SAFFRON BASMATI RICE

2 cups basmati rice
1 tablespoon olive oil
1 clove garlic, smashed
3 to 4 threads saffron
Pinch of cayenne pepper
3 to 3 1/2 cups chicken stock
1/4 cup almond slivers, toasted
1 teaspoon lemon zest
Salt and freshly ground black pepper

Steps:

  • Rinse the rice in a colander under cold water until it runs clear, picking out any little pieces of grit or debris. Shake off the excess water. Heat a pot over medium heat, and then add the rice, oil, garlic, saffron and cayenne pepper. Stir and toast the rice until the cayenne and saffron are fragrant, about 4 minutes. Shake the pot to level out the rice, and then add the chicken stock to fill about 1/2-inch over the rice. Bring to a boil, and then lower to a simmer and cover to cook for 15 minutes. Remove from the heat and let the rice stand another 5 minutes, covered. Fluff with a fork. Stir in the almond slivers and lemon zest, season with salt and pepper and serve.

Basmati rice with saffron is an essential side in Middle Eastern diets. Make it in 15 minutes with this easy-to-follow recipe.

2 cups basmati rice
4 cups water
1-2 tablespoons vegetable oil or butter
salt to taste
pinch of saffron (optional)
1 teaspoon hot water

Steps:

  • Pour the rice into a medium-sized pot.
  • Fill up the pot halfway and rinse the water. Discard the water.
  • Repeat this step 2-3 times to rinse the rice unit the water becomes clear. Again, discard the water.
  • Add the 4 cups of water, vegetable oil and salt.
  • Bring the pot to a boil over high heat.
  • Allow the water to continue to boil until it has been absorbed by the rice and you no longer see any water over top of the rice (roughly 5 minutes).
  • Turn the heat down to low and cover the rice.
  • Cook for 30-40 minutes.
  • Create a saffron-infused garnish: Grind a pinch of saffron using a mortar and pestle. If you don't have one of those, just grind it in a small bowl using the back of a small spoon. Next, add a 1 tsp. of hot water and mix evenly. Take 1/2 cup of the cooked rice and add it in. Mix well until rice is fully combined and becomes a beautiful yellow colour.

1 1/2 cups long-grain rice
2 tablespoons vegetable oil
a 3-inch cinnamon stick
7 whole cloves
5 cardamom pods if desired
1 teaspoon salt
1/4 teaspoon crumbled saffron threads
2 tablespoons milk

Steps:

  • In a large bowl wash rice in several changes of cold water until the water runs clear and drain it in a fine sieve. In a large heavy saucepan heat the oil over moderately high heat until it is hot but not smoking, add the cinnamon stick, the cloves, and the cardamom pods, if using, and fry the spices, stirring, for 30 seconds, or until the cloves are puffed slightly. Add rice and cook the mixture, stirring, for 1 minute, or until the rice is opaque. Add 2 1/4 cups water and the salt, bring the mixture to a boil, and cook the rice, covered, over low heat for 15 minutes.
  • While the rice is cooking, in a heatproof bowl set over a small pan of simmering water heat the saffron for 3-4 minutes, or until it is brittle. Add milk, heat the mixture, stirring occasionally, until it is hot, and remove the pan from the heat. Drizzle the saffron mixture over the rice and continue to cook the rice, covered, for 5 minutes. Remove the pan from the heat and let the rice stand, covered, for 5 minutes.

1 cup uncooked basmati or regular long-grain white rice
2 tablespoons canola or soybean oil
1/4 cup raw whole cashews
1/4 cup golden raisins
1 teaspoon cumin seed
1/2 teaspoon black peppercorns
5 cardamom pods
6 whole cloves
2 dried bay leaves
2 sticks (3 inch) cinnamon
2 medium red onions, cut in half and thinly sliced
1 1/2 cups cold water
1/2 teaspoon saffron threads
1 teaspoon salt

Steps:

  • Place rice in medium bowl; add enough cold water to cover rice. Rub rice gently between fingers; drain. Repeat 4 or 5 times until water is clear; drain. Cover rice with cold water; soak 30 minutes. Drain; set aside.
  • In 2-quart saucepan, heat oil over medium-high heat. Add cashews; stir-fry 10 to 20 seconds or until cashews are golden brown. Remove with slotted spoon; drain on paper towels.
  • Add raisins to hot oil; stir-fry 20 to 30 seconds or until raisins plump up. Remove with slotted spoon; add to cashews to drain.
  • Add cumin seed, peppercorns, cardamom pods, cloves, bay leaves and cinnamon sticks to hot oil; sizzle 15 to 30 seconds. Mix in onions; stir-fry 3 to 4 minutes or until onions are golden brown.
  • Add rice; gently stir-fry 1 minute, taking care not to break tender rice grains. Stir in 1 1/2 cups cold water, the saffron and salt. Heat to boiling, stirring once; reduce heat to medium-high. Cook uncovered 5 to 6 minutes, stirring occasionally, until almost all the water has evaporated.
  • Reduce heat to low. Cover; cook 5 minutes; remove from heat. Let rice stand covered 10 to 15 minutes.
  • Fluff rice with fork or spoon to release steam. Serve sprinkled with roasted cashews and raisins. Serve with peppercorns, cardamom pods, cloves, bay leaves and cinnamon sticks left in to continue to flavor the rice, but do not eat them.

A Vedic recipe (meetha kesari bhat) adapted from the cookbook The Best of Lord Krishna's Cuisine by Yamuna Devi. Although not considered Vedic, I add onion to the rice. Very sweet dish meant to be served to soothe the palate when eating more fiery Indian dishes. The sweetener jaggery or gur can be found in many Asian markets.

1 cup basmati rice (NO other substitution)
2 cups water
1/3 teaspoon saffron threads or 1/3 teaspoon equivalent saffron
1 (1 1/2 inch) cinnamon sticks
6 whole cloves
1/4 teaspoon salt
1/3 cup small yellow onion, diced (optional)
1/4 cup honey, raw (if using honey or maple sugar, reduce water by 2 Tablespoons) or 1/4 cup unbleached cane sugar
1 teaspoon cardamom seeds, crushed or 1 teaspoon cardamom powder
2 tablespoons ghee or 2 tablespoons vegetable oil
3 tablespoons pistachios or 3 tablespoons slivered almonds
3 tablespoons raisins or 3 tablespoons currants
2 tablespoons toasted nuts, for garnishing

Steps:

  • Bring water to boil in saucepan. Place the saffron threads in a small bowl and add 2 1/2 tablespoons of the boiling water and soak the threads for 10 to 15 minutes.
  • In the meantime, add the basmati rice, cinnamon stick, cloves and salt to the saucepan of boiling water. Cover and simmer 20 to 25 minutes or until rice is tender. Remove from heat and let sit with cover on for 5 minutes.
  • Optional: In small pan, lightly saute onion in oil and set aside.
  • Next combine the saffron water (strain the water through a small sieve to remove threads), sweetener and cardamom seeds in a small saucepan. Place over medium heat and stir until the sweetener is dissolved. Lower heat and simmer 1 minute. Pour the syrup over the rice (and stir in onions if using) then re-cover pan.
  • Heat the ghee or oil in small pan over medium-low heat until warm but not smoking. Fry the nuts and raisins until nuts are golden brown and the raisins swell. Stir the raisins, nuts and oil into the hot cooked rice and gently fluff with fork. Remove cinnamon stick and cloves. Spoon rice onto a serving platter and garnish with toasted nuts if desired.

1 teaspoon saffron thread
3 tablespoons boiling water or 3 tablespoons chicken broth, plus

4 whole cloves
1 cup finely chopped onion
1 minced garlic clove
2 teaspoons salt
1/4 teaspoon ground cardamom

Steps:

  • Place the saffron in a small bowl and cover with 3 tablespoons of boiling water.
  • Soak for 10 minutes.
  • Meanwhile, heat the butter over moderate heat in a large 3 or 4 quart stockpot.
  • Add the cinnamon and cloves and stir well.
  • Add the onions, garlic and saute for about 2 minutes.
  • Add the rice and stir for about 5 minutes.
  • Pour in the 4 cups of boiling water or broth, salt, and the cardamom.
  • Bring to a boil over high heat.
  • Add the saffron and its soaking water.

  • Cover, reduce heat, and cook for 25 minutes.

6 whole cardamom seeds

Steps:

  • Cover rice with cold water and set aside to soak for 30 minutes.
  • Soak saffron threads in 2 tablespoons boiling water.
  • Melt butter in a large saucepan over medium heat; add cardamom, cloves and cinnamon and fry 2 minutes, stirring occasionally. Stir in onion and saute, stirring occasionally, until golden brown. Stir in the rice, reduce heat to low and simmer for 5 minutes, stirring constantly.
