BANANA COOKIES
Soft, chewy Banana Cookies are a family classic. Filled with a cinnamon cream cheese frosting, you'll love the banana flavor in these whoopie pies!

Steps:
- Beat butter and sugars. Mix in the sour cream, bananas, vanilla and egg. Add the remaining ingredients.
- Use a cookie sheet with parchment paper. Using a small scoop, drop dough onto paper. Bake in a 350 degree oven for 10-12 minutes. Cool and frost if desired!
- Beat cream cheese and butter until fluffy. Add remaining ingredients and beat until smooth. Spread between two like-sized cookies or on top of each cookie. Add chopped walnuts if desired.

CHOCOLATE-DIPPED BANANA SANDWICH COOKIES
Divide and conquer: Chill the dough overnight. Make the filling and the glaze while the cookies bake and chill, then fill and dip. These little bonbons will hold for a few days too.

- For the cookies: Sift the flour, granulated sugar, cocoa powder and baking soda together in a medium mixing bowl and set aside. Whisk the butter, milk and egg yolk together in a separate bowl until uniform in color and texture. Add the butter mixture to the flour mixture and stir until it forms a dough. Divide the dough in half and place each half onto a sheet of plastic wrap or parchment paper. Form into two logs about 1 to 1 1/2 inches in diameter. Refrigerate for at least 4 hours to overnight.
- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- Remove one dough log at a time from the refrigerator. Slice into 1/4-inch-thick slices and place onto the baking sheets. Bake until firm and set, 8 to 10 minutes. Set aside on a rack to cool. Repeat with the second log.
- For the banana filling: Add the butter and shortening to a small bowl and beat with an electric mixer on medium speed until combined, about 1 1/2 minutes. Reduce the speed to low and add the confectioners' sugar in two batches. Add the extracts and mix until combined; set aside.
- Slice the banana into 3 dozen 1/8-inch-thick slices.
- To assemble the cookies: Place a heaping 1/2 teaspoon filling on each cookie. Place a banana slice on the filling, making sure it does not overlap the edge, and then cover with another cookie and press down gently.
- For the bittersweet ganache: Pour a couple inches of water into the saucepan and heat over medium-low heat to just below a simmer. Put the chocolate and shortening in a metal bowl and place over the hot water to melt, stirring often. If the water starts to steam too much, remove the bowl from the pan to avoid scorching the chocolate. When fully melted, remove from the heat, leaving the bowl of chocolate over the water. Using two forks, dip the sandwich cookies into the melted chocolate, turning gently to coat, and remove to wax paper. Allow to sit at room temperature until the chocolate is completely set, at least 2 hours.

MAPLE CREAM SANDWICH COOKIES
A double dose of maple sets these leaf-shaped sandwich cookies apart: maple sugar goes into the buttery shortbread dough, and maple syrup sweetens the rich cream filling.

- Cookies:In a medium bowl, whisk together flour, baking powder, cinnamon, and salt; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugars on medium speed until light and fluffy, about 3 minutes. Add eggs and beat until combined, about 30 seconds. Add flour mixture and beat on low speed until just combined, about 30 seconds, scraping down sides as necessary.
- Divide dough into four disks; wrap each in plastic and refrigerate at least 1 hour.
- Preheat oven to 375 degrees. On a lightly floured surface, roll out one disk of dough 1/8 inch thick, lightly dusting with flour to prevent sticking. Cut out cookies using a 4-inch maple-leaf-shaped cutter, dipping cutter in flour as needed. Transfer to parchment-lined baking sheets and freeze until firm, about 10 minutes. Repeat process with remaining dough.
- Bake, rotating halfway through, until edges begin to brown, 10 to 12 minutes. Let cool on sheets 3 minutes, then transfer to a wire rack to cool completely.
- Filling:In the bowl of a electric mixer fitted with the paddle attachment, cream butter until light and fluffy. Add confectioners' sugar and maple syrup; beat until smooth. Transfer to a piping bag fitted with a small round tip. Pipe 2 tablespoons filling onto bottoms of half the cookies, then sandwich with remaining cookies. Filled cookies can be stored in an airtight container at room temperature up to 3 days.

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in banana and vanilla. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Stir in peanuts. This is really easy. I came up with it last minute for a party. It was a huge hit! If you let the finished product sit overnight the wafers will become soft and taste homemade themselfs!!
