BARBECUE BANANA PEEL BURGER
Banana bread? Check. But have you thought of making something with the peels which usually end up in the bin?

Steps:
- Julienne the carrot, cabbage and bell pepper and mix into mayonnaise, adding in the necessary seasonings. Keep in the refrigerator.
- Wash the banana and pat the peel dry.
- Take a spoon and scrape out the white part on the inside of the banana.
- Now using a fork, shred the peels until they look like long strands of noodles!
- Add in the ingredients for the banana peel, excluding the salt and barbecue sauce to marinate the peel and mix well.
- In a pan, add some olive oil and put in the peel which should be cooked for about 1:30 minutes after which you add in the barbecue sauce and salt to taste.
- The peel should be cooked perfectly in about 2:30- 2:45 minutes and then remove from the gas. Cooking it for too long will make the peel mushy so remove when you feel its done, you could taste in between!
- For the chipotle crema, add all ingredients into a blender and blend to form a sauce.
- Take a burger bun, add in the chipotle sauce, some lettuce, banana peel and the veggie slaw. Enjoy!
BARBECUE BEEF BURGER
A classic beef burger is a must-have at a barbecue. Pack blue cheese in the centre to make it a little more special and serve with your favourite sides

- Tip the beef mince, shallot, horseradish sauce, herbs and garlic into a bowl, and season well with salt and black pepper. Combine everything well using your hands, squeezing the mixture through your fingers repeatedly to help it bind together.
- Divide the mixture into four portions and shape each into a 3cm-thick patty. Press a small 50p-sized piece of blue cheese into the middle of each patty, if using, and pack the meat around it to enclose the cheese - this will melt during cooking.
- Put the burgers on a plate, cover and chill for at least 30 mins or overnight. Light the barbecue and wait for the coals to turn ashen. Or, heat a gas barbecue to medium.
- Lightly oil the burger patties all over and cook for 5 mins until just starting to char. Carefully flip over and cook for a further 4-5 mins (for medium) or longer if you prefer well done. Remove the burgers to a board and leave to rest for a few minutes before serving. Alternatively, fry the burgers over a medium heat for 4-5 mins on each side until cooked through (a probe thermometer should read 70C).
- Serve the burgers in the buns with lettuce, tomato slices and relish (see recipe, below), or any other accompaniments of your choice.

- Cut 4 large rectangles of baking foil, peel the bananas (keeping them whole) and lay one on each piece of foil. Stab them carefully in several places with a small toothpick.
- Mix together rum, sugar, orange juice and cinnamon, add to each parcel and place 1/4 of the butter on top of the banana in each parcel.
- Carefully join up the long sides of the foil over the banana and fold over several times to seal, then fold up the short ends of the foil so that the liquid can not escape during cooking.
- Place the parcels on the BBQ and grill for 15 minutes, turning them over once after 7 minutes.
- Open the parcels carefully and transfer to serving dishes, pour over liquid that is left in the foil, decorate with orange slices and serve with whipped cream or icecream.

- Wash the bananas well. Cut off the lower end of the banana and peel the banana from bottom to top. Using a spoon, scrape off the white inner part of the peel. Then hold the banana peel by the stem and tear the peel into shreds with a fork. The shreds should be 3-5cm long.
- In a bowl, add olive oil, paprika powder, chilli powder, mustard, garlic powder, onion powder and cumin (not the salt yet). Mix well and put aside so that it can marinate a little.
- Heat the marinated banana peels in a pan over medium heat. Add a few tablespoons of water to make them steamy and tender.
