Beet roots can be cooked in a variety of ways (or even eaten raw), but roasting best brings out their natural sweetness.

1 pound small beets, (about 5), well-scrubbed

Steps:

  • Preheat oven to 425 degrees. Wrap beets in 2 or 3 packets of foil. Place on a baking sheet; bake until beets are slightly soft to the touch, 45 minutes to 1 hour depending on their size. Cool beets in packets, then rub off skins (use a paring knife for tough spots).

Garlicky Oven-Roasted Beets image

I came up with this randomly one Monday afternoon. Roasted beets are excellent atop a salad of spinach, fruit, and goat cheese.

4 large beets
1 ½ tablespoons olive oil
1 tablespoon store-bought minced roasted garlic
1 tablespoon balsamic vinegar
1 tablespoon chopped fresh thyme
1 teaspoon honey, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 475 degrees F (245 degrees C). Line a shallow baking dish with foil.
  • Trim and discard beet greens and cut off bottoms. Place beets top-side up in the prepared baking dish.
  • Combine olive oil, garlic, balsamic vinegar, thyme, and honey in a bowl; spoon over beets. Drizzle honey over top.
  • Roast in the preheated oven until tender and caramelized, 50 to 60 minutes. Remove from the oven and peel when cool enough to handle.

Roasted beetroot. Roasting beetroot brings out it's flavour. This is far better than any tinned beetroot that you will buy. Roast beetroot with the skin and tops on then leave to cool. The skin will fall away leaving a brilliant red bulb. Use gloved hands to peel the beetroot or you will find that your hands will be stained from the red beetroot juice. If you use larger beetroot- add in some cooking time. The easiest is to try for beetroot that are similar in size.

4 medium beetroots
2 tablespoons olive oil
4 tablespoons water

Steps:

  • Preheat the oven to 180ºC (350ºF).
  • Wash the beetroot and trim the top and bottom of the root without damaging the skin too much.
  • Place on a baking tray with the oil and water. Tightly cover the baking tray with foil.
  • Bake for 45-60 minutes or until the beetroot is tender. Check after 25 minutes and baste with the liquid to ensure they don't dry out (add more water to the tray if required).
  • Set aside to cool before peeling off the skin - wear gloves to protect your hands from staining. Slice or cut into wedges.
