1 1/2 cups diced cooked ham
1 1/2 cups grated cheddar cheese, divided
2 cups broccoli florets, partially cooked
1/2 cup chopped green pepper
1/2 cup Miracle Whip
1/4 cup milk
3/4 cup crushed seasoned croutons

Steps:

  • Toss pasta, ham, 1 cup cheese, broccoli, and green pepper together in a large mixing bowl; combine miracle whip and milk; stir into pasta mixture until everything is coated.
  • Pour pasta mixture into a lightly greased 9x13" baking pan; top with croutons and remaining cheese.
  • Bake at 350° for 30 minutes.
  • Note: Using 8 ounces rotini pasta (2 cups) made the casserole somewhat dry, so I decreased that amount to 6 ounces or 1 1/2 cups dry pasta.

1 (3 ounce) can mushrooms, drained (optional)
1 cup soft breadcrumbs
1 tablespoon melted margarine or 1 tablespoon butter

Steps:

  • Cook broccoli until tender, drain.
  • Preheat oven to 350F Grease 2 qt baking dish In a medium saucepan melt butter Stir in flour to make a roux.
  • Whisk in milk Cook and stir until mixture thickens.
  • Lower heat slightly.
  • Stir in cheese and sour cream, until cheese is melted.
  • Mix ham and cooked vegetables together and spread into baking dish Pour sauce over this Combine bread crumbs and 1 tablespoon melted butter.
  • Sprinkle on top of casserole.

12 to 16 ounces broccoli florets (frozen or fresh)
3 tablespoons butter
3 tablespoons flour
1 teaspoon dry mustard
1/2 teaspoon salt
Dash of pepper
1 1/2 cups milk
3/4 cup cheddar cheese (shredded)
4 slices ham (cooked)
2 tablespoons butter (melted)
1/2 cup panko breadcrumbs
Optional: 1 tablespoon onion (finely minced)

Steps:

  • Preheat the oven to 375 F.
  • Butter a 1 1/2-quart casserole dish.
  • Place the broccoli in a saucepan. Add about 1 inch of water and bring to a boil over medium-high heat. Cover the pan and reduce the heat to low. Cook until just barely tender, or about 3 to 4 minutes.
  • Meanwhile, in a saucepan over medium heat, melt the 3 tablespoons of butter. Add the flour and cook, stirring, for 1 to 2 minutes. Add the dry mustard, salt, and pepper. Gradually add the milk and minced onion, if using. Continue to cook until thickened, stirring constantly.
  • Add the cheese to the sauce mixture and stir until it has melted. Remove the sauce from the heat.
  • Drain the broccoli and put it in the prepared casserole dish.
  • Add the ham to the casserole dish and then pour the sauce over the ham and broccoli mix.
  • Combine the 2 tablespoons of melted butter and panko breadcrumbs. Stir to coat the crumbs and then sprinkle over the casserole.
  • Bake the casserole in the preheated oven for 20 to 25 minutes.

1 -2 tablespoon minced fresh garlic
1 small onion, finely chopped

1 cup shredded old cheddar cheese
1/2 cup sour cream
1/2 teaspoon seasoning salt (or to taste or use white salt)

1 1/2 cups breadcrumbs
2 tablespoons grated parmesan cheese (optional)

Steps:

  • Set oven to 350 degrees.
  • Butter a 2 or 3-quart casserole dish.
  • Cook the broccoli florets in boiling water until just tender; drain very well, then place on paper towels to dry further.
  • Melt butter in a medium heavy-bottom saucepan over medium heat; add in the onions, garlic and cayenne, saute until tender (about 3-4 minutes).

12 slices white bread, crusts removed, torn into small pieces
3 cups cooked cubed ham
2 (10 ounce) boxes chopped frozen broccoli, thawed, water pressed out
8 ounces shredded sharp cheddar cheese
3 cups milk
5 eggs, beaten
1 1/4 teaspoons salt
1 teaspoon dry mustard
2 -3 tablespoons melted butter

Steps:

  • In a 9x13x2-inch baking dish, put enough of the bread pieces into the bottom of the pan to make a thin layer.

After listening contentedly for a few minutes, I chimed in with a few thoughts myself. "I love to add some flare to my egg casseroles...whether it be a particular spice, or a bold and delicious cheese." I went on to tell them about this one dish egg casserole that I brought and why I chose the extra-sharp, how it took me what felt like 9 minutes to locate the extra-sharp cheddar cheese in the cheese department, and how I used the English muffins because it's what I found in my freezer. I loved the balance of flavors and textures in this egg casserole. The crushed red pepper gives a hint of heat. The paprika brings a bit of smoky sweetness, and the ham and broccoli work perfectly with the rich and deep flavor of the extra-sharp cheddar cheese. I hope you enjoy the rich flavor that the extra-sharp cheddar cheese brings to this one dish egg casserole!

1 tablespoon olive oil
