Traditional Irish Boxty: the Best Ever Potato Pancakes, with a Twist (Irish Potato Pancakes) image

A wonderful and hearty Irish potato pancake recipe.

2 cups (9 oz) all-purpose flour
1 tsp baking powder
1 tsp Kosher or sea salt
1 cup (8 oz) mashed potatoes, boiled in salted water (I prefer Idaho© potatoes)
1 1/2 cups (8 oz) grated, raw potato
1 cup buttermilk (or more if needed)
butter for the griddle

Steps:

  • In a small bowl, place the flour, baking powder and salt; set aside.
  • In a large mixing bowl, combine the mashed potatoes with the grated raw potato, then add the flour and mix well.
  • Slowly add the buttermilk and stir gently (do not over mix).
  • The mixture should be like a very firm, thick batter; almost like a dough, so add more buttermilk if needed (I just used 1 cup/8 oz).
  • Heat a griddle or nonstick frying pan over medium-high heat, and add a pat of butter, just before scooping out some of the boxty batter onto the pan.
  • Flatten and shape into a nice, round pancake shape and fry until golden brown on the bottom.
  • Turn and continue to cook until golden brown on top too, turning the heat down if they are browning too quickly (remember there are raw potatoes which need to cook).
  • Continue to add a little butter and fry the boxty until all the batter is finished. Serve hot.

1 cup all-purpose flour
1 cup leftover mashed potatoes
1 egg
1 tablespoon skim milk
salt and pepper to taste
¼ cup olive oil

Steps:

  • Toss the grated potatoes with flour in a large bowl. Stir in mashed potatoes until combined. In a separate bowl, whisk together the egg and skim milk; mix into the potatoes. Season to taste with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat. Drop in the potato mixture, forming patties about 2 inches in diameter. Fry on both sides until golden brown, 3 to 4 minutes per side. Drain on a paper towel-lined plate. Serve warm.

1 tablespoon fennel seeds
3 pounds pork shoulder, cut into chunks, or ground 80/20 pork
1/4 cup jarred Calabrian chiles, drained, stemmed and finely diced
Kosher salt and freshly ground black pepper

Caul fat, cut into 4-inch pieces (16 pieces total), for wrapping patties
Canola oil, for searing
6 ounces Irish Cheddar, coarsely grated
1/4 cup plus 2 tablespoons canola oil
2 cloves garlic, smashed
1 bunch kale, trimmed
1 cup fresh flat-leaf parsley leaves
1/2 cup grated Parmesan
5 green onions, green and pale green parts, chopped
Kosher salt and freshly ground black pepper

3 1/2 pounds Yukon gold potatoes, peeled and cut into large cubes

1 cup heavy cream, warmed
4 tablespoons unsalted butter, at room temperature
1 cup mascarpone
3 tablespoons unsalted butter
2 shallots, thinly sliced
3 tablespoons all-purpose flour
1 cup dark stout beer
2 cups chicken stock
2 tablespoons clover honey
1 heaping tablespoon whole-grain mustard

Steps:

  • For the bangers: Put the cumin and fennel seeds in a small saute pan and toast over low heat, stirring occasionally, until fragrant, about 5 minutes. Transfer the seeds to a spice grinder and grind to a powder.
  • Put the pork chunks through a sausage grinder into a bowl. Add the ground cumin and fennel and the chiles, sprinkle with salt and pepper and mix together. Cover and refrigerate for at least 30 minutes and up to 2 hours to allow the flavors to meld.
  • Divide the pork mixture into sixteen 3-inch patties, each about 3 ounces. Wrap each patty in caul fat.
  • Heat 2 tablespoons of canola oil in a large nonstick saute pan over high heat until it begins to shimmer. Sear half of the patties on both sides until golden brown and the sausage is cooked through, about 5 minutes per side. Transfer to a baking sheet and repeat with the remaining patties.
  • For the kale pesto: Heat 2 tablespoons of the oil in a large saute pan over low heat. Add the garlic and cook until lightly golden brown and soft; transfer the garlic to a food processor.
  • Increase the heat to high, add the kale and a splash of water to the pan and cook, stirring occasionally, until the kale is soft. Transfer the kale to the food processor and add the parsley, Parmesan, green onions, the remaining 1/4 cup oil and some salt and pepper and pulse until smooth. Transfer to a bowl.
  • For the mash: Put the potatoes in a large saucepan, cover with cold water by 2 inches and add 2 tablespoons kosher salt. Bring to a boil and cook until tender, about 25 minutes.
  • For the beer-mustard gravy: While the potatoes are cooking, melt the butter in a medium saucepan over medium heat. Add the shallots and cook until soft. Add the flour and cook for 1 minute. Whisk in the beer and cook until completely reduced. Add the chicken stock, turn up the heat and cook, whisking occasionally, until thickened and the flour taste has been cooked out, about 5 minutes. Remove from the heat, whisk in the honey and mustard and season with salt and pepper. Keep warm.
  • Preheat the broiler.
  • To finish the mash, drain the potatoes well, return them to the pan and return the pan to the burner to dry them out for a minute. Run the potatoes through a food mill set over a large bowl. Add the warm cream and butter and mix until smooth. Fold in the mascarpone and season with salt and pepper. Add some of the kale pesto and marble in until swirled.
  • To finish the bangers: Top each of the patties with some of the grated Cheddar and place under the broiler until melted and bubbly.
  • Serve the bangers with the mash and beer-mustard gravy.

1 tablespoon oil
1 large onion, sliced

1 teaspoon thyme, chopped
2 tablespoons flour
1 (12-ounce) bottle Guinness or 1 1/2 cups beef broth
1 tablespoon dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
BOXTY:
1 cup potato, grated
1 cup mashed potatoes
1 cup flour
1 cup milk or buttermilk
salt and pepper to taste
butter or oil for frying

Steps:

  • BANGERS, MASH, AND GRAVY: Heat the oil in a pan over medium high heat. Add the sausage and cook until golden brown, about 2 to 4 minutes per side, and set them aside, slicing them as desired. Add the onions and mushrooms and sauté until tender, about 5 to 7 minutes. Add the garlic and thyme and sauté until fragrant, about a minute. Add the Guinness, mustard, Worcestershire sauce, and brown sugar along with the sausage and simmer for 10 minutes. BOXTY: Mix the grated potatoes, mashed potatoes, flour, and enough milk to make a nice thick pancake like batter. Heat the butter in a pan over medium heat, add the batter and cook until golden brown on both sides, about 4 minutes per side. 2 pounds russet, Yukon gold, or long white potatoes, peeled
Coarse salt and freshly ground black pepper
1 cup milk or cream
4 tablespoons unsalted butter
1 cup grated russet potato, squeezed dry to remove excess moisture
1 large egg
1 large egg yolk
1/4 cup milk
1/4 cup thinly sliced scallions
1/2 cup all-purpose flour
2 teaspoons coarse salt
1 teaspoon baking powder
1/2 teaspoon freshly ground pepper
1/4 cup unsalted butter, preferably Irish, plus more for serving

Steps:

  • Make the mashed potatoes: Bring a saucepan of water fitted with a steamer insert to a boil over medium-high heat. Peel and cut potatoes into 1-inch pieces; add to steamer insert. Cover and cook until fork-tender.
  • Heat milk and butter in a small saucepan over medium-high heat. Transfer potatoes to a large bowl; mash potatoes using a potato masher. Slowly add milk mixture and stir to incorporate with a wooden spoon until smooth; season with salt and pepper.
  • Make the boxty potatoes: Transfer 1 1/2 cups mashed potatoes to a large bowl; reserve extra mashed potatoes for another use. Add grated potato to bowl with mashed potatoes. Whisk together egg and egg yolk; add to bowl with potatoes along with milk and scallions and stir to combine. In a medium bowl, whisk together flour, salt, baking powder, and pepper; add to bowl with potatoes and stir to combine.
  • Melt 2 tablespoons butter in a large heavy-bottomed skillet over medium heat. Working in batches, adding butter as necessary, add 2 tablespoons batter to skillet and gently spread to form a 2-to-3-inch round; cook, turning, once, until browned on both sides, about 4 minutes per side. Serve immediately with butter.

  • Using the same skillet, add the onion rings. Cook and stir over medium heat until the onions are golden, but still crisp, about 5 minutes.
  • Heat the gravy in a pan over medium heat.
  • To serve, scoop the potatoes onto a large serving plate. Arrange the sausages over the potatoes, top with the onions, drizzle with gravy, and sprinkle with oregano.
