Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease 12 muffin cups with butter or line with paper muffin liners.
- Stir sugar, oil, mayonnaise, and eggs together until creamy and light yellow. Mix in bananas until incorporated.
- Stir flour, oats, flax, wheat germ, baking soda, baking powder, and salt into banana mixture until smooth. Mix in chocolate chips and walnuts. Spoon batter into prepared pans.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 25 minutes.

Steps:
- Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, egg, butter, and milk. Stir wet ingredients into dry ingredients then stir in chocolate chips.
- Divide batter evenly between prepared cups, adding a scant 1/4 cup to each. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

- Preheat oven to 350°F. Line twelve 1/3-cup muffin cups with foil muffin liners. Mix flour, sugar, baking powder and salt in large bowl. Mix mashed bananas, egg, melted butter and milk in medium bowl. Stir banana mixture into dry ingredients just until blended (do not overmix). Stir in chocolate chips.
- Divide batter among prepared muffin cups, filling each about 3/4 full. Bake muffins until tops are pale golden and tester inserted into center comes out with some melted chocolate attached but no crumbs, about 32 minutes. Transfer muffins to rack; cool.
CHOCOLATE CHIP BANANA NUT MUFFINS
I adapted this recipe with a few of my own changes from a Cooking for 2 Magazine recipe, so it is great for when you just want to mix up 1/2 dozen muffins. These are a very moist muffin with just enough chocolate and nut flavor. Tastes best fresh out of the oven.

Steps:
- In a mixing bowl, cream butter and sugar. Beat in the egg, banana, and vanilla.
- In separate bowl, combine the flours, baking powder, salt, baking soda, and cinnamon.
- Add the flour mixture to the creamed mixture just until moistened.
- Fold in the walnuts and chocolate chips.
- Coat 6 muffin cups with nonstick cooking spray and fill two-thirds full with batter.
- Bake at 350 degrees for 23-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
CHOCOLATE CHIP BANANA MUFFINS
These banana muffins are my kids' favorite. I adapt it for adults by adding chopped nuts or dried apricots.

Cool for 5 minutes before removing from pans to wire racks.

- Position oven rack in center of oven. Preheat to 375 degrees F.
- In medium bowl, combine flour, baking powder, baking soda and salt. Whisk till well blended.
- In Large mixer bowl, combine bananas, brown sugar, oil, eggs and vanilla. Beat until well blended.
- Pour dry ingredients into moist and stir till almost blended before adding nuts.
- Spray pans with cooking spray.
- Spoon batter into pans then tap on the counter to settle the batter.
- Bake till golden brown and cake test comes out clean. About 11 minutes.
- Transfer pan to wire rack to cool for 5 minutes then remove from pan to cool.
