, stirring, 2 minutes. Stir in butter and vanilla until blended. Place vanilla wafers on bottom of a shallow 2-quart casserole dish. Top with layers of banana slices and custard. Repeat layering, ending with custard. In a large mixing bowl, beat egg whites and 1/4 cup sugar at low speed until frothy. Add cream of tartar; increase speed to medium and gradually beat in remaining sugar. Beat until egg whites hold stiff peaks. Spoon meringue over hot custard immediately, making sure that meringue touches baking dish on all sides (this prevents it from shrinking). - In a large saucepan, bring the water, butter, sugar and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. - Combine the sugar, cornstarch, salt, and milk. In a large saucepan, add the following ingredients: 1 cup of sugar. 1/4 cup of cornstarch. 1/2 teaspoon of salt.
- Cook the cream mixture. On medium heat, use a whisk to stir the mixture (the sugar, cornstarch, salt, and milk from the previous step) until the contents thicken and start bubbling.
- Reduce the heat, but keep stirring. Reduce the heat on the oven to low and keep stirring the mixture for two more minutes. Then remove the saucepan from the heat altogether.
- Add the eggs. Add the two eggs to your mixture and whisk the contents until the eggs are completely blended. You can beat the eggs before adding them to ensure they combine completely with the rest of the ingredients.
- Bring the mixture to a boil. Place the saucepan back on the stove top and bring the contents to a boil. Once it is boiling, continue stirring and cooking for two more minutes.
- Cut the bananas. Take two medium ripe bananas and slice them into small pieces. You can cut them as small or as large as you'd like, but smaller pieces work better when you add it to the cream mixture.
- Add the bananas, butter, and vanilla. Remove the saucepan from the heat and add 3 tablespoons of butter, 2 sliced bananas, and 1 teaspoon of vanilla extract.
- Refrigerate. Put the mixture into a large bowl and cover it. Place it in the refrigerator for at least 30 minutes prior to serving. Advertisement.
