2 (2-inch thick) tuna steaks (about 1 pound each)
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 garlic clove, peeled
2 cups fresh basil leaves
1/4 cup toasted pine nuts
Salt and freshly ground black pepper
1/2 cup - 3/4 cup extra-virgin olive oil
1/2 cup grated Parmesan
2 tablespoons lemon juice

Steps:

  • Preheat grill to 400 degrees F.
  • Wash and pat dry the tuna steaks. Season with salt and pepper and brush both sides with olive oil. Place tuna on hot grill and sear each side for 2 minutes for rare. If you prefer well done, cook the tuna an additional 2 to 3 minutes per side. Remove from skillet and let it rest.
  • Into the bowl of a food processor, add the garlic, basil leaves, pine nuts, salt, and pepper. Pulse until finely chopped. With the blender still running, slowly pour 1/2 cup of olive oil. Check for a thick, yet smooth consistency, adding more oil if necessary. Transfer to a bowl and stir in 1/2 cup Parmesan.
  • Slice the tuna across the grain and on a bias into 1/2-inch thick slices. Place the slices on a serving plate and drizzle with lemon juice. Sauce tuna with pesto.

4 medium waxy potatoes, like Yellow Finn, Yukon gold, or Bintje
1 1/2 pounds fresh tuna steak, cut at least 1 inch thick
2 red or yellow bell peppers (or 1 of each), roasted, skinned and seeded
1/2 cup extra-virgin olive oil, or more as needed
Kosher salt and freshly ground pepper to taste
3 shallots, peeled and finely chopped
2 tablespoons finely chopped Italian parsley
1/4 cup sherry vinegar or white-wine vinegar, or more as needed
4 large handfuls of mixed greens, like basil, arugula, radicchio, bibb lettuce, chicory, dandelion and endive
2 tomatoes, peeled, cut into 6 wedges and seeded

Steps:

  • Put the potatoes in a 4-quart pot and cover with cold water. Simmer gently until tender, about 25 minutes, being careful not to overcook them.
  • Meanwhile, prepare the grill, adjusting the rack 2 inches above the coals. Trim the tuna, discarding the skin and any dark purple flesh. Refrigerate.
  • Cut the roasted peppers lengthwise into 1/4-inch-wide strips. Put in a bowl and toss with 1 tablespoon of the olive oil. Season with salt and pepper and set aside.
  • Drain the potatoes and peel while still hot. Slice into 1/4-inch rounds and arrange 1/4 of them in a pie plate or casserole. Sprinkle with 1/4 of the shallots, 1/4 of the parsley and salt and pepper. Repeat the layers until all the potatoes are used. Whisk 2 teaspoons of the vinegar with 1 tablespoon of the oil and pour over the top.
  • Lightly rub the tuna steaks with 1 tablespoon of the olive oil and season with salt and pepper. Grill until charred on the outside and rare in the center, about 2 minutes per side.
  • Place the greens in a large salad bowl and top with the potato mixture, the peppers and the tomatoes. Slice the tuna into 1/4-inch strips and arrange on top of the salad. Just before serving, make a vinaigrette from the remaining vinegar and oil and pour over the salad. Season with salt and pepper. Taste and toss with more vinegar or oil if needed. Serve immediately.

1 teaspoon olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
3 cups fresh baby spinach
1/2 cup grape tomatoes
1/3 cup frozen shelled edamame, thawed
1/4 cup frozen corn, thawed
CITRUS VINAIGRETTE:
1 tablespoon olive oil
1-1/2 teaspoons minced fresh basil
1-1/2 teaspoons white wine vinegar
1-1/2 teaspoons honey
1-1/2 teaspoons lime juice
1-1/2 teaspoons lemon juice
1-1/2 teaspoons orange juice
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Brush tuna with oil; sprinkle with salt and pepper. Grill, covered, over high heat or broil 3-4 in. from the heat for 3-4 minutes on each side for medium-rare or until slightly pink in the center. 1/3 cup Dijonnaise
1 teaspoon grated lemon zest and 1 tablespoon fresh juice, plus wedges for serving
1/3 cup chopped dill pickle
2 cans (each 5 ounces) tuna, preferably in water, drained and flaked
1 cup peeled, grated carrot (from 2)
1 cup panko breadcrumbs
Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil, plus more for drizzling
Arugula and halved cherry tomatoes, for serving

Steps:

  • In a bowl, stir together Dijonnaise, lemon zest and juice, and pickle. Add tuna, carrot, and 1/4 cup panko; stir until well combined. Season to taste. Form into 4 firmly packed patties, each about 1 inch thick. Coat in remaining 3/4 cup panko, pressing it into patties with your hands to adhere.

4 tuna steaks (3/4 inch to 1 inch thick; 6 to 8 ounces each)
1 bunch fresh basil, washed and stemmed
4 cloves garlic, cut in half
3 strips lemon zest
Juice of 1 lemon (3 to 4 tablespoons)
1 tablespoon white vinegar
1 cup extra-virgin olive oil
1 teaspoon coarse salt
1 teaspoon black pepper
Arugula and Yellow Tomato Salad (recipe follows)
You'll also need:
1 cup wood chips (preferably oak; optional)

Steps:

  • Trim any skin or dark or bloody spots off the tuna,. Rinse tuna under cold running water and blot dry with paper towels. Arrange steaks in a nonreactive baking dish. Combine basil, garlic, lemon zest, lemon juice, vinegar, oil, salt, and pepper in a food processor or blender and puree until smooth. Pour mixture over tuna and marinate in the refrigerator, covered for 30 minutes to 2 hours, turning the tuna steaks several times. Set up grill for direct grilling and preheat to high. If using a gas grill, place the wood chips in the smoker box and preheat until you see smoke. When ready to cook, brush and oil the grill grate. Drain the tuna steaks and arrange on the grill. Grill until cooked to taste, 2 to 3 minutes per side for rare, 4 to 6 minutes per side for medium, rotating the steaks 45 degrees after 2 minutes to create grill marks. The steaks should be nicely browned on the outside. Test for doneness using the poke test: A rare steak will be soft, a medium-rare steak will be gently yielding, and a medium steak will be firm. Transfer the steaks to plates or a platter and let rest for 3 minutes, then serve with the salad. Sub-Recipe: ARUGULA, ENDIVE, AND YELLOW TOMATO SALAD 1 large bunch arugula, washed, dried, and stemmed 1 pint yellow cherry tomatoes, halved (see Note) 3 T diced red onion 2 to 3 T fresh lemon juice 3 to 4 T extra-virgin olive oil Coarse salt (kosher or sea) and freshly ground black pepper Put arugula in a medium-size bowl and chill, covered, until serving time. 1 bonito or tuna fillet with skin left on, about 1 pound
2 tablespoons olive oil, plus oil for greasing the grill
Salt to taste if desired
Freshly ground pepper to taste
4 sprigs fresh thyme
1/4 teaspoon dried hot red pepper flakes

Steps:

  • Preheat an outdoor grill or the oven broiler.
  • Put the tuna on a flat surface and cut away and discard the dark center streak or bones. Spoon the olive oil over the fish and sprinkle with salt, ground pepper, thyme and pepper flakes.
  • If an outdoor grill is used, rub the rack lightly with olive oil. Place the fish, skin side up, on the grill. If the broiler is used, place the fish on a rack, skin side up, about 4 inches from the heat. Cook 3 minutes and turn; cook for another 3 minutes. If you wish the fish to be well done, cook 5 minutes on each side.
  • Remove the fish and cut it into thin diagonal slices.
  • Arrange one-quarter of the salad greens on each of four large plates. Arrange an equal number of fish slices on each plate, placing them in the center of the greens.
  • Spoon equal amounts of the salad dressing over the salad greens and around the fish. Serve any remaining salad dressing on the side. Serve while the fish is still warm.
