Spice-Infused Basmati Rice image

1/2 fresh bay leaf
1/2 cinnamon stick
1 whole clove
1 cup basmati rice
Coarse salt and freshly ground pepper

Steps:

  • Tie bay leaf, cinnamon stick, and clove in a small piece of cheesecloth. Set aside.
  • In a medium saucepan, combine rice and 2 cups water. Add herb sachet, and season with salt and pepper. Bring to a boil over medium-high heat. Cover, and reduce heat to low. Cook until water has been absorbed and rice has cooked, about 20 minutes. Remove sachet, check seasoning, and serve immediately.

1 cup uncooked long-grain (white) basmati rice (recommended: Texmati)
1 3/4 cups water
3/4 teaspoon kosher salt
1 tablespoon unsalted butter
2 tablespoons minced fresh curly parsley leaves
1 tablespoon minced fresh dill leaves
1 tablespoon minced fresh scallions, white and green parts
Pinch freshly ground black pepper

Steps:

  • Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.

  • Cook the butter and onions over medium heat until translucent, about 3 minutes. Add the rice and toss until all of the grains are coated with the butter.   • Pour 2 pints of water over rice and soak for half an hour. Drain in a sieve for 20 mins. This will remove the excess starch & help achieve fluffy rice

1 1/2 tablespoons peanut oil or melted ghee
1 teaspoon cumin seeds
2 bay leaves
1 stick cinnamon (2-inch), broken
5 green cardamom pods, crushed lightly to break the skin
4 black cardamom pods, crushed lightly to break the skin
8 to 10 whole cloves
1/2 teaspoon coarsely ground black pepper, or to taste
3/4 teaspoon salt, or to taste
Finely chopped fresh cilantro

Steps:

  • 1. In a medium bowl, soak the rice in the water, about 30 minutes.2. Heat the oil (or ghee) in a large saucepan over medium-high heat and add the cumin seeds they should sizzle on contact with the hot oil. Lower the heat to medium, then quickly add all the remaining spices and cook, stirring, about 1 minute.3. Add the rice plus the water it was soaking in. Mix in the salt and bring to a boil over high heat. Reduce the heat to the lowest setting, cover the pan (partially at first, until the foam subsides, then snugly), and cook until the rice is done, about 10 to 15 minutes. Slow cook your basmati in the style of a pilaf by steaming with spices for this Keralan-style Indian side dish

500g basmati rice
2 tbsp butter
1 tbsp vegetable or corn oil
¼ tsp turmeric
2 garlic cloves , crushed
1 tsp grated ginger
½ tsp each - ground cumin and ground cardamom
10 curry leaves
2 long dried red chillies
¼ tsp saffron strands, optional

Steps:

  • Bring the rice to the boil in 2 litres of water and allow to cook for 7 mins. Rinse the rice in a colander with cold water. Leave to drain for 5 mins.
  • Meanwhile, put half the butter and the oil into a saucepan. Bring to a medium heat and add the rest of the ingredients, except the rice and the saffron. Slowly fry until fragrant, then stir in the drained rice. Using the end of a wooden spoon to make holes in the rice to allow the steam to rise. Dot the remaining butter on top of the rice and scatter over the saffron. Put the lid back on the pan, and cover with a tea towel to seal the steaming process. Turn off the heat and leave to steam for 30 mins - this makes the rice fluffy and separated without drying it out.

Steps:

  • Melt butter in 10-inch-diameter oven-proof nonstick skillet over medium-low heat. Add onions and stir 1 minute. Cover and cook until onions are tender, stirring occasionally, about 15 minutes. Uncover and sauté until onions are deep golden, about 5 minutes longer. Season to taste with salt and pepper. Remove from heat. Spread onions in even layer in same skillet; set aside.
  • Meanwhile, cook lentils in pot of boiling water until almost tender but still firm to bite, about 20 minutes. Drain.

  • Preheat oven to 400°F. Spoon rice mixture atop onions in skillet, pressing with back of spoon to compact rice; smooth top. (Can be made 2 hours ahead. Cool. Cover and let stand at room temperature.)
  • Cover skillet tightly with double layer of foil. Bake rice mixture until heated through, about 35 minutes. Remove foil; let stand 5 minutes. Place plate over skillet; invert skillet, releasing rice and onions onto plate and scraping any onions remaining in skillet onto rice. Spoon rice and onions onto plates and serve.
