FISH AND CHIPS WITH TARTAR SAUCE

Vegetable oil
3 cups dry wheat breakfast cereal squares
1 cup all-purpose flour
1 packet garlic ranch dressing mix
1/8 teaspoon salt
1 pound Halibut fillets cut into 3 by 1-inch strips
2 eggs, lightly beaten
Chips, recipe follows
Tartar Sauce, recipe follows
1/4 cup sweet relish
1 cup mayonnaise
1 teaspoon yellow mustard
1/2 lemon, juiced
Salt and pepper

Steps:

  • Fill fryer with vegetable oil to its maximum level, or fill a deep pot no more than halfway with the oil. Preheat fryer to 350 degrees F.
  • Fill a gallon resealable plastic bag with 3 cups wheat cereal. Using a rolling pin, lightly crush cereal into small crumbs. Set aside.
  • In a shallow bowl, combine flour, ranch dressing mix, and salt. Coat fish with seasoned flour mixture then shake off excess flour. Dip in eggs and roll in crushed cereal. Continue with remaining fillets. Carefully add 3 to 4 pieces in fryer and cook until golden brown and crisp. Repeat with remaining fillets.
  • Serve with tartar sauce and seasoned chips.
  • In a small dish, strain relish and discard juices. In a separate bowl, combine strained relish with mayonnaise, mustard, and lemon juice. Stir thoroughly. Add salt and pepper to taste. Serve with fried halibut.

2 cod fish fillets
3/4 cup all-purpose flour
2 teaspoons sea salt
1 teaspoon cracked pepper
1 egg
1 tablespoon water
Crisco, about halfway up your pan (for frying, I used cast iron)

Steps:

  • Cut each fillet into 3 pieces and dry on paper towels.
  • Heat the fat until the end of a wooden spoon bubbles, about 375*.
  • Mix flour with salt and pepper in a flat dish.
  • Mix egg and water in a bowl.
  • Dredge cod pieces on all sides and shake off excess flour.
  • Dip dredged pieces into egg wash and shake off excess egg.
  • Dip into flour once again and shake off excess flour.
  • Fry in hot fat until the pieces are nicely browned.Don't crowd the pan. Depending on the thickness of the fish it could take 2 to 5 minutes. Try to turn no more than once.
  • Drain on paper towels and serve with a lemon wedge, Recipe #406770 and fries.

4 large potatoes, peeled and cut into strips
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 cup milk
1 egg
1 quart vegetable oil for frying
1 ½ pounds cod fillets

Steps:

  • Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
  • Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
  • Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
  • Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
  • Fry the potatoes again for 1 to 2 minutes for added crispness.

  • Combine 1/2 cup flour, roasted garlic pepper, salt and black pepper in a ziplock bag and shake it to mix together. Put the fillets, one at a time, into the bag and seal. Shake the bag to coat the fillet with the seasoning. Remove fillet and place on a dry plate. Repeat with all the fillets.
  • Heat oil in large skillet over medium high heat. Add potato strips and generously season with salt. Cook, continuously stirring, until potatoes are cooked thoroughly and turn golden brown, approximately 10-15 minutes.
  • Prepare the tartar sauce by combining sweet relish, mayonnaise, mustard, ketchup and lemon juice in a bowl and stir together. Serve alongside fish and chips. Garnish with some lemon slices and enjoy!
