Steps:
- Pop the chia seeds into the water and leave to stand for 10-15 minutes (they should begin to gel in this time)
- In a medium bowl mash the banana
- Stir through the soaked chia seeds and vanilla
- Add the oats, and flour, mix well. This should form a cookie dough with a quite a moist sticky texture.
- Use a tablespoon to scoop the mixture, place dollops onto a baking paper lined tray. The mix will be quite sticky so forming perfect shapes will be tricky. I find damp hands is a good idea with this mix, (I get 20 tablespoons from this recipe), place the balls on a lined baking tray
- Bake at 180 degrees Celsius (approx 360 F) for 25-30 mins, allow to cool
- The cookies should have a soft texture
- Store in an airtight container for 2-3 days, or freeze for up to 3 months and thaw as needed

Mix in the rest of the ingredients and stir until they are all combined. Leave to sit for 10 mins - this is to let it soak into the oats.
- Roll 1 tbsp of the mix into a ball in floured hands and place on the baking tray, pressing down slightly so they are around 1cm thick. Repeat with the rest of the mix, spacing them 1-2cm apart. You will make about 20 cookies.

BANANA OATMEAL COOKIES
To help interest my kids in cooking, I started with this recipe from my childhood. My mom made these oatmeal banana cookies when I was young. Now my children like them as much as I did, and we quadruple the recipe to serve our large family. You can't eat just one of these goodies packed with chocolate morsels. -Jaqueline Wilson, Armstrong Creek, Wisconsin

SUGARLESS OATMEAL BANANA COOKIES- GREAT FOR BABIES!
I made these for my 10 month old son! i broke it apart into finger food size pieces and he gobbled it up! I plan on trying this with veggies as well! *NOTE: the oats look really dry but are fine after they are pureed. These are best warmed up a little and are more like a bread. The dough looks more like pancake batter.

EASY KIDS' RECIPE FOR FLUFFY BANANA COOKIES
I should rename these to the Houdini cookies, with how fast they vanish from my kitchen. Very fluffy and delicious. My daughter just turned one and loves to help make these. She pulls the paper from the butter, peels the bananas, mashes and mixes. It's so fast and easy. Any time we have a couple bananas going brown we mix up these. The recipe originated as my grandmother's banana bread, but one day I was in a rush and didn't want to wait an hour for the bread to bake so I tossed them in as cookies and we all agreed it came out better this way.
