SPICE-INFUSED BASMATI RICE
In this recipe from chef Eberhard Mueller of Bayard's in New York City, the basmati rice's natural nutty aroma is enhanced with cinnamon and clove. Serve with Orange-Rosemary Chicken.

Steps:
- Tie bay leaf, cinnamon stick, and clove in a small piece of cheesecloth. Set aside.
- In a medium saucepan, combine rice and 2 cups water. Add herb sachet, and season with salt and pepper. Bring to a boil over medium-high heat. Cover, and reduce heat to low. Cook until water has been absorbed and rice has cooked, about 20 minutes. Remove sachet, check seasoning, and serve immediately.
HERBED BASMATI RICE
Steps:
- Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.
INDIAN STYLE BASMATI RICE
This is a savory Indian style rice dish flavored with whole spices and fried onions. Soaking the basmati rice before cooking makes all the difference. Serve with your favorite Indian curry or dal (lentils). Make sure you warn people not to bite into the whole spices!

Saute the onion until a rich golden brown, about 10 minutes. Drain the water from the rice, and stir into the pot. Cook and stir the rice for a few minutes, until lightly toasted. Add salt and water to the pot, and bring to a boil. Cover, and reduce heat to low. Simmer for about 15 minutes, or until all of the water has been absorbed. Let stand for 5 minutes, then fluff with a fork before serving.

BASMATI RICE
Steps:
- Cook the butter and onions over medium heat until translucent, about 3 minutes. Add the rice and toss until all of the grains are coated with the butter. Add the water and salt, cover and cook until the water is absorbed and the rice is tender, about 15 to 20 minutes. Turn off the heat and allow to sit covered for 5 to 10 minutes. Add the scallions and parsley, fluff with a fork, and serve.
SPICED BASMATI RICE

- Wash rice in several changes of tap water
- Pour 2 pints of water over rice and soak for half an hour. Drain in a sieve for 20 mins. This will remove the excess starch & help achieve fluffy rice
- Add oil to a large saucepan and heat gently. Add onion & fry until soft and lightly brown.
- Add rice, garlic, spices and seasoning & stir for 3 to 4 mins so all grains are coated with oil and spices
- Pour in chicken stock and bring to boil. Turn to a low heat and cook for 10-15 mins until rice is tender & most/all water has been absorbed.
BASMATI RICE - INDIAN STYLE

BASMATI RICE WITH WHOLE SPICES

- 1. In a medium bowl, soak the rice in the water, about 30 minutes.2. Heat the oil (or ghee) in a large saucepan over medium-high heat and add the cumin seeds they should sizzle on contact with the hot oil. Lower the heat to medium, then quickly add all the remaining spices and cook, stirring, about 1 minute.3. Add the rice plus the water it was soaking in. Mix in the salt and bring to a boil over high heat. Reduce the heat to the lowest setting, cover the pan (partially at first, until the foam subsides, then snugly), and cook until the rice is done, about 10 to 15 minutes. Do not stir the rice while it cooks. Remove from the heat and let the rice rest undisturbed about 5 minutes. Transfer to a serving platter, garnish with the cilantro, and serve. SPICED BASMATI RICE

- Bring the rice to the boil in 2 litres of water and allow to cook for 7 mins. Rinse the rice in a colander with cold water. Leave to drain for 5 mins.
- Meanwhile, put half the butter and the oil into a saucepan. Bring to a medium heat and add the rest of the ingredients, except the rice and the saffron. Slowly fry until fragrant, then stir in the drained rice. Using the end of a wooden spoon to make holes in the rice to allow the steam to rise. Dot the remaining butter on top of the rice and scatter over the saffron. Put the lid back on the pan, and cover with a tea towel to seal the steaming process. Turn off the heat and leave to steam for 30 mins - this makes the rice fluffy and separated without drying it out.

- Melt butter in 10-inch-diameter oven-proof nonstick skillet over medium-low heat. Add onions and stir 1 minute. Cover and cook until onions are tender, stirring occasionally, about 15 minutes. Uncover and sauté until onions are deep golden, about 5 minutes longer. Season to taste with salt and pepper. Remove from heat. Spread onions in even layer in same skillet; set aside.
- Meanwhile, cook lentils in pot of boiling water until almost tender but still firm to bite, about 20 minutes. Drain.
- Combine 2 1/2 cups water, cardamom, allspice, bay leaf and salt in heavy medium saucepan; bring to boil. Add rice and lentils; bring to boil. Reduce heat to low. Cover and simmer until rice is tender and water is absorbed, about 15 minutes. Discard cardamom, allspice and bay leaf.
- Preheat oven to 400°F. Spoon rice mixture atop onions in skillet, pressing with back of spoon to compact rice; smooth top. (Can be made 2 hours ahead. Cool. Cover and let stand at room temperature.)
- Cover skillet tightly with double layer of foil. Bake rice mixture until heated through, about 35 minutes. Remove foil; let stand 5 minutes. Place plate over skillet; invert skillet, releasing rice and onions onto plate and scraping any onions remaining in skillet onto rice. Spoon rice and onions onto plates and serve.

- Place the rice in medium-sized bowl. Fill bowl halfway with tap water to cover rice. Gently rub slender grains through fingers without breaking them to wash off any dust or light foreign objects (like loose husks) that will float to the surface. Drain water. Repeat 3 to 4 times until the water, after rinsing, is relatively clear; drain. Now fill bowl halfway with cold water and let sit at room temperature, to soften kernels, 20 to 30 minutes; drain.
- In medium saucepan, heat canola oil over medium-high heat. Sprinkle in cumin, cardamom, bay leaves, and cinnamon. Allow them to sizzle, swell up (especially the cardamom pods), and smell aromatic, 15 to 30 seconds. Immediately add onion and stir-fry until slices are light brown around the edges, 3 to 5 minutes.
- Stir in saffron. The heat from the ingredients in the pan allows the world's most expensive spice to unleash gently its full-perfumed potential. Add drained rice and coat grains with orange-tinted onion by tossing gently together. Pour in water and add salt. Stir rice once to incorporate ingredients. Allow water to boil over the same medium-high heat. Once water has evaporated from the surface and craters start to appear in orange red-hued yellow rice, only then stir once to bring partially cooked layer from bottom of pan to surface. Place tight-fitting lid and lower heat to lowest possible setting. Let steam build up and continue to cook kernels 8 to 10 minutes. Turn off heat and let pan stand on burner undisturbed for additional 10 minutes.
