UPSIDE-DOWN BARBEQUE MEATLOAF

Upside-Down Barbeque Meatloaf image

When I've made 'barbeque meatloaf' before I've simply used the standard spoon-the-glaze-on-top-of-the-loaf-and-bake-it method. This time I wanted to line the loaf pan with some of the sauce, press the meat in, and let it roast in the goodness. I was envisioning a beautiful, glossy finish when I turned it on to the serving platter. It wasn't quite as aesthetically pleasing as I hoped (ugly). But, hey--this is quick and dirty home cooking. It may not have looked good, but it tasted fine!

Time 1h35m

Yield 4

Number Of Ingredients 14

1 ¾ pounds very cold ground beef
1 ½ teaspoons salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground black pepper
½ teaspoon celery salt
¼ teaspoon chipotle chile powder
1 pinch cayenne pepper
½ cup fine, dry breadcrumbs
1 egg, beaten
2 tablespoons ketchup
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
¼ cup barbeque sauce (such as SFQ®), or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix ground beef, salt, garlic powder, onion powder, black pepper, celery salt, chipotle chile powder, and cayenne pepper together in a bowl with your hands.
  • Stir breadcrumbs, egg, ketchup, mustard, and Worcestershire sauce into meat mixture until thoroughly combined; form into a loaf shape.
  • Spread barbeque sauce out into the bottom of a loaf pan; place meatloaf on top of barbeque sauce and press into pan.
  • Bake meatloaf in the preheated oven until no longer pink in the center, about 1 hour, 15 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Drain the fat from the loaf pan and invert pan over a plate to transfer meatloaf. Let rest for 5 minutes before slicing.

BARBEQUE MEATLOAF

Barbeque Meatloaf image

Stick-to-your-ribs, good old fashioned meatloaf. Easy, tasty, a better way to use ketchup to jazz up meatloaf.

Provided by Megohm

Categories     Meatloaf

Time 1h25m

Yield 1 meatloaf, 6-8 serving(s)

Number Of Ingredients 20

2 lbs ground beef (or a combination thereof of pork or beef, or maybe some veal, if youâ re feeling maniacal)
2 tablespoons prepared mustard (cheap old yellow will do)
2 tablespoons Worcestershire sauce
1/4 cup ketchup
3 tablespoons vinegar
2 tablespoons brown sugar
1/8 teaspoon cayenne pepper
3/4 teaspoon salt
1 egg
1 small onion, minced finely
1 garlic clove
2 pieces bread, torn into small pieces
bacon fat (for pan-greasing)
3 tablespoons ketchup
1 tablespoon vinegar
1 teaspoon brown sugar
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
1/2 teaspoon black pepper
1 pinch salt

Steps:

  • Preheat oven to 375 degrees.
  • Grease a loaf pan with bacon fat
  • In a medium-large mixing bowl, put all main ingredients in and mix until it's sticky and combined. Don't over-mix though, or you'll have pelletloaf, not meatloaf.
  • Put into the loaf pan, smooth the top out a bit if you would like. Bake for an hour or until it reaches 165 degrees on a meat thermometer.
  • While it's in the oven, mix up the sauce ingredients. Just before meatloaf is done (10 minutes or so), spoon/brush sauce over the top, return to oven and let it go in there for the remaining time/temperature. Voila. You have meatloaf.

QUICK & EASY BBQ MEATLOAF (5 INGREDIENTS)

Quick & Easy BBQ Meatloaf (5 Ingredients) image

Very easy quick meatloaf recipe. I make many varieties of meatloaf... sometimes the Italian with breadcrumbs, garlic, eggs, etc... This version is a tasty quick BBQ recipe that is great for busy nights or dinner in a rush. Sometimes I put the remaining BBQ sauce right on the loaf prior to putting it in oven if you like it a little hardened. For easy clean-up, I use a baking sheet lined with parchment paper that I spray lightly with Pam Olive Oil spray.
