OVEN JAMBALAYA

Oven Jambalaya image

An easy spin on jambalaya, making this an almost no-fail version of this south Louisiana classic one-pot meal.

Provided by Bayou Woman

Time 1h30m

Number Of Ingredients 12

1 Pound small La. shrimp, peeled and de-veined (If shrimp are larger, cut in half)
1 Stick butter
4 Stalks celery (chopped)
1 Medium bell pepper (chopped)
4 Green onion tops (chopped)
1 Pound smoked sausage
1 Can Campbell's French Onion Soup
1 Can Campbell's Beef Consume'
Cups Water: Enough to bring total liquid to 5 and 1/2 *
3 Cups rice (Jasmine rice preferred)
1/8 tsp . black pepper
1/4 tsp . Cajun/creole Seasoning

Steps:

  • Pre-heat oven to 350
  • Melt 1 stick butter in heavy stainless, cast-iron, or Magnelite Dutch oven pot on medium-low heat
  • Add chopped celery and bell pepper - saute' until soft
  • Add shrimp, saute' five minutes
  • Add sausage and cook 10 minutes stirring often
  • Raise heat to medium and add French onion soup, beef consume', green onion, seasonings
  • Stir and bring to a boil
  • Add rice and return to boil, stirring constantly so rice does not stick or brown
  • Turn off heat, cover, and put in the oven for one hour - DO NOT OPEN OR STIR
  • Check at one hour to see if all liquid has cooked out, if so, remove from oven
  • Place on stove and let sit covered for 10 minutes.
  • If liquid is not cooked out, remove lid and bake for 5 minute increments until all liquid is absorbed then set on stove as above but DO NOT STIR DURING THIS TIME.
  • After 10 minutes, fluff lightly with a fork. Grains of rice should be fully cooked and fluffy--not gummy
  • (If your rice is gummy, that means two things: A little too much water and you stirred when I said not to!)
  • Serve with green salad and fresh, buttered French bread

JAMBALAYA PASTA WITH PENNE, CHICKEN, SHRIMP AND ANDOUILLE

Jambalaya Pasta with Penne, Chicken, Shrimp and Andouille image

Provided by Food Network

Categories     main-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 24

Salt for pasta cooking water plus 3/4 teaspoon, divided
1 pound dry penne rigate
3 tablespoons olive oil, divided
1 pound peeled, deveined large shrimp
2 tablespoons plus 1 teaspoon Essence, divided, recipe follows
3/4 pound boneless, skinless chicken breast, 1-inch diced
3/4 pound andouille sausage, diced into 1/2-inch pieces
1 tablespoon freshly chopped thyme leaves
1/2 cup heavy cream
1/2 cup yellow onion, small diced
1/2 cup green bell pepper, small diced
1 tablespoon minced garlic
1/2 cup chicken stock
1 (14.5-ounce) can diced tomatoes
2 tablespoons freshly chopped basil leaves
1/2 cup grated Parmesan
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Fill a large, 1-gallon stock pot with a pasta insert, 3/4 full with water. Bring to a boil over high heat and season with salt to taste. Place the penne in the salted water and return to a boil, stirring occasionally. Cook the pasta until nearly al dente, 10 to 12 minutes. Drain and set aside, reserving 1 cup of the pasta cooking water.
  • While the pasta cooks, set a 14-inch saute pan over medium-high heat and add 1 tablespoon of the olive oil, swirl the pan to evenly coat with the oil. Season the shrimp with 2 teaspoons of the Essence and 1/8 teaspoon salt. Place the shrimp in the pan and sear for 1 minute per side. Remove the shrimp from the pan and set aside. Add another tablespoon of the olive oil to the saute pan and season the chicken breast with 2 teaspoons of the Essence and 1/8 teaspoon of the salt. Place the chicken breast in the pan and sear for 3 minutes, turning to ensure even browning. Remove the chicken from the pan and set aside with the seared shrimp.
  • Place the remaining tablespoon of olive oil in the saute pan and add the sausage, onions and bell peppers. Saute, stirring occasionally, until the sausage is lightly caramelized and the onions are translucent, about 3 minutes. Add the garlic to the pan and saute for 30 seconds. Add the chicken stock to the pan and scrape with a spoon to remove any browned bits that have formed in the bottom of the pan, about 30 seconds. Add the diced tomatoes, fresh thyme, the remaining tablespoon of Essence and 1/2 teaspoon salt and cook for 2 minutes. Add the heavy cream to the pan and cook an additional 2 minutes. Return the shrimp and chicken to the pan, as well as the nearly al dente pasta and the reserved 1 cup of pasta cooking water. Continue to cook the sauce and pasta, stirring occasionally, until the shrimp and chicken are cooked through, the pasta is al dente and most of the pasta cooking water has evaporated, about 3 minutes. Remove from the heat and add the basil and Parmesan. Toss to combine and serve while hot.
  • Combine all ingredients thoroughly.

OVEN BAKED JAMBALAYA

Oven Baked Jambalaya image

This is really easy and very tasty. My family likes recipes that have a big flavor blast - and this one delivers. I use Emeril's Bayou Blast seasoning to spice it up (we like it pretty spicy). It is great with a big green salad and a loaf of french bread for a complete meal. If you like to cook ahead you can do what I do - triple this recipe and bake in a big roasting pan -- then freeze in zip-loc bags for a super easy weekday supper. Just cut off bag, dump in glass bowl and microwave until hot.

Categories     One Dish Meal

Time 1h45m

Yield 6-8 serving(s)

Number Of Ingredients 13

2 cups uncle ben converted rice
1/2 cup margarine, cut up
1/2 cup fresh parsley, finely chopped
1 (10 1/2 ounce) can campbell French onion soup, undiluted
1 (10 1/2 ounce) can campbell beef broth, undiluted
8 ounces canned tomato sauce
1 bunch green onion, and tops chopped
2 bay leaves
1 medium green pepper, chopped
1 tablespoon dried thyme
1 teaspoon black pepper
1 lb smoked sausage, sliced
3 uncooked boneless skinless chicken breasts

Steps:

  • I use 2- 3 Tablespoons of Bayou Blast to spice this up (recipe#31001).
  • If you don't have any on hand you may use another cajun spice such as Tony Chachere's or use a teaspoon or so of red pepper and black pepper.
  • Just season according to your family's taste.
  • Cut chicken and sausage into bite-sized pieces.
  • Mix together all ingredients in roaster.
  • Cover.
  • Bake at 350 degrees in oven for 1 hour& 15 minutes to 1 hour& 30 minutes.
  • Stir once after 45 minutes.
  • You must use a converted rice LIKE Uncle Ben's (you can use other brands as long as they are CONVERTED RICE).
  • Do not substitute or you will get sticky, mushy results.

THE CAPTAIN'S FAMOUS JAMBALAYA

The Captain's Famous Jambalaya image

This jambalaya may have been a few places since the bayou, but it's a thick, rich dish that everyone will love! I've experimented with many types of seafood in this recipe, and the flavor and consistency of snapper works the best. Serve with French bread and hot red pepper sauce!
