A Ridiculously easy, gluten free lunchbox treat. These Clean Eating Choc Chip Banana Blondies are one of the most requested recipes in our home. A moist choc-chip banana slice that's low on sugar and wheat free.

Number Of Ingredients 12

Wet Ingredients
2 x ripe bananas (mashed)
1 tbsp runny honey
3½ tbsp Butter (Room temperature, soft )
¾ Cup milk (Or milk alternative)
2 Eggs (Lightly beaten)
1 tsp vanilla extract
1 ¾ cups Oat Flour
1 tsp Baking soda
1 tsp Baking powder
Other
1/2 cup dark choc chips

Steps:

  • Preheat Oven to 180'C / 350F
  • Line a 9x13 inch baking tray with baking paper
  • Mix all wet ingredients together.
  • In a separate mixing bowl, sift all dry ingredients together.
  • Add the dry ingredients to the wet mix and fold together with a spatula until just combined.
  • Stir through choc chips.
  • Pout into baking tray
  • Bake for 15 - 20 minutes until golden and springs back on touching.

2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, at room temperature
2/3 cup granulated sugar
2/3 cup packed light brown sugar
1 teaspoon vanilla
1 egg
1 cup mashed ripe banana
2 cups semi-sweet chocolate chips
1 cup walnut pieces

Steps:

  • Preheat oven to 350°F Grease a 13x9 inch metal baking pan.
  • In a medium bowl, combine flour, baking powder and salt.
  • In a large bowl, using electric mixer, beat butter and granulated and brown sugars until light and fluffly. Beat in vanilla. Add eggs and bananas, beating well. Add flour mixture and beat just until combined. Fold in chocolate chips and walnuts.
  • Spread batter in prepared pan. Bake in preheated oven for 30 to 35 minutes or until light golden brown and starting to pull away from sides of pan. The center will be slightly soft to the touch.
  • Let cool completely in pan or rack. Cut into bars.

I loved the idea of combining peanut butter, coconut milk and some sort of chips into a decadent yet not too sinful dessert, so I played with the recipe and this is my version. I hope youll enjoy it!

Number Of Ingredients 13

3/4 cup whole wheat flour
1/4 cup flour
3/4 teaspoon baking powder
1 pinch salt
1/8 cup peanut butter chips
1/8 cup cinnamon baking chips
1/4 cup semi-sweet chocolate chips
1 banana (ripe)
1 tablespoon ground flax seeds
4 tablespoons water
1/8 cup water
1/4 cup coconut milk
1 1/2 tablespoons peanut butter (for swirling)

Steps:

  • In a large bowl combine all of the dry ingredients including the three types of chips.
  • In a microwave safe bowl microwave the banana for about 2 minutes on high or until slightly melted and fragrant. Add the flax seeds and the 4 tbs of water. Microwave again for 45 seconds. Stir to combine making sure to mash up the banana (I used a fork for this). Add coconut milk and remaining 1/8 cup of water.
  • Add wet ingredients to the dry and stir until a thick batter has formed (you might need to add a tad more water, but it should be quite stiff).
  • Fill batter into a brownie tin or standard muffin tin that holds six muffins. Top either the dough in the brownie tin or each muffin with a bit of the peanut butter and swirl that into the batter.
  • Bake in the preheated oven at 175°C/350°F for about 20 minutes or until nicely browned and almost set. Baked in a brownie tin this will take longer, probably up to 30 minutes.
  • Allow to cool in the tin for 5 minutes, then remove to a wire rack to cool completely.
