DELICIOUS BANANA CAKE WITH STREUSEL FILLING
This is one of my favorite cake recipes...I usually bake a different cake recipe every week, so I have collected a lot of great cake recipes over the years....this one comes from "The all New Blue Ribbon" cookbook featuring prize winning recipes from America's state fairs...I think you will love this one....enjoy!

Steps:
- Set oven to 350 degrees.
- Grease 2 (8-in) round cake pans (cake can also be baked in a 13x9-in pan).
- Prepare streusel mix; set aside.
- In a med bowl, beat together the shortening and sugar until creamy.
- Beat in eggs, bananas and vanilla; fold in sour cream.
- In a small bowl, combine flour, baking soda, baking powder and salt.
- Fold into creamed mixture, stirring only enough to blend (don't overbeat).
- In baking pans, sprinkle 1/3 of the streusel mix on the bottom.
- Carefully spread 1/2 of cake batter on top of the streusel.
- Sprinkle with another 1/3 of the streusel mix.
- Spread the remaining cake batter over top.
- Sprinkle with the remaining streusel mix on top.
- Bake for 40 mins, or until cakes test done.
- Cool 10 mins before removing out onto serving plates.
- Serve warm, or at room temp.

MOIST BANANA STREUSEL MUFFINS
These moist muffins were created in my kitchen while trying to bake with whole wheat flour, which has more fiber than all-purpose flour.

- Preheat oven to 375 degrees F (190 degrees C). Spray 10 muffin cups with cooking spray.
- Whisk 1 1/2 cups sifted whole wheat flour with baking soda, baking powder, salt, and 1/2 teaspoon cinnamon in a large bowl. Mix together mashed bananas, 1/2 cup melted unsalted butter, egg, white sugar, and vanilla extract in a separate bowl. Gently fold banana mixture into dry ingredients just until moistened; do not overmix. Spoon batter into prepared muffin cups, filling them about 3/4 full.
- Mix dark brown sugar with 2 tablespoons whole wheat flour and 1/2 teaspoon cinnamon in a bowl, stirring until combined; mash 1 tablespoon unsalted butter into the mixture with a fork until streusel topping resembles crumbs. Sprinkle topping over muffins.
- Bake muffins in the preheated oven until a toothpick comes out clean or with moist crumbs, about 20 minutes.

BANANA-ALMOND STREUSEL BUNDT® CAKE

Steps:
- Heat a heavy skillet over medium heat. Add almonds and toast slowly, watching carefully and stirring constantly until browned, 3 to 5 minutes. Remove from heat and allow to cool, about 5 minutes. Chop into coarse pieces.
- Combine butter, brown sugar, flour, white sugar, and cinnamon for streusel in a bowl. Blend using a pastry blender. Stir in almonds gently and set aside.
- Preheat the oven to 350 degrees F (175 degrees C). Generously grease and flour a fluted tube pan (such as Bundt®).
- Mix flour, baking soda, and salt together in a bowl and set aside.
- Beat butter in a bowl using an electric mixer until fluffy. Add sugar and whip until fluffy. Add vanilla extract and mix well. Add eggs, 1 at a time, beating well after each addition. Mix bananas into batter on low speed until just blended. Alternate adding flour mixture and yogurt until batter is combined.
- Place 1/4 cup of batter into the prepared cake pan. Layer with 1/2 of the streusel mixture. Add another 1/4 cup of batter and top with remaining streusel. Add remaining batter; pan will be very full, but should not overflow.
- Bake in the preheated oven until a wooden skewer or long spaghetti noodle inserted into the center of the cake comes out very clean, 65 to 75 minutes.
- Remove from the oven and let cool on a wire rack for 10 minutes. Invert the pan onto the rack to remove the cake.
- While cake begins to cool, mix confectioners' sugar, milk, vanilla extract, and salt until icing is well blended. Poke the top and sides of the cake gently with a fork while still warm. Drizzle icing over cake. Serve warm or allow to cool completely before serving.

STREUSEL-TOPPED BANANA BREAD

- Heat oven to 350°F. Lightly spray 9x5-inch loaf pan with cooking spray.
- In small bowl, stir together Streusel ingredients except butter. Pinch pieces of butter into flour mixture until crumbly and looks like wet sand. Refrigerate.
- In large bowl, mix mashed bananas, melted and cooled butter, 1 cup sugar, the egg, milk and vanilla to combine. In another small bowl, stir together 1 1/2 cups flour, the baking powder, salt and 1/2 teaspoon cinnamon. Fold banana mixture into flour mixture just until combined, taking care not to over mix. Spread batter in loaf pan, smoothing top. Sprinkle streusel evenly over top.
- Bake in center of oven about 1 hour or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 5 minutes. Remove from pan; cool at least 15 minutes before slicing.

- 1. For the crust: Mix the 1 cup flour, 2Tbl sugar, and the 1 stick of butter(melted), and the 1/4 cup of crushed pecans.Mix in a 9x13 pan, and flatten out.Bake at 375 degrees for 15 mins.Set aside and cool
- 2. Cream cheese mixture: Mix your 8oz. cream cheese with your 1 cup 10x sugar. Then add in your 1 cup of coolwhip. Spread in your cooled crust.Slice 2 bananas on top of your cream cheese mixture.
- 3. Pudding Mixture: Mix your Instant French vanilla pudding, and your reg box of instant vanilla pudding with your 3 cups of milk.Spread your pudding mixture on top of the bananas.
- 4. Spread 1 cup of coolwhip on top and garnish with leftover crushed pecans

- Preheat oven to 350. Grease and flour 10-inch bundt pan. Combine cake mix, pudding mix, eggs, sour cream and oil in large bowl. Beat at low speed with electric mixer until moistened. Beat at high speed for 2 minutes. Stir in nuts. Pour one-third of batter into pan. Sprinkle with half the crushed graham crackers. Repeat layers, ending with batter. Bake at 350 for 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan 25 minutes. Invert onto serving plate. Dust with confectioners sugar.

- The streusel topping. Add the flour, brown sugar, and cinnamon in a medium bowl and mix until combined. Cut in the butter using your fingers or a pastry blender, until it resembles coarse crumbs. Stir in chopped walnuts. Set aside.
