1 ¾ cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
½ cup semisweet chocolate chips
1 egg
¼ cup vegetable oil
¼ cup milk
1 cup mashed bananas

Steps:

  • Measure flour, sugar, baking powder, salt, and chocolate chips into a large bowl. Mix thoroughly, and make a well in the center.
  • Beat the egg in a small bowl until frothy. Mix in cooking oil, milk, and bananas. Pour mixture into the well. Stir only to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full.
  • Bake at 400 degrees F (205 degrees C) for 20 to 25 minutes.

1 teaspoon baking soda

Steps:

  • Preheat oven to 375°. In a large bowl, whisk flour, sugar, baking soda, cinnamon and salt. In another bowl, whisk egg, bananas, melted butter and vanilla until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups three-fourths full. 4 overripe bananas, divided
1 cup chopped pecans, divided, or as needed

1 ½ sticks unsalted butter, melted and cooled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin cups with paper liners.
  • Combine flour, cinnamon, baking powder, baking soda, and salt in a large bowl.
  • Mash 2 bananas with a fork in a small bowl so they still have a bit of texture; mix in 1/2 cup chopped pecans.
  • Mash remaining 2 bananas in a separate large bowl. Add brown sugar and white sugar and beat with an electric mixer for 3 minutes. Add melted butter, eggs, and vanilla; mix for 1 more minute. Mix the banana-sugar mixture into the flour mixture until combined. Stir in banana-pecan mixture.
  • Spoon about 1/4 cup of batter into each prepared muffin cup and top with remaining pecans.

1/4 cup wheat germ
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/3 cup granulated sugar
1/3 cup firmly packed light brown sugar
2 large eggs, at room temperature
2 medium bananas
1/3 cup 2 percent milk
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • Line a 12-cup muffin pan with parchment squares so they come up over the sides, and set aside.
  • Whisk together the flours, wheat germ, baking soda and salt in a medium bowl. Beat the butter and sugars together with an electric mixer until light and fluffy, about 5 minutes. Add the eggs one at a time, beating well after each addition.
  • Mash the bananas with a fork in a separate bowl. Stir in the milk and vanilla. With the mixer on low, alternately add thirds of the flour mixture and halves of the banana mixture to the butter mixture, beginning and ending with the flour mixture. Mix until just combined. 4 overripe bananas
1 cup brown sugar

Steps:

  • Preheat oven to 375 degrees F and lightly butter 2 muffin tins.
  • In a large bowl, combine the flour, baking soda, and salt; set aside. Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together like you mean it, for a good 3 minutes. Add the melted butter, eggs, and vanilla and beat well, scraping down the sides of the bowl once or twice. Mix in the dry ingredients just until incorporated. Fold in the nuts and the mashed bananas with a rubber spatula. Spoon the batter into the muffin tins to fill them about halfway. Give them a rap on the counter to get any air bubbles out.
  • Bake until a toothpick stuck in the muffins comes out clean, 18 to 20 minutes. Let cool for a few minutes before turning the muffins out. Serve warm or at room temperature.

1 cup medium-diced ripe bananas (1 banana)
1 cup small-diced walnuts
1 cup granola
1 cup sweetened shredded coconut
Dried banana chips, granola, or shredded coconut, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.
  • Fold the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Based on Recipe Nut's Recipe #19491 I am posting the healthier changes I made to try and make it more lunchbox friendly. This is what I used because of what I had. I'd like to try with splenda and egg whites. I have very small old muffin tins, you may not get as many muffins as I did.

1 teaspoon baking soda
1/4 teaspoon salt

4 ripe bananas, mashed (preferably black-skinned)
1/2 cup roughly crushed walnuts
1/2 cup chocolate chips

Steps:

  • Sift the flour, baking soda and salt into a bowl. Set aside.
  • Whisk the eggs and the vanilla together. Set aside.
  • Preheat oven to 350°F.
  • Cream together the butter and sugar until light and fluffy (I use a Kitchen Aid stand mixer for this).
  • Gradually pour the egg mixture into the butter while mixing until incorporated.
  • Add the bananas and stir until incorporated.
  • Mix in the flour mixture until just incorporated with a spatula.
  • Pour in the walnuts and chocolate chips and gently fold into mixture.

Chocolate Chip Banana Nut Muffins image

I adapted this recipe with a few of my own changes from a Cooking for 2 Magazine recipe, so it is great for when you just want to mix up 1/2 dozen muffins. These are a very moist muffin with just enough chocolate and nut flavor. Tastes best fresh out of the oven.

Number Of Ingredients 13

1/4 cup butter, softened
1/3 cup sugar
1 egg
3/4 cup mashed ripe banana
1/2 teaspoon vanilla extract
1/2 cup whole wheat flour
1/2 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1/8 teaspoon ground cinnamon
1/4 cup chopped walnuts
1/4 cup mini chocolate chip

Steps:

  • In a mixing bowl, cream butter and sugar. Beat in the egg, banana, and vanilla.
  • In separate bowl, combine the flours, baking powder, salt, baking soda, and cinnamon.
  • Add the flour mixture to the creamed mixture just until moistened.
  • Fold in the walnuts and chocolate chips.
  • Coat 6 muffin cups with nonstick cooking spray and fill two-thirds full with batter.
  • Bake at 350 degrees for 23-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

This is one of my favorite recipes for banana crumb muffins-and it's the only kind our 4-year-old will eat.

Yield about 1 dozen.

Number Of Ingredients 13

1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 large ripe bananas, mashed
3/4 cup sugar
1 egg, lightly beaten
1/2 cup butter, melted
TOPPING:
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon cold butter

Steps:

  • In a large bowl, combine dry ingredients. Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups three-fourths full. Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins. , Bake at 375° for 18-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.
