THE ULTIMATE BREAKFAST FOR DINNER: SAUSAGE AND SPINACH EGG STRATA

- Defrost the spinach in the microwave, and then wring out any excess liquid.
- Heat the EVOO in a skillet over medium-high heat. Brown and crumble the spicy breakfast sausage, and then remove the crumbles to a plate. Return the skillet to the heat. Reduce the heat a little and melt the butter. To the skillet, add the onions and garlic and cook to soften, 5 to 6 minutes. Then add the spinach and season with salt, pepper and a little nutmeg. Turn off the heat and combine with the sausage bits.
- Arrange half of the bread in a casserole dish.
- Whisk the eggs with the milk, Dijon and some salt and pepper.
- Scatter half of the sausage-spinach mixture over the bread, top with half the cheese, pour over half the eggs, repeat. Cover and store in the fridge.
- Bring the strata to room temperature for about 30 minutes before you bake. Preheat the oven to 350 degrees F with the rack in the center of the oven.
- Set the casserole on a baking sheet and bake uncovered 1 hour. Let stand 10 minutes and serve.
SPINACH AND CHEESE STRATA
I adopted this recipe. Don't let the length of the recipe scare you. It is really a very simple dish to prepare with excellent flavors. The gruyere adds a lot of flavor to this savory dish.

Steps:
- Squeeze handfuls of spinach to remove as much liquid as possible, then finely chop.
- Cook onion in butter in a large heavy skillet over moderate heat, stirring, until soft, 4 to 5 minutes.
- Add 1/2 teaspoon salt, 1/4 teaspoon pepper, and nutmeg and cook, stirring, 1 minute.
- Stir in spinach, then remove from heat.
- Spread one third of bread cubes in a buttered 3-quart gratin dish or other shallow ceramic baking dish and top evenly with one third of spinach mixture.
- Sprinkle with one third of each cheese.
- Repeat layering twice (ending with cheeses).
- Whisk together milk, eggs, mustard, and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper in a large bowl and pour evenly over strata.
- Chill strata, covered with plastic wrap, at least 8 hours (for bread to absorb custard).
- Preheat oven to 350°F.
- Let strata stand at room temperature 30 minutes.
- Bake strata, uncovered, in middle of oven until puffed, golden brown, and cooked through, 45 to 55 minutes.
- Let stand 5 minutes before serving.
- note: Strata can be chilled up to 1 day.

- Preheat oven to 325 degrees F (165 degrees C). Set an oven rack in the center position of the oven. Prepare a 13x9-inch baking dish with cooking spray.
- Heat oil in a skillet over medium-high heat. Saute spinach in hot oil until wilted, 2 to 3 minutes; season with salt and pepper to taste.
- Beat milk, eggs, 1 teaspoon salt, and freshly ground black pepper together in a bowl until smooth.
- Line the bottom of the prepared baking dish with half the baguette slices. Spread about half the sausage cubes and half the sauteed spinach over the bread layer. Sprinkle 3 ounces Cheddar cheese, 3 ounces mozzarella cheese, and 1/4 cup scallions over the sausage and spinach. Pour 1 cup of the milk mixture over everything. Arrange remaining bread in a layer over the ingredients in the baking dish. Repeat layering of sausage, spinach, Cheddar cheese, mozzarella cheese, and green onions, respectively. Pour remaining milk mixture over the dish to soak ingredients completely.
- Cover dish with plastic wrap. Weigh plastic wrap down with 3 soup cans to keep top of strata immersed in liquid. Let sit at room temperature for 15 minutes.
- Bake in preheated oven until set in the center, about 50 minutes. Switch oven to Broil and continue cooking until the top of the strata begins to puff and turn brown in spots, about 5 minutes more. Let strata cool 8 to 10 minutes before serving.

- In a large skillet, cook sausage over medium heat until no longer pink; drain. Add the eggs, milk, bread, cheese, bacon and mustard. Transfer to a greased shallow 3-qt. baking dish. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 60-65 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before serving.

CHEESE STRATA
This is an easy breakfast dish-great to make ahead for rushed mornings as it can be refrigerated overnight. Almost any chopped vegetable or meat can be added; just add before the cheese layer. If you're feeding a crowd, just double and use a 9x13 pan. This is adapted from a Mennonite cookbook, More-with-Less.

- Arrange half the bread in a buttered 2 1/2 quart baking dish or 8x8 pan.
- Drizzle half the melted butter over the bread.
- If adding veggies or meat layer those on next.
- Cover with the shredded cheese.
- Top with remaining bread and drizzle remaining butter over.
- In a small bowl, beat the milk, eggs and seasonings.
- Pour over the bread.
- Bake, covered, at 350 degrees for 40 minutes. Uncover and bake 10 more minutes.
- Can be refrigerated unbaked up to 1 day.
