This vegan burger recipe replaces the classic beef patty with a thick disc of barbecued celeriac, glazed in a homemade barbecue sauce until crisp, sweet and sticky.

1 large celeriac
1 tbsp of olive oil
1 tbsp of wholegrain mustard
100g of ketchup
15g of dark brown sugar
15ml of cider vinegar
1/2 tsp Marmite
1/4 tsp garlic granules
1 pinch of smoked paprika
1 dash of Tabasco
lemon juice, to taste
1 pinch of cracked black pepper
1 pinch of celery salt
4 bread buns
1 tomato, sliced
gem lettuce, leaves washed
1 red onion, sliced
gherkins
ketchup, vegan mayonnaise, mustard or any other burger condiments you like

Steps:

  • Glaze the burgers with the barbecue sauce and grill on each side until crispy with bar marks. Brush with more barbecue glaze each time you flip
  • Serve immediately in a bread bun with your favourite burger condiments and fillings

SAUCE:
1 cup ketchup
1/2 cup packed brown sugar
1/3 cup sugar
1/4 cup honey
1/4 cup molasses
2 teaspoons prepared mustard
1-1/2 teaspoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon liquid smoke
1/8 teaspoon pepper
BURGERS:
1 large egg, lightly beaten
1/3 cup quick-cooking oats
1/4 teaspoon onion salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
1/8 teaspoon salt
1-1/2 pounds ground beef
6 hamburger buns, split
Toppings of your choice

Steps:

  • In a small saucepan, combine the first 10 ingredients. Bring to a boil. Remove from the heat. Set aside 1 cup barbecue sauce to serve with burgers., In a large bowl, combine the egg, oats, 1/4 cup of the remaining barbecue sauce, onion salt, garlic salt, pepper and salt. Crumble beef over mixture and mix well. Shape into six patties. , Grill, covered, over medium heat for 6-8 minutes on each side or until a thermometer reads 160°, basting with 1/2 cup barbecue sauce during the last 5 minutes. Serve on buns with toppings of your choice and reserved barbecue sauce.

1 celeriac, bulb
1 tablespoon olive oil
3 tablespoons lemon juice
3 tablespoons herbs (minced)
2 garlic cloves (minced)
1 teaspoon hot sauce
salt and pepper

Steps:

  • Peel the celeriac (best done with a paring knife rather than a vegetable peeler) and cut in 3/8" x 3/8" spears.
  • Mix the olive oil, lemon juice, herbs, garlic and hot sauce and marinate the spears for an hour to 8 hours.
  • Remove the spears from the marinade (reserving marinade) and grill slowly on a medium hot fire, turning occasionally, until the spears lose their crunch and start to char on the edges.
  • Return the spears to the marinade and toss briefly, to coat. Scatter with salt to taste and serve immediately.
