Basic Stir Fry Sauce image

This is a good basic sauce. Feel free to add ,perhaps a little lime juice, a pinch of cilantro, some peanut butter? Have fun!

1/4 cup soy sauce
1 1/4 cups water
1 tablespoon grated ginger
2 cloves garlic, minced
1 teaspoon sesame oil
1 tablespoon sugar
4 teaspoons cider vinegar
2 tablespoons dry sherry or 2 tablespoons rice wine
3 tablespoons cornstarch

Steps:

  • Combine all ingredients except cornstarch in a small bowl or a 2 to 4 cup liquid measuring cup.
  • Place the cornstarch in a separate small bowl, and whisk in the mixture from step 1.
  • Just before mixing in to vegetables and/or meat, whisk the mixture one more time.
  • Add about 2/3 of the way through stir frying.
  • Enjoy!

A basic stir fry sauce that I've been using for years. I got the recipe from my mother, but I don't know where she got it from. I make no claim to authenticity.

2 -3 tablespoons cornstarch
1/4 cup brown sugar, packed
1/4 teaspoon ground ginger (or a bit of fresh minced ginger)
2 cloves garlic, minced
1/2 cup soy sauce or 1/2 cup tamari soy sauce
1/4 cup cider vinegar or 1/4 cup white vinegar
1/2 cup water
1 1/2 cups beef broth or 1 1/2 cups chicken broth (I use chicken broth if my stir fry will have chicken, etc.)

Steps:

  • Combine all ingredients in a large glass jar with a lid.
  • Screw lid on.
  • Shake well.
  • Can store in fridge up to 2 weeks.
  • Shake well before using.
  • To use sauce: stir fry your vegetables and meat as desired, add appropriate amount of sauce, bring to a boil, boil for 1 minute or until slightly thickened.
  • Serve.

  • Whisk the soy sauce, vinegar, sesame oil, garlic, ginger, sugar and red pepper flakes if using in a medium bowl until combined. Store in an airtight container in the refrigerator for up to 5 days.

800 g boneless skinless chicken breasts, cut into 1 . 5 cm pieces
1 teaspoon peanut oil
1 tablespoon peanut oil
1 head broccoli, cut into small florets (approx. 2 cups)
150 g sliced mushrooms (approx. 1 cup)
1 large carrot, julienned (approx. 1 cup)
2 teaspoons minced fresh ginger
2 teaspoons minced garlic
1/4 cup oyster sauce
1/4 cup low sodium chicken broth or 1/4 cup water
1 teaspoon sugar
2 teaspoons toasted sesame oil
1 teaspoon soy sauce
1 teaspoon cornflour
salt and pepper

Steps:

  • Heat 1 teaspoon of peanut oil in a large frying pan over medium heat. Add the broccoli and mushrooms and cook for approximately 4 minutes or until vegetables are tender.
  • Add the ginger and garlic to the pan and cook for 1 minute more.
  • Remove the vegetables from the pan; place them on a plate and cover.
  • Wipe the pan clean with a paper towel and turn the heat to high. Add the remaining tablespoon of oil.
  • Season the chicken pieces with salt and pepper and add them to the pan in a single layer. Cook for 4 minutes on each side until browned and cooked through.
  • Meanwhile, in a bowl whisk together the oyster sauce, chicken broth, sugar, sesame oil and soy sauce. In a small bowl mix the cornflour with a tablespoon of cold water.
  • Add the vegetables back to the pan and cook for 2 more minutes or until the vegetables are warmed through.
  • Pour the oyster sauce mixture over the chicken and vegetables; cook for 1 minute. Add the cornflour liquid and bring to a boil; cook for 1 more minute or until sauce has just started to thicken.
  • Serve immediately, with rice or noodles.
