BANANAS FOSTER CRISP
Top banana crisp with whipped cream for a tempting baked dessert.

Steps:
- Heat oven to 400°F. Spray 4 (8- to 10-oz) individual baking dishes (ramekins) or custard cups with cooking spray.
- In medium bowl, mix bananas, 1/3 cup brown sugar, the melted butter, cornstarch and rum. Divide mixture evenly among baking dishes. Place dishes on cookie sheet.
- In small bowl, mix flour, 1/2 cup brown sugar and the salt. Stir in softened butter, using fork or fingers, until mixture is crumbly. Stir in pecans. Sprinkle evenly over banana mixture.
- Bake 23 to 25 minutes or until filling is bubbly and topping is golden brown. Let stand 10 minutes. Serve warm with whipped cream. Garnish with mint.

BANANAS FOSTER
This is one of the quickest and most decadent desserts you will ever make. You'll also get major propos in the kitchen for a bit of flambe action (being very careful, of course!).

- Squeeze the lemon juice over the bananas. Melt the brown sugar and butter in a medium skillet over medium-high heat. Place the bananas in the skillet cut-side down and saute, flipping carefully once color has developed on one side. Sprinkle the cinnamon over the bananas.
- Remove the skillet from the heat and add the rum. Carefully ignite with the flame from the stove or a match. As the flames begin to subside, carefully spoon the sauce over the bananas.
- Prepare 4 serving dishes with a large scoop of vanilla ice cream. Top with a banana slice and generously spoon the sauce on top. Serve right away.
BANANAS FOSTER

- Melt the butter in a heavy skillet over a medium-high heat. Add the brown sugar. Stir together and cook for a minute or two. Pour in the cream and stir it around to combine.
- Peel the bananas and slice them on the bias inside the peel. Drop the slices into the pan. Next, add the chopped nuts and stir them into the sauce. Then - and this is where you need to be a little careful - stir in the rum. Let it start to bubble, and then carefully use a long lighter to ignite it. (Be sure to have a lid handy in case you need to extinguish the flame.) Let the fire burn and go out (it'll only take about 30 seconds or so), and then stir in the cinnamon at the end. You may also cook the mixture without flambeing it.
- Spoon it over a couple of scoops of vanilla ice cream and enjoy immediately.
- Spoon bananas Foster over French toast, waffles or crepes. Substitute peaches, pears or cherries for the bananas. Of course, then it probably wouldn't be considered bananas Foster.

- Melt butter and brown sugar together in a skillet over medium-high heat until butter melts and mixture begins to bubble, 3 to 5 minutes.
- Place bananas, cut-side down, in brown sugar mixture. Cook until just golden, about 30 seconds; flip and cook until golden on the other side, about 30 seconds.
- Remove from heat. Pour rum and banana liqueur into skillet; return skillet to high heat. Cook until alcohol ignites and flames, 1 to 3 minutes; add cinnamon. When flames die, remove skillet from heat.

- Warm butter and sugar in a saute pan over medium heat until butter melts, 1 to 2 minutes. Add bananas, cinnamon, salt, nutmeg, and vanilla, and cook, stirring, for 1 to 2 minutes. Remove pan from heat. Add rum. Return to heat. If using a gas stove, tip pan away from you carefully until the vapors from the rum ignite. (Or light with a long match.) Cook until flames stop, about 1 minute. Divide bananas among crepes; reserve sauce in pan.
- Fold each crepe in half, then fold in half again. Drizzle crepes with reserved sauce, and top with creme fraiche or ice cream. Serve immediately.
DECONSTRUCTED BANANA CREAM PIE & BANANAS FOSTER VARIATION
I started making my Banana Cream Pie this way, because it's so much prettier and if you don't need all six at once, by storing the extra pastry squares in a baggie, they stay fresh and crisp for the next day. Years ago I read about a prize winning pie that used this filling, it has become the basis for many a fruit tart - it is so easy and so good. This is a great dessert for a dinner party, you can prepare the parts ahead of time, construction only take a couple of minutes, and it looks so beautiful. With help from a few 'zaar friends you can try a Bananas Foster version.

- Preheat oven to 425°F.
- PIE CRUST: Make your favorite pie crust, roll dough as you normally would but into a rectangular shape, cut six 3 1/2" - 4" squares and at least 18 - 1 1/3" squares (sizes are approximate they are prettier if you have a crimped cutter for the small squares I have a cookie cutter this size). Place squares on baking sheet, sprinkle the small squares with a little cinnamon sugar, bake about 10 minutes or until golden on the bottom.
- PASTRY CREAM: Make filling according to the directions on the box for pie filling, using half and half in place of milk, add vanilla; stir, chill until ready to serve.
- TOPPING: Whip cream with powdered sugar and vanilla, adjust amounts to your taste,chill.
- PUTTING IT TOGETHER: Place a large pastry square on each dessert plate, spoon on some pudding mix - if using all six at once divide evenly.
- Place about 6 banana slices on top of each square, top with whipping cream.
- Place 3 small pastry squares into the whipping cream, on point. TA DAH! Fast and beautiful!
- •BANANAS FOSTER VARIATION: Make pie crust, filling, and whipping cream as above.
- Chop some pecans.
- Prepare the bananas from Recipe #191028, use 3 Bananas and cut each banana in half length wise first, then each half into 3 pieces.
- And make Recipe #165874.
- PUTTING IT TOGETHER: As before - pastry square, then pastry cream, then spoon bananas with some of their sauce on top of the filling, then whipping cream, sprinkle with chopped pecans and drizzle the whole thing with Praline Sauce.
- Serve with coffee.

- In a small bowl combine crushed cookies, flour, 1 Tbsp. brown sugar, and 1/4 tsp. salt. Add 2 Tbsp. unsalted butter; stir together until crumbly.
- In a small saucepan melt remaining 3 Tbsp. unsalted butter over medium. Stir in remaining 1/4 cup brown sugar. Bring to boiling; reduce heat. Boil gently 3 minutes, stirring frequently. Remove from heat. Carefully whisk in rum, vanilla, and an additional 1/4 tsp. salt; mixture will foam up. Return to boiling. Boil gently 1 minute more, stirring constantly. Spoon hot syrup over bananas. Sprinkle cookie mixture over each.
- Bake 25 to 30 minutes or until bubbly and browned. Let cool 15 minutes. Serve crisps warm with ice cream. Makes 4.
