BASIC QUESADILLAS
Whip these up for picky eaters, or add one of our favorite fillings: Orange-Braised Pork or Chipotle Chicken.

Steps:
- Heat a skillet over medium heat, and add 1/2 teaspoon oil. When oil is hot, place 1 tortilla in pan; sprinkle with 1/4 cup grated cheese, 1/4 cup filling, if using, and another 1/4 cup grated cheese. Top with second tortilla, and cook until cheese is melting and the bottom of tortilla is golden brown. Flip, and cook until golden on both sides, the cheese is melted, and the filling hot.
- To serve, cut quesadillas into wedges, and serve with sour cream, salsa, and guacamole on the side, if desired. Repeat with the remaining ingredients, serving each quesadilla hot from the pan.

YOUR BASIC QUESADILLA
This is one of the ways I make a simple quesadilla at home. Quesadillas made like this can be found at Mexican restaurants.

Steps:
- In a pan skillet large enough to hold one of the tortillas flat, melt ½ of the butter.
- Fry one side of one of the tortillas, then remove it from the pan.
- Put the rest of the butter in the pan, then put the unfried tortilla in to cook.
- Immediately sprinkle the cheese on top of the tortilla in the pan, then top with the previously fried tortilla, browned side up.
- Press them together with a spatula and fry the quesadilla until the cheese is melted.
- Remove it from the pan and cut in wedges like a pizza.
- Top with sour cream and/or salsa.
- Enjoy!

- Brush one side of each tortilla with butter. Place two tortillas, buttered side down, on a griddle; sprinkle with cheese, onion, tomato and chicken. Top with remaining tortillas, buttered side up. Cook over medium heat for 3-4 minutes on each side or until lightly browned. Cut into wedges.

Steps:
- Stir salsa with parmesan& coriander.
- Place tortillas on a flat surface.
- Spread equal amounts of salsa mixture all over each tortilla, leaving about a 1/2 inch border around the edges.
- Scatter equal amounts of peppers, olives, onions& cheese on HALF of each tortilla.
- Fold in half.
- Lightly brush oil on the outside of each tortilla& place on a baking dish.
- Bake in a preheated 425F oven for 5 minutes per side or until golden brown.
- Slice each tortilla into 2 or 3 wedges& serve with sour cream, guacamole& additional salsa for dipping (optional).
