1 (3 ounce) package cream cheese, softened
1 tablespoon sugar
1 tablespoon low-fat milk
1 cup low-fat milk
1/3 cup vegetable oil
1 egg
2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup miniature semisweet chocolate chips

Steps:

  • Heat oven to 400°F Grease bottoms only of 12 regular-size muffin cups with spray, or line with paper baking cups. In small bowl, mix all filling ingredients until smooth; set aside.
  • In large bowl, beat milk, oil and egg with fork or wire whisk. Stir in remaining muffin ingredients just until flour is moistened. Divide batter evenly among muffin cups.
  • Place about 1 rounded teaspoon filling on batter in each muffin cup. Top with remaining batter.
  • Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to cooling rack (may need to run knife around side of muffins to loosen). Cool 5 minutes. Serve warm or cool.

2 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
½ teaspoon salt
¾ cup miniature semisweet chocolate chips
1 egg, beaten
¾ cup milk
⅓ cup vegetable oil
3 tablespoons white sugar
2 tablespoons brown sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • In a large bowl, combine flour, 1/2 cup sugar, baking powder, salt and chocolate chips. Add egg, milk and oil; stir just until batter is moistened. Spoon batter into prepared muffin cups, filling about 3/4 full.
  • In a small bowl, stir together 3 tablespoons white sugar and 2 tablespoons brown sugar. Sprinkle sugar mixture over muffins.
  • Bake in preheated for 20 to 25 minutes, until golden brown. Remove immediately from pan.

2-2/3 cups all-purpose flour
1-1/2 cups sugar
1/2 cup baking cocoa
1-1/2 teaspoons baking soda
1/2 teaspoon salt
3 large eggs
1 cup sour cream
1/2 cup water
1/2 cup milk
1/2 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips

Steps:

  • In a large bowl, combine the flour, sugar, cocoa, baking soda and salt. In another bowl, whisk the eggs, sour cream, water, milk, oil and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 325° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

3 cups all-purpose flour
2 cups sugar
1/2 cup baking cocoa
2 teaspoons baking soda
1 teaspoon salt
2 cups cold water
3/4 cup canola oil
1 large egg
2 tablespoons white vinegar
2 teaspoons vanilla extract
FILLING:
4 ounces cream cheese, softened
1/4 cup sugar
1/8 teaspoon salt
2 tablespoons beaten egg
1/2 teaspoon vanilla extract
3/4 cup milk chocolate chips
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, sugar, cocoa, baking soda and salt. In another bowl, combine water, oil, egg, vinegar and vanilla. Stir into dry ingredients just until moistened., For filling, beat cream cheese, sugar and salt until smooth. Beat in egg and vanilla. Fold in chips., Fill 12 paper-lined jumbo muffin cups half full with batter. Drop a rounded tablespoonful of cream cheese mixture into center of each; cover with remaining batter., Bake 25-30 minutes or until a toothpick inserted in muffin comes out clean. Cool 5 minutes before removing from pans to wire racks to cool completely. Sprinkle with confectioners' sugar if desired.

1 tablespoon baking powder

1 egg, slightly beaten
1 teaspoon almond extract
cherry preserves or raspberry preserves
confectioners' sugar

Steps:

  • Line 6 large muffin cups with paper baking cups or grease bottoms.
