  • In a mixing bowl, use a fork to smash the bananas.
  • Add in pancake mix, cinnamon and milk. Whisk together until combined.
  • Fry in oil. About 1 tablespoon per fritter.
  • Cook for about 2-3 minutes until they are golden brown and cooked through the middle.
  • Sprinkle powdered sugar.

6 bananas, cut in 1/2 lengthways
1 cup plain flour
1/2 cup cornflour
1 tablespoon baking powder
1 cup milk, approx
extra flour, to coat banana
oil (for frying)

Steps:

  • Coat bananas lightly with flour.
  • Sift the flour, cornflour and baking powder into a bowl.
  • Make a well in centre and gradually add milk. Mix to a smooth consistency similar to thickened cream.
  • Dip bananas into batter and fry in hot oil until golden brown.
  • Coat thinly with sugar. (Optional).

2 tablespoons milk
2 eggs
1 tablespoon margarine, melted
1 cup all-purpose flour
3 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
1 pinch ground nutmeg
1 quart oil for frying
1 cup confectioners' sugar for dusting

Steps:

  • In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
  • Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

2 bananas, mashed
2 cups all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
2 eggs, beaten
1 tablespoon margarine, melted
1 quart vegetable oil for frying
½ cup confectioners' sugar

Steps:

  • In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
  • Heat the oil in a large skillet to 365 degrees F (180 degrees C).
  • Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

1 cup warm water (105°F to 115°F)
1 large egg
2 tablespoons vegetable oil
1 teaspoon dry yeast
1 cup all purpose flour
1/2 cup sweetened shredded coconut
1 tablespoon sesame seeds
1/4 teaspoon ground nutmeg
4 large bananas
Vegetable oil (for frying)
Honey
Vanilla ice cream

Steps:

  • Whisk 1 cup warm water, egg, and 2 tablespoons oil in large bowl to blend. Add yeast, then flour, whisking until smooth. Cover and let stand at room temperature until batter has almost doubled in volume, about 2 hours. Stir in coconut, sesame seeds, and nutmeg. Cut bananas on deep diagonal into eighteen 1/2-inch-thick slices. (Reserve any remaining bananas for another use.) Add banana slices to batter; stir gently to coat. (Can be prepared up to 1 day ahead. Cover and chill.)
  • Pour vegetable oil into heavy medium saucepan to depth of 1 1/2 inches. Attach deep-fry thermometer and heat oil to 350°F. Insert fork into 1 banana slice and transfer to oil. Repeat with 5 banana slices. Fry until crisp and golden on all sides, about 3 minutes. Using slotted spoon, transfer fritters to paper-towel-lined plate to drain. Repeat with remaining bananas in 2 more batches. Divide fritters among 6 plates. Drizzle with honey and serve warm with ice cream.

  • Sift dry ingredients into a medium bowl. Combine egg and buttermilk, and stir into dry ingredients, mixing until well combined. Place bananas carefully in batter. (They can rest in the batter, covered until you are ready to fry them.)
  • Heat the oil to 350 to 390 degrees F or until the oil gives off a slight haze. Make sure bananas are well coated with batter before setting them in oil.
